Cheeseburger Soup in the Crockpot

Cheeseburger Crockpot Soup

Ingredients

1 pound of lean burger, browned and drained

1 bag of frozen O’brien style hashbrowns (these have the peppers and onions for extra flavor)

2 14.5 oz. cans of Nacho Cheese soup

1 ½ cans of milk (use the empty soup can)

½ medium onion, diced

2 tbs. dried parsley

5 C. chicken stock (or 5 C. of water and 5 chicken bouillon cubes – if you are big on bouillion cubes -they are easier  to store)

Directions 

#1. In a medium pan, brown your burger and drain the grease.

#2. While the burger is browning, add the rest of the ingredients to the crockpot; frozen hasbrowns, cheese soup, milk, onion, parsley, chicken broth.

#3. Turn the crockpot on high and then add the drained burger. Mix everything together and let cook on high 5-6 hours or until the potatoes are cooked through. Turn to low or warm once the potatoes are done.

#4. Serve with crackers on the side.

Eye of Newt Cupcakes

Halloween is coming fast and furious. It’s time to start thinking about spooky treats and frightful delights. One of my favorite things to do is have some fun with holiday foods- and for some reason, I keep thinking about witches brews and the eye of a newt lately. So when I heard that Sweetworks candies wanted to do some fun holiday themed posts, I got excited.  My eyes of newt (eye of newts?) were going to be a reality. Listen- any cake or cupcake recipe will do.  I’m not reinventing the wheel here.  The added elements are what makes these FUN and festive, not the cupcake itself. I mean, it’s still a cupcake, so let’s make it rock. This is a Fashionista Event and a promotional item was provided to me by Sweetworks. Eye of Newt Cupcakes

Ingredients:

1 box chocolate cake mix. Or 1 box vanilla cake mix.  Really, anything would work.  I’d actually contemplated doing a black cupcake, but that seemed a little bit much for my house. It would be REALLY fun to do black cupcakes (start with a chocolate base and add black food coloring gel.  Dark base has a better chance to turn black).

Of course if you REALLY want to save some time, buy some cupcakes from the bakery. I won’t judge.

1/2 cup vanilla pudding (again with the color- I want the elements of the yuck without looking yuck. I’m more cute and fun not super realistic and gross. BUT if you wanted to gross out your friends… add some black to that pudding.  Or do a chocolate pudding with black coloring gel)

Buttercream frosting (This is the recipe I prefer for my cakes and cupcakes, and I really recommend NOT using store bought because the eyeballs really just won’t sit as high on your cupcake and squish the black ooze out as effectively with a can frosting). You could also go all Sandra Lee on us and get pre-baked, pre-frosted cupcakes.  Again, I don’t judge.

Black Cookie Icing (the bottle kind works best- it’s just easier to squeeze and let the extra flow down the cupcakes. Black blood adds to the effect.

Directions:

Prepare cupcakes as directed. Allow to cool.

Either with an icing bag or a spoon, add about 1 full teaspoon of your pudding into the center of your cupcakes. Be careful not to break the sides of the cupcake! This is the brain matter from the newt.

Once cupcake has been filled with brain matter, generously ice the cupcake with buttercream.  I left mine white but you can do a color, too.  I wanted the  stark contrast of the black ‘blood’ and the white eyeball and surrounding area.

After icing, take your black cookie icing and push the tip about 1/3 of the way down into the icing.  Give it a GENEROUS squeeze (maybe like a tablespoon). It should kind of start to puddle and even run down the sides of the icing.  This is what you want.

Now grab a Spooky Eyes Gumball and pop it into your mouth.  Enjoy chewing your eyeball gum and grab another one and then push it down into that black icing until the eyeball is just above the icing level.  Watch the magic happen, people.  This is where the magic happens.  This is where the black starts to look like newt blood and I get all happy.  (Also black. I get black.  That icing always gets all over me!) Basically, if it starts to look at all gross, you’re good.

Let set for a while before serving- the more the black icing drips down the icing and cupcake, the better.  It’ll really make those Spooky Eye Gumballs POP! Off that cupcake.  Gross, yet awesome.  And SO delicious.

