Easy Marinade Recipe: Ginger Lime Salmon Steaks

We did another ‘try something new’ recipe this week.  We decided to give try our hand at grilling some fish steaks.  Salmon was on sale, so salmon won :) I’m all about lime this time of year so when my husband showed me a recipe he’d found at work, we had to see what would happen.

Ginger Lime Salmon Steaks

Ingredients

4 fish steaks

1/4 c lime juice

2 TBSP veg oil

1 TBSP spicy brown mustard

2 tsp ground ginger (or fresh)

1/4 tsp cayenne pepper flakes

3 TBSP honey

pepper ground to taste

Directions

Whisk lime juice, honey, 1 TBSP oil, ginger, cayenne pepper and ground black pepper (to taste)

Pour marinade over the fish and let sit for 1-2 hours. Turn steaks every 30 minutes if possible

Use remaining TBSP oil to brush grill grates after they are heated

Grill fish, brushing several times with the marinade until cooked through.

Turn fish after about 5 minutes. Grilling times will vary based on the thickness of your fish and your grill itself.

Summer Treats – Summer Fun Cake Balls

We love to have summer gatherings and we’re always looking for fun Summer Treats to share with our friends and family.  We made these adorable Summer Fun Cake Balls to kick off summer vacation now that the kids are FINALLY finishing up school!  Nothing says summer like flip flops and beach balls, right?

My new Cuisinart 5-1/2 Quart Mixer arrived just in time for me to make these summer treats!

 I’ve been using a stand mixer for years but recently had worn out many of the attachments and decided to give this powerful Cuisinart model a try.  It made making these summer treats so much easier!

 

Summer Treats – Summer Fun Cake Balls

Cake Ball Recipe Ingredients:

  • 1 cup granulated sugar
  • 1 1/2 cups flour
  • 1 3/4 tsp baking powder
  • 1/2 cup softened butter
  • 2 eggs
  • 1/2 cup milk
  • 1 1/2 tsp pure vanilla extract

Instructions:

Preheat oven to 350 degrees

Sift together the flour and baking powder in medium bowl

In bowl of stand mixer, cream granulated sugar and butter.  Add the vanilla to the sugar mixture followed by eggs, 1 to a time beating until well blended.

Gradually add dry ingredients to the creamed mixture in the stand mixer.  Mix on medium for until completely combined.

Add milk and continue mixing until batter is smooth.

Spray non stick bakers spray into cavities of doughnut hole pan and spoon batter into pan.

Bake in preheated oven for 5-7 minutes.  Transfer to cooling rack and cool completely.

Cake Ball Decorating Supplies:

  • white candy melts (1 package will do 25 cake balls)
  • blue candy melts (1 package will do 25 cake balls)
  • chocolate candy melts (1/2 package will do 25 cake balls)
  • graham cracker crumbs (1 box for cake balls and plating)
  • sugar crystal sprinkles in red, yellow, orange, green, and blue
  • prepared fondant in bright colors for the flip flops (We really like Satin Ice brand)
  • parchment paper

Instructions:

Chill cake balls in freezer for 15-20 minutes.

Melt white & blue candy melt in separate bowls according to package instructions.

Remove cake balls from the freezer and coat with candy melt and transfer to parchment paper to harden.  You should have roughly the same number of blue cake balls as white.

After the candy melt has hardened, melt chocolate candy melt according to package instructions.  Carefully coat 1/2 of each blue cake ball with chocolate candy melt and dip in graham cracker crumbs.

Return to parchment paper to harden.

While the blue cake balls harden, melt a small amount of white candy melt to decorate the “beach balls”.

Poor colored sugar crystals into bowls or cupcake wrappers for dipping.

Spread a small stripe of melted white candy melt onto the white cake ball and dip into the first colored crystals.

Repeat with all colors to form the beach ball.  Return to parchment paper to harden.

While the cake balls harden, begin forming little flip flops from the brightly colored fondant.  Simply roll small balls between your palms and flatten with your fingertips.  Pinch to shape like a flip flop.

Using a small amount of melted white candy melt and a toothpick or spoon, add the straps off the flip flops.  I added a small sprinkle of a contrasting color to the strap for detail.

When the cake balls are set, use a bit of melted candy melt to attach the flip flops to the beach cake balls.

