Our family loves games. The kids’ favorite is Uno but this weekend they chose to play some fun board games.

Nothing goes better with family time than snacks too, especially popcorn! This weekend we tried JOLLY TIME’s Kettle Corn for the first time. I simply followed the package directions making it in the microwave and then added some melted marshmallows, butter, pretzel pieces, sprinkles and voila! A fun and tasty new treat to enjoy while playing games and spending time together as a family.

JOLLY TIME Sweet & Salty PopCorn Cake

Ingredients – 

2 bags of JOLLY TIME Kettle Corn Popcorn, popped
16 oz mini marshallows
1 stick of butter, cut into chunks
1 C. broken pretzel pieces
1 C. multi-colored sprinkles

Directions – 

#1. Pop the JOLLY TIME Popcorn Kettle Corn according to package directions and remove the extra seeds once popped.
#2. Spray a bundt pan with non-stick cooking spray.
#3. On low heat slowly melt the butter chunks and the mini marshmallows, stirring occasionally.
#4. When the marshmallows are about 3/4 melted remove from heat and stir in the popcorn, pretzel pieces and multi-colored sprinkles. *Do not melt the marshmallows all the way prior to stirring in the ther ingredients.
#5. Carefully pour the mixture into the bundt pan and press down so it forms to the pan.
#6. I like to slip a small plastic baggy over my hands and spray with non-stick spray and then press down and to form the cake in the pan.
#7. When ready to serve, simply remove from the pan and cut into pieces and enjoy!

Slow Cooker Salisbury Steak

This dish is a delicious stand by that has been a family favorite for years with a bit of an update. Well, maybe YOU have already been making it this way and I am new to the bandwagon but hey, I love my slow cooker! They turn out tender, delicious, and full of flavor – like mom used to make!

No doubt this easy slow cooker recipe will become a favorite on your menu plan, even the kids simply push the onions aside and devour the Salisbury steaks- Hubby also attests that they make delicious leftovers the next day as a sandwich filler.

Slow Cooker Salisbury Steak & Onions

Ingredients:

2 lbs. ground beef

1 medium onion, sliced

1/2 cup italian breadcrumbs

1 packet dry onion soup mix

1 Tbsp. worcesteshire

3/4 cup water

1/4 cup milk

10 oz. can beef gravy

1 tsp. black pepper

1 tsp. garlic salt

2 tsp. oil

 

Directions: 

Turn slow cooker onto low, add oil and sliced onions.

In a large bowl mix ground beef, bread crumbs, worcesteshire, milk, pepper, and garlic salt until well combined.

Form large oval patties, pressing together firmly, then you can go one of two ways with these- brown them in a couple tsps. of oil in a pan over medium on both sides before putting in slow cooker ( I reccomend this if you have the time) or you can place them directly in the slow cooker on top of onions.

Pour water and canned gravy over the top of patties and onions then replace lid.

Cook on low for 4 to 5 hours. Serve with mashed potatoes or rice for a tasty homecooked meal from your slow cooker.

Chex Party Mix Snack Bar

Who doesn’t love Chex Party Mix? In our family, it’s made a few times a year, especially at the holidays.  So delicious and there’s pretty much something in there for everyone…although truth be told, if you are sharing some with me, you’ll notice the pretzels vanish pretty quickly.  I can’t confirm nor deny that it’s me, but there’s a history of pretzels disappearing from the mix. Anyway, with end of the year “everything” coming up in the next month, we’ll be having a lot of occasions to entertain around here, including a few hikes planned.  I thought it might be fun to take some Chex Party Mix and try the Chex Party Mix Snack Bar idea, sponsored by  Chex Party Mix.  Here’s our take on this fun idea- and you can modify ingredients for your guests or family! Ingredients

3cups Corn Chex™ cereal

3cups Rice Chex™ cereal

3cups Wheat Chex™ cereal

1cup mixed nuts

1cup bite-size pretzels

6tablespoons butter or margarine

2tablespoons Worcestershire sauce

1 1/2teaspoons seasoned salt

3/4teaspoon garlic powder

In large microwavable bowl, mix cereals, nuts, pretzels and bagel chips; set aside. In small microwavable bowl, microwave butter uncovered on High about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.

Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool. Store in airtight container.

Copycat Starbucks S’mores Frappuccino

I don’t frequently splurge at coffee shops for a frappuccino. While I love them, they don’t do much for me except empty my wallet. I mean, they TASTE awesome and everything, but if I am going to indulge, I want to do it in a way that offers my body some benefit. Using Silk Soymilk in place of regular milk gives me some added protein in my morning- which keeps my body fueled. I am NOT always the best about breakfast- so having even a little protein boost mid-morning in a coffee drink gives me a pick-me-up that I need, in more ways than one. Copycat Starbucks S’mores Frappucinno

Ingredients

1 C. ice
1/2 C. Vanilla Silk Soymilk
2-3 tbs. marshmallow fluff
1/2 C. cold coffee
1 tbs. cocoa powder
2 tbs. graham cracker crumbs
Whipped cream for topping

Directions

#1. Combine the ice, Vanilla Silk Soymilk, cold coffee, cocoa powder and 1 tablespoon of graham cracker crumbs in your food processor or blender.
#2. Pulse until blended.


#3. Pour into desired glass.
#4. Top with whipped cream and sprinkle graham cracker crumbs on top.
*Makes approximately 2 servings.

Spiced Dark Chocolate Muddy Buddies

I don’t know many who aren’t fans of Muddy Buddies.  Often times, though, this delightful snack is almost TOO sweet, at least for adults, and when I was up in Boston for Patriots Weekend, watching a demo by American Heritage Chocolate at the Old North Church, I started thinking about using that chocolate in a Muddy Buddy recipe… still sweet, but not super sweet, plus, with the 9 spices they add to their chocolate, a whole new level of flavor for this normally just sweet treat.  A muddy buddy recipe for the adults, that’s also vegan for those of us who live a plant based life. Plus, this is a spiced dark chocolate muddy buddies recipe- not your average muddy buddies for sure! Many thanks to our friends at American Heritage Chocolate and Old North Church Foundation for inviting us to Boston to experience Patriots Weekend and for inspiring this recipe.

Spiced Dark Chocolate Muddy Buddies

Ingredients

9 cups gluten free Chex Cereal (Rice is what we used)

2 bags Vegan Chocolate Chipspackage American Heritage Chocolate Drink

Coconut oil (if needed to thin the chocolate)

Enchilada Quinoa Recipe

Happy Cinco de Mayo! We’re going super simple for our dinner plan for the holiday- we love to eat on this fun foodie holiday, but we do also have gymnastics twice on Tuesdays and simply don’t have a lot of time to cook. This Enchilada Quinoa recipe  will be quick and easy, plus easy to eat on the go….if need be..  It’s super easy to do quinoa as a meatless meal option because it’s so high in protein.  Plus, it’s delicious and works well with so many flavor combos!!enchilada-quinoa-recipe

Enchilada Quinoa

Ingredients –

1 C. quinoa, cooked according to package directions = 2 C. total
1 C. shredded mild cheddar cheese
1 bunch of green onion, chopped
1 red or yellow pepper, diced
1/2 C. fresh cilantro chopped
2 tsp minced garlic
1 tbs. olive oil
salt & pepper to taste

Directions –

Heat the tablespoon of olive oil on medium/high heat and saute the green onion and diced pepper with the minced garlic until tender – about 10 minutes.

Next, combine the cooked quinoa, shredded cheese. Stir until melted through.

Lastly, add in the fresh cilantro and salt & pepper to taste.
*Makes approximately 3-4 servings
(I kinda ate most in 1 sitting, oops.)

Fun Snacks for Cinco De Mayo #FlavorYourFiesta

I am a homeschooling mom and we love learning about other cultures as part of our curriculum study, so we took the month of May to learn about Mexico, it’s traditions and customs. As part of their  celebrations -Cinco De Mayo is a very important one that is also very much celebrated here in the states-  so I thought I would make a fun lunch for the kids and I to enjoy as part of our day of learning.  We love José Olé  snacks for parties and even for dinner, it was just a natural choice to use them as an example of some traditional Mexican foods- tacos, taquitos,  and quesadillas.  I thought it would be great to share these quick and fun snacks for Cinco De Mayo celebration with you! Using Sous Vide for Weekly Meal Prep

I love the convenience  of my crock pot, freezer meals, and now I have a new favorite for weekly meal prep in the kitchen- Anova’s Sous Vide Device. When I was first asked to check it out I jumped at it, but then I was a bit intimidated- it looked well….fancy.  I wasn’t sure it was something that would be for everyday use so I read the instructions, poked around online a little bit and realized that it was definitely an everyday kitchen helper!