Turkey Chili Cheese Fries Recipe

Ingredients:

1/2 lb. ground turkey

1 can red Kidney beans

1 cup Colby Jack shredded cheese

1 packet chili seasoning

1-12 oz.bottle chili sauce

1/2 cup water

1-2 tsp. chili powder- if you like it hot!

Directions:

Drizzle a small amount of olive oil into a large pan, brown turkey, drain.

Mix kidney beans, chili seasoning packet, water and chili sauce into turkey until heated throughout. Stir in extra chili powder at this point if desired.

  • Apples
  • Lemon Juice – preferably fresh
  • Peanut Butter
  • Peanuts – or other nuts
  • Dried Cranberries, dried cherries or other dried fruit
  • Chocolate Candy Melts
  • Paper Lollipop Sticks

Cut apples into wedges.  The wedges should be big enough that they will not split when the stick is inserted.

Soak the apple wedges in a bowl of water mixed with fresh lemon juice for several minutes.  This will keep the apples from turning brown after they are cut.

Remove the apples from the water and dry them completely.

Carefully insert a lollipop stick into each apple wedge.  They should easily puncture the skin and slide right in.

Chop nuts and dried fruit into small pieces and set aside.

Coat each apple wedge with peanut butter and stand in a jar or glass.

Melt the chocolate candy melt according to package instructions.

Add a thin layer of melted chocolate to each peanut butter coated apple wedge.

While chocolate is still melted, sprinkle nuts and fruit onto apple.

Quick and Easy Apple Cinnamon Rolls



Fall is HERE! My favorite time of year- as much for the baking and comfort food offerings as the foliage and cooler temperatures. I love it all. It’s also the one time of year I say y’all – as in, Happy Fall, Y’all!

Fun and festive holiday foods are one of my favorite things, and with so many great holidays and color themes for fall, it was the perfect time to take some already-awesome Cinnamon Rolls and add a few tweaks to make them amazing. The folks at Pillsbury asked if we’d consider having some fun with their new Cinnabon Bakery Inspired Cinnamon Rolls and we had a little fall fun with them.

Quick & Easy Apple Cinnamon Rolls

Ingredients

1 package Cinnabon Bakery Inspired Cinnamon Rolls

2-3 apples, diced finely

Greased baking dish (I used a pie plate)

Gel orange food coloring

Small ziplock bag

Scissors

Directions

Preheat oven based on package instructions

Chop up your apples (the smaller the apples are, the softer they’ll be out of the oven)

Take rolls out of packaging

Unroll each roll and sprinkle diced apples all along the roll

Reroll with apples inside, taking care to gently press together as you go

Place rolls into greased baking dish

Cover with cinnamon topping and bake as directed

While rolls are baking, add desired amount of food color gel to a Ziploc bag with the included icing packet and squish to mix the colors together

Seal the bag and squish icing around with gel color to mix. Once it’s the desired color, snip the bottom corner to add icing to your rolls

After rolls are finished baking, allow them to sit for 3-5 minutes to cool a bit.

Ice rolls after the 3-5 minute wait time.

Serve and enjoy!
This makes 4 rolls.  They are HUGE.  You can absolutely split them in half and still get a lot- or even into quarters.  They go a long way!

Game Day Buffalo Ranch Deviled Eggs Recipe

This fun and spicy twist on an old party appetizer favorite will be a huge hit, whether you bring it out at for the armchair quarterbacks in front of the football game, Thanksgiving, Christmas, New Years, or any other party.  It is a delicious change in flavor and texture from standard mayo and relish in traditional deviled eggs.  I made this recipe based on making 12 finished deviled eggs but it is very simple to double or even triple for a crowd.

 

Buffalo Ranch Deviled Eggs

Ingredients:

6 large eggs

1  Tbsp. buffalo sauce

¼  cup Ranch dressing

½ stalk Celery

½ Carrot

salt and pepper to taste.

Directions:

Boil eggs, using your favorite method- I place eggs in a pot completely covered in water, bring to a boil, turn off the heat, cover and let rest for 8-10 minutes depending on your desired done-ness. Remove from pan, tap each egg firmly with the back of a spoon and place eggs in cold water for 1 minute to cool.   Peel eggs, be sure to remove all the shell.  Slice eggs in half, remove yolk and place in a small bowl.