Pour remaining graham cracker crumbs onto a platter and display these Summer Fun Cake Balls in the “sand” created by the crumbs for the cutest summer treats!

I really loved using my new Cuisinart 5-1/2-Quart 12-Speed Stand Mixer, White SM-55 for this baking project and all the other baking I did this past weekend.  It’s 5 1/2 quart mixing bowl makes it easy to do large batches of cake batter, frosting, cookie dough, and the 800 watts of power means it is powerful enough to mix my homemade fondant!  It has a timer so I can set it and come back to it when it has mixed long enough.  The hooks, paddles, and whisks are very sturdy and unlike my previous mixer, they are not nylon coated so I won’t have to worry about them chipping!

Vegan French Toast Recipe with Cashew Banana Filling

I have to share with you the amazing Berlin toast that I just had.  It is a similar idea to french toast but really stepped up a few notches.  My 9 year old, my husband and myself loved this vegan french toast recipe and it is going to be made again soon.

Vegan French Toast Recipe

Cashew Banana Filling and Crunchy Outer Layer

 Ingredients:

1/4 cup cashew butter
1/2 teaspoon ground vanilla
1 pinch iodized sea salt
1 tablespoon agave nectar
4 thin slices whole grain bread
1 banana

Crunchy Outer Layer Ingredients

1/2 cup whole-wheat flour
7 tablespoons soy milk
2 tablespoons agave nectar
1 teaspoon ground vanilla
1 pinch iodized sea salt
1/2 teaspoon ground cinnamon
1 cup cornflakes
1/4 cup popped amaranth
5 tablespoons canola oil

 Directions

Stir cashew butter together with 1/2 teaspoon vanilla, sea salt and agave syrup until creamy.
Spread the cream on bread slices.
Peel and cut banana into thin slices and arrange on 2 slices of bread
Cover each one with a second slice of bread and press down.
For the outer layer, mix together the flour, soy milk, agave syrup, vanilla, 1 pinch sea salt, and cinnamon using a whisk.
In a wide shallow bowl, crumble the cornflakes and then mix together with popped amaranth.
Heat the canola oil in a skillet.
Coat the outside of the sandwich with the flour batter and then the cornflakes amaranth mixture.
Over medium heat, cook the toasted sandwiches for aprox 3-4 minutes each side.
In addition, cook the sandwiches on the narrow sides for a short time by standing them up on their edges.
Transfer to plate lined with paper towel to dab off any excess oil.
Serve with fresh fruit.

I found the cutest PEEPS ever.

Pumpkin Recipe: Pumpkin Sauce and Meatball Recipe

I’ve been mixing up our routine meals a lot lately. We love meatballs- it’s a go-to for this family. But we’re always having them the same way.  I thought we’d mix things up a bit and try something different.  We added pumpkin to the meatballs and sauce and came up with these recipes!

Pumpkin Meatballs w/ Pumpkin Sauce

Pumpkin Meatballs

Ingredients –

½ lb. Lean ground beef

½ lb. Ground pork

1 egg

¼ C. milk

½ C. breadcrumbs

¼ C. LIBBY’S 100% Pure Pumpkin (15 oz.)

1 tbs. parsley

¼ tsp. Salt

¼ tsp. Pepper

¼ finely chopped onion

Pumpkin Sauce

Ingredients –

½ C. finely chopped onion

½ medium red bell pepper

2 tbs. minced garlic

2 tbs. butter or margarine

1 C. LIBBY’S 100% Pure Pumpkin (15 oz.)

1/2 C. water

1 chicken boullion cube

½ C. milk

½ lb. Rotini pasta

Pumpkin Meatballs

Directions –

Preheat the oven to 350 degrees. Line a 9 x13 baking sheet with foil.

In a large bowl combine all the meatball ingredients and mix well using your hands. Roll the mixture into small 1-2” size meatballs and place on the foil lined baking sheet

Bake the meatballs for 20-25 minutes until cooked through.

Pumpkin Sauce

Directions

While the meatballs are cooking, prepare the rotini noodles according to package directions.

In a separate medium saucepan combine the ingredients for the pumpkin sauce and bring to a small boil, stirring frequently. Turn down on low and let simmer.

