#BertolliMealSoups Saved Dinner!!

Bertolli Meal SoupsYou know those days when things are hectic, but you feel like “ok, I got this…” and then you realize its half an hour before your family’s dinner time and you totally forgot about DINNER?

We’ve had many of those lately.  Schedules, commitments, sick kids, sick kids again, different kids sick…allergic reactions, trips to the emergency room- they’ve kind of thrown us off kilter.  Take tonight, for example.  I’ve had a Bertolli Meal Soup in the freezer just waiting to be cooked and tasted (and I LOVE soup so I’ve been eagerly awaiting this meal).  I meant for us to have leftovers from last night’s meal.  But with a few key ingredients that I spaced out on this morning.  I got home from my Daisy girl scout meeting and realized that I didn’t have dinner plans.

I quickly made a kid-friendly meal, since my husband was out in the garage, and decided we should have a little grownup dinnertime. Let me tell you how HAPPY I was that we had a package of the Tuscan-Style Beef with Vegetables.  

I was a little hesitant to check out this particular flavor because it included my archnemesis, mushrooms, but happily, they were easily removed and added to Mr. Bargains’ bowl and the soup itself was delicious, flavorful, and surprisingly tasted more ‘fresh’ than frozen…and we’re picky about frozen foods in this house.  Lots of beef and vegetables in a not-overpowering broth made this a wonderful meal soup (for me, my husband views soups as merely an appetizer…haha) and we enjoyed it along with a loaf of fresh bread my husband grabbed earlier in the day.

Since we’ve had so much chaos lately, I tried to set the table nicely and I even turned off our kitchen lights, leaving the hallway lights on and lighting a candle.  Family dinner time is always nice, and something we value, treasure, and work hard to share each night, but once in a while, I think it benefits the whole family if mom and dad have a little dinnertime alone as well.   You don’t have to spend a lot or even do a lot to make it a special dinner- three quick and simple ways to make it more special:  change the lighting, use a tablecloth,  get that china from the closet out and use it!!

Nothing fancy, nothing extravagant, but  the soup was tasty and filling, the bread warm and comforting, and the company? Delightful.  It was nice to have a little something special just for my husband and me, since we’ve had so much going on.

I have a feeling I will be looking for the Chicken Minestrone next- I like having options like the Bertolli Meal Soups around just for nights like this- with AND without the kids present.