While eggs are cooking finely dice celery and carrot, try to get them as small as possible, it will create a better  consistency and be more evenly distributed.

Use a fork to break up the yolk of cooked eggs into a fine “powder”consistency.

Mix in ranch,buffalo sauce, carrots, celery, salt and pepper until well combined and smooth.

Scoop filling back into halved eggs, distributing evenly.

Top each boiled egg with a piece of carrot or celery to dress it up for serving.

Place eggs in the refrigerator to  chill until game time.

Bacon Wrapped Asparagus Bundles

I love asparagus and didn’t really think it could get any tastier. That is until I introduced it to my friend- bacon. Over the top delicious wrapped up in a neat little package on your plate.  They are a perfect summer side with anything from steak to fried chicken, and will disappear quickly (so make sure you get yours before serving). While  I have not yet tried this on the grill but I bet it would be amazing and plan on doing it this way very soon.

1 bundle of fresh Asparagus

½ package of bacon

garlic salt and  cracked  black pepper to taste

Grasp one piece of asparagus at both ends and bend until it snaps naturally somewhere above the white end.  This is your marker for where to cut the rest.  Pile up your bunch including the one you snapped and cut all asparagus spears to the same length.

Slice bacon pieces in half.

Take 4-5 spears and pile them together, wrap half piece of bacon around bundle and place it in a deep baking pan (this is to contain grease spatter).

Continue wrapping asparagus bundles until done.

Season to taste with garlic salt, and cracked black pepper

Place pan under the broiler on high in your oven until bacon is crisp and asparagus tips are browned.

We always choose fresh when possible but when you are coming home from a vacation and don’t have much in the fridge- steam some frozen broccoli, green beans, vegetable medley, carrots, peas, etc. and round out your meal that way.  You’ll have the entire meal on the table in about 20 minutes start to finish when doing all frozen foods.  If you have any salad fixings, that’s our go-to for pizza meals.

When I buy burger meat, I pre-make my patties and separate them with parchment paper.  That way, I can grab enough for a meal and go, and we always have some on hand for just-in-case.

 

Just because it’s a burger and hot dog night doesn’t mean it has to be boring.  If you are making your own burgers, mix in some seasonings and add a topping tray to your table.  I’ve been all about gorgonzola on my burgers this summer, with iceburg lettuce as my ‘buns’ and I love it.

 

If you buy premade burgers- maybe grab some different varieties to have on hand. I’ve found some great bufffalo blue cheese chicken burgers, and some divine black bean and salsa flavored veggie burgers that are just as easy and fast as “traditional” burgers, but change things up a bit. I’ve actually grown to love black bean burgers since my daughter stopped eating meat and often make that for myself in lieu of a regular burger, just for a change of pace.

 

Tacos

Tacos are quick and easy. If you are at my house, and you mention the word tacos, you’ll hear “TACO TUESDAY” for the next hour or so, followed with giggles.  Tacos are a great way to please everyone, and you really can just toss the fillings and toppings into bowls on the table and everyone can make their own. One thing *I* like about tacos is that you can thaw the ground meat while you cook it- super easy to do.  We also use black beans frequently in place of the meat.  It’s a pretty safe meal that most of us enjoy- and takes little time to prep.

 

We like to get the blue corn taco shells when we see them- with tomatoes and or salsa plus cheese, we call them our red, white and blue tacos. Ending vacation can seem like the end of the fun, especially to kids, so why not have a little fun with the first few days home?

Breakfast for dinner!

Almost always a favorite (around here at least), you can do eggs, pancakes, waffles- quiche, omelets… it’s a quick and easy way to get the family fed.

 

We’ve done sausage stuffed pancakes many times- makes for a fun meal that has enough bulk to it.  Add lots of fruits on the side!

I think my favorite thing to do for breakfast for dinner is plain old eggs and hashbrowns.  I don’t like how LONG it takes to make hashbrowns, so we grab our waffle maker and make the hashbrowns while we cook the eggs.  Sometimes I’m a scrambled girl, others? I’m an over-hard and then cook them for another few minutes girl.