Serve the meatballs and sauce over the noodles.

*Makes 4-6 servings. Store unused portions in an airtight container in the fridge up to 1 week.

Grilled Potato Recipe: Heaven Potatoes

My husband “invented” this recipe when I was on one of my first blogging trips and he was left with actual time during the day to think about what to cook.  All 3 kids love these potatoes, even without ketchup, but we also love them.  They go so well with just about anything from the grill :)

Heaven Potatoes Grilled Potato Recipe

Ingredients

1 bag baby potatoes (you can also do 5-6 regular potatoes, but you’ll spend a lot more time cutting), cut into 1/2 inch pieces  (any size is fine, but make sure they are uniform in size)

Rosemary (to taste)

Olive Oil 1-2 TBSP (you want to coat the potatoes so they don’t stick)

Salt (to taste)

Pepper (we prefer fresh ground for this)

Grill basket

Cut potatoes into approx. 1/2 inch pieces (smaller sizes will cook faster, but whatever size you choose, be sure to keep the pieces uniform in size)

Put potatoes into a bowl (or large ziploc bag)

Toss potatoes with olive oil, salt, pepper and Rosemary

Toss seasoned/coated potatoes into grill basket.

Stir frequently

These take about 15 minutes to grill.  Larger pieces will take longer.

These are great with burgers, chicken, beef, and fish on the grill.  We’re thinking about trying a potato salad with the grilled heaven potatoes at some point this summer.

I have been brewing kombucha like crazy for the past few weeks with my GetKombucha continuous brewing kit.  The plain kombucha taste great but I wanted to play with some flavors to try some new kombucha recipes and even make a kombucha cocktail!

 

Organic Strawberry Kombucha

Organic homemade strawberry kombucha recipe

Ingredients

32 oz Homemade Kombucha
1-3 TBSP Dried Organic Strawberries (To make other flavors, simply swap out the strawberries for your preferred flavor)

Directions

After you have brewed your kombucha, bottle the kombucha and add 1-3 Tablespoons of dried organic strawberries.
Place the sealed bottle is a warm, dark place for 2 days.
This is called the 2nd fermentation.
You can “burp” the bottle after the first day to let out any excess air.
After 2 days place the flavored kombucha in the refrigerator and ENJOY!

Ginger Hibiscus Kombucha Tea recipe

Ginger Hibiscus Kombucha

Ingredients

32 oz plain kombucha
1 inch of fresh grated ginger
2 tablespoons dried hibiscus flowers

Directions

After you have brewed your kombucha, bottle the kombucha and add your ginger and hibiscus flowers
Place the sealed bottle is a warm, dark place for 2 days.
This is called the 2nd fermentation.
You can “burp” the bottle after the first day to let out any excess air.
After 2 days place the flavored kombucha in the refrigerator and ENJOY!

 

Ginger Hibiscus Kombucha Cocktail

After making my Ginger Hibiscus Kombucha, I was enjoying a chilled glass and got to thinking that it would make a tasty cocktail.  After a little internet search I came across a Ginger Liqueur.  I hunted down a bottle and headed home to make this truly amazing drink.

Kombucha Cocktail recipe

Ingredients

6 ounces Ginger Hibiscus Kombucha (homemade or store bought)

1 shot of Domaine De Canton (ginger liqueur)
Ice

Directions

Pour 6 ounces of ginger hibiscus kombucha in to your favorite glass.
Add a shot of Domaine De Canton
Add some ice
Enjoy!

Summer Food Recipes Ideas

Memorial Day is HERE!  The unofficial kick off to summer. The start of all of the fun cookouts, picnics, BBQ get-togethers. The start of longer days and a more relaxed schedule (hopefully). The start of one of my four favorite seasons!

With all of these cookouts, picnics, BBQ get-togethers comes the question some love and some don’t love as much- what do we serve our guests? With so many dietary needs, it’s hard to be able to please all of our friends and family with one kind of food, so I have some fun suggestion that can work for just about anyone!

 

Grilled Pizza

Pizza? At a cookout?  Why, yes! Why not? Ristorante by Dr. Oetker has some fabulous flavor combos, you can make sure to have a substantial dish for those who may not want meats grilled. One thing I love about this brand is that the pizzas aren’t topped with just the right amount of flavorful toppings so nothing slides off when you pick up a slice…. making it a great option for BBQ and cookouts. Cut them small, cut them large, these would be a great addition to your party foods list this summer!