I decided to use it to help with my weekly kitchen prep- this makes my lunches and busy weeknight dinners a breeze! Normally I bake or (yuck)  sometimes boil about 3 lbs of chicken and prep it in different ways to use in multiple ways.  While it works,, my chicken is usually a bit tough, and lacks some flavor.

The premise behind Anova’s Sous Vide is that it gently, and evenly cooks your food in a water bath at a perfectly controlled, steady temperature. Keeping it from becoming tough and rubbery at the same time.  They have also included a blue tooth feature that you can pair up with your smart phone and control through the app- easy peasy.

The Anova Sous Vide is so simple to use, even though it looks like a professional kitchen tool it is completely workable for the everyday, at home cook- I love that!

So what do I start with?  Wanting to try something simple for the first time I decided to try my chicken out in it and here is how I did it.

1. In a gallon ziplock bag-

Add 1 Tbsp. Olive oil, 1 tsp. ground black pepper, and 1 tsp. garlic salt

Add 3 lbs. boneless, skinless chicken breast,press out as much air as you can, and seal bag well.

Place bag in pot of water and allow to simmer in water bath for 1 hour and 15 minutes.

Remove chicken from bag and divide into thirds.

Chop one third.

Shred one third.

Slice one third.

Use your chicken immediately in a recipe or bag it up in a freezer safe ziplock (don’t forget to mark contents and date with a sharpie) Freeze for up to 3 months.

These bags can be used to top fresh leafy, salads, make up a quick soup, for quesadillas, to make chicken tortilla soup,  chicken nuggets, or Buffalo Chicken Bites, and much more- make your chicken this way once a week or even every other week for a large batch and make dinners in a hurry during your busy work week.

Italian Chopped Salad with Balsamic Dressing

For a summer meal that’s fun to make and easy to eat (no more wrestling with large, leafy pieces of lettuce) try an Italian Chopped Salad. Each forkful is a delight, with bite-size pieces of chicken, salami, cheese, olives, and vegetables. Tossed with a homemade balsamic dressing right before serving, this salad will be a summertime staple in your household.

This recipe is just a beginning. Add or substitute whatever appeals to you: cucumbers, sweet onion, pastrami, chick peas, chopped peppers, celery…anything goes! Just make sure to cut everything into small pieces so it will blend together well and be easy to eat.

Iceberg and romaine are the easiest lettuces to chop, but you can experiment with other varieties if you prefer. Make this salad your own!

ITALIAN CHOPPED SALAD

Ingredients

Serves 8

8 cups chopped lettuce (about 1 large head of iceberg)

1/2 pound Genoa salami, chopped into small cubes

2 cups chopped cooked chicken breast

4 green onions, sliced

5 small radishes, chopped

3 ounces provolone cheese, chopped

5 ounces Monterey jack cheese, chopped

2 tablespoons chopped fresh basil

1 pint grape tomatoes, chopped

8 Kalamata olives, chopped (or use sliced black olives)

Directions

Toss all chopped ingredients together in large bowl.  Once your dressing is prepared, toss salad with dressing.  Serve chilled.

Balsamic Dressing:

2 teaspoons brown mustard

4 tablespoons balsamic vinegar

4 cloves fresh garlic

1 teaspoon salt

1 tablespoon sugar

1 tablespoon lemon

1/2 teaspoon Herbes de Provence – or use Italian Seasoning

1 tablespoon fresh or dry parmesan cheese (optional)

3/4 cup olive oil

Directions

1. Place in a blender: mustard, vinegar, garlic, salt, sugar, lemon, pepper, and Herbs de Provence. Blend on high for 30 seconds.