 

Breakfast sandwiches are another idea for a post vacation meal.  Use what you have- bagel, English muffin, bread, even a pancake.

Strawberry Brownie Mix Waffle Sundae

My oldest is away for the week at her aunt’s house in New Hampshire and the little kids wanted to do something special… so we decided that we’d make a special ice cream sundae recipe that’s just for them while big sis is away on her big adventure! Strawberry Brownie Mix Waffle Sundaes

Ingredients

Hershey‘s Strawberry Syrup

Vanilla ice cream

Fresh strawberries, sliced

Brownie Mix Waffles (see recipe below)

Directions

Prepare your waffles as directed, place at bottom of your sundae dish

Place a layer of berries on top of the waffle

Drizzle with Hershey‘s Strawberry Syrup

Add one scoop of ice cream

Drizzle with Hershey’s Strawberry Syrup

Top with a few more slices of strawberry

Enjoy!

Brownie Mix Waffles

 Ingredients

Brownie Mix of your choice

2 TBSP Hershey’s Strawberry Syrup

2 eggs

1/4 c oil (applesauce works GREAT here!)

Directions

Warm your waffle iron

Prepare brownie mix as directed

Add 2 TBSP Hershey‘s Strawberry Syrup

Spray your waffle iron with a non-stick spray (the waffles WILL stick otherwise)

Pour normal amount of batter for waffles.

Don’t over pour.

It’ll make a mess. I’m serious. Then you have to clean it up after. I learned the hard way. :)

Cook until done (about 5 minutes, depending how hot your waffle iron gets!)

Graham Cracker S’mores Brownie Recipe

Hershey’s challenged me to create a recipe using their classic Hershey’s Syrup.  Being a chocolate lover, I knew chocolate was in my recipe’s future…being summer… I wanted graham crackers and marshmallows with it.  I’ll be honest- I tried a S’mores Pizza recipe which tasted delicious but didn’t stay together as a graham cracker pizza crust– crumbled onto some ice cream, everyone loved it… but it was a fail, sadly. After the pizza fail, I decided to go more in the bar family, well, because brownies.

Graham cracker crumbs were in my house, begging to be used.  I thought about trying for a pie, or something similar, but then I realized it was really all about the brownies.  I’d seen a Graham Cracker Brownie recipe on Taste of Home a while back, bookmarked it and forgot about it until now. I made a few modifications.

Hershey’s has been around forever.  It’s my favorite chocolate brand, hands down.  Most of us grew up enjoying some Hershey’s Syrup in our milk, many of us had it on top of ice cream as a treat.  It’s kind of a natural progression that we’d start to use the Syrup flavors in our recipes! I’m game to try anything that lets me have my favorite chocolate some more…s’more…get it?

{Hershey’s Syrup} Graham Cracker S’mores Brownies

Ingredients

3 TBSP Hershey’s Chocolate Syrup

1/3 bag Hershey‘s Baking Melts (chocolate chips are fine too!) — if you are crazy for chocolate you can always add up to 1/2 a bag these are just already really rich and I think less is more. Feel free to change the flavors of these to suit your taste- dark chocolate would be delicious, as would white chocolate chips with a some of the Strawberry Syrup drizzled on top!

Hershey’s Chocolate Syrup for drizzling.  You could really have some fun with flavors and use any of the other flavor varieties to change things up a bit!

1 3/4 cups graham cracker crumbs.  You can buy the crumbs or do it yourself- one way saves you time, the other is stress relief.  Your choice!

1 can Sweetened Condensed Milk

1 tsp baking powder

3 TBSP milk

Mini Marshmallows (Want to mix things up? Use strawberry flavored marshmallows)

Mix all ingredients together in a bowl

Place ingredients in a greased brownie pan- the batter is THICK so you’ll want to just press it with your hands

Bake at 350 for about 28-30 minutes

Immediately sprinkle your mini marshmallows on top of the brownies.

Put back in oven for about 5 minutes until the marshmallows start to turn a golden brown.

Remove brownies from oven, drizzle Hershey’s Syrup on top of the pan, and allow to cool.

Seriously.  Let them cool.  It’s hard to wait but it’s worth it.

Pour yourself a nice cold glass of milk..

When the brownies are cool, cut them into small squares.