We are actually planning to grill a few Ristorante pizzas again  this weekend, so stay tuned!! We have been so happy every time we have grilled pizzas and I think with the already thin crust of Ristorante pizzas combined with the grilling flavor added to the already fabulous sauce and cheese we are going to have a huge hit on our hands. Pizza Funghi would be a nice option for your Vegetarian friends, with mushrooms, tomatoes, Edam cheese and Mozzarella. The Pizza Vegetale has lots of peppers, tomatoes, onions and chiles atop the thin crust – this is one of my husband’s favorite pizzas right now. Lots of flavor, lots of great tastes. When you grill these pizzas, be sure to turn  your grill to the lowest heat so you don’t overcook.

Find out if Ristorante is sold near you by visiting the Store Locator. If your local stores don’t have it, I’d totally recommend asking them to start carrying it. We LOVE it!

 Burgers

Instead of plain burgers for your cookout, mix things up at bit. Make sliders with a few flavor options for guests. Sliders cook faster than burgers, so you can spend less time grilling and more time with your friends and family. You could also make sliders from smaller Portobello mushrooms and have some great toppings to choose from.

 

Some slider flavor combo ideas:

  • Bacon and blue cheese
  • Fiesta Sliders (black beans, corn, salsa mixed in with your burger meat)
  • Pepper and Onion Sliders
  • Mushroom and Swiss

 

I would sauté the veggies ahead of time and mix them with the meats once cooled. Most everyone enjoys a burger, but why not add some new flavors and add a little bit more sophistication?

 

Some side dish ideas:

  • Quinoa – there are so many options out there for making dishes with quinoa. Find a fabulous salad dish that can be served cold and add that to your menu. Skip any dairy for the recipe and you can satisfy your Vegan friends’ bellies as well.
  • Heaven Potatoes

 

Salads with Seasonal Fruit

 

We always have watermelon around in the summer. Why not cut some up and add it to a salad? My mom used to make a salad with spinach, watermelon, onion, a little feta cheese… there are lots of options.   Pick a fruit that’s in season, get it in a salad, and set it out. Who says BBQ foods have to be traditional?

I’ve also seen watermelon salad set inside of a hollowed out watermelon – watermelon, mint, olives and feta cheese.

 

Not into watermelon? What about salads with strawberries? Berries, spinach, pepitas and some dressing would make a great salad, super simple to make. There are so many options for fresh fruits and veggies in summer, so have some fun with your salads!

 

Beverages

 

Go to your seasonal fruits with your beverages again.  We made Honey Rhubarb Iced Tea a few years ago for the first time and it became an instant family favorite.

 

With or without alcohol, making cocktails and mocktails with seasonal fruits is a great way to add some great flavor to your drinks (and not break the bank, since seasonal fruits are generally less expensive).

Mason Jar Recipes: Pear Crisp

I used to think of crisps as being a great treat in the fall.  Then I realized that really, these delightful treats should be enjoyed ALL YEAR LONG.  Seasonal fruits in a crisp are like a dream come true, so let’s celebrate!!

Pear Crisp Mini Jars

6 medium size Bartlett Pears, peeled and diced

sugar (optional)

10 jelly jars (4 oz.)

 

Crumble Topping Ingredients –

 

½ c. rolled oats

½ C. flour

1/3 C. packed brown sugar

4 tbs. butter or margarine, softened

 

Directions –

 

#1. Preheat the oven to 350 degrees

 

#2. Place about 2 tbs. of diced apples into the bottom of each jelly jar. You want to feel about ½ the jar. **If you prefer your pears a bit sweeter you can also add a ½ tsp. of sugar (sprinkled on top of the pears) to each jar.

 

#4. In a separate bowl, combine the rolled oats, flour, brown sugar. Using a fork, or a pastry cutter, cut in your 4 tbs. of butter or margarine. The mixture will be very crumbly.

 

#5. Scoop about 2-3 tbs. of crumble into your jelly jars. You want the crumble mixture to come right to the top of the jar – it will sink a bit while baking.

 

#6. Bake for 25 minutes on 350 degrees.
