Summer’s coming fast and furious and with it, Memorial Day, Fourth of July, and the desire of many of us to create fun, festive and patriotic recipes.  Red White and Blue recipes can be a ton of fun to create.  Here’s a fun Patriotic Popsicles Recipe!!

Patriotic Popsicles

Ingredients:

 

Popsicle Mold

Wooden Craft Sticks

Blue Hawaiian Punch

Purple Powerade

Red Hawaiian Punch

Sprite

Directions:

 

Pour a layer of blue Hawaiian Punch into the bottom of the popsicle mold. This will be the largest layer. I also added a bit of Purple Powerade to make the blue darker, like you would see on an American flag.

Put in the freezer for about 30 minutes, until the layer has started to freeze, but isn’t quite solid. Remove from freezer and insert wooden craft sticks.

Return to freezer and freeze until layer is solid.

Add a small layer of red Hawaiian Punch. Put in freezer until frozen solid. Time will depend on the thickness of the layer.

Add a small layer of Sprite. Again, put in freezer until frozen solid.

Finally, add a final layer of red Hawaiian Punch and freeze until solid.

Serve immediately! These popsicles are perfect for a Memorial Day barbecue or a Fourth of July party!

Nutella Recipe: Sugar Cookies with Nutella Frosting and Raspberries

Cookies.  They are a wonderful thing.  Sugar cookies are always yummy, and usually a sure-fire hit. They are also one of the most versatile kinds of cookies, since you can frost them with oh-so-many-wonderful-flavors! Today’s cookie is topped with a Nutella frosting and fresh raspberries.  These are so good and a great treat to bring along to a picnic or barbeque this summer!

Sugar Cookies with Nutella Frosting and Fresh Raspberries

Sugar Cookie Ingredients 

¾ C. Shortening

1 C. sugar

2 eggs

1 tsp. vanilla extract

2 ½ C. flour

1 tsp. baking powder

1 tsp. Salt

3” round cookie cutter (you could also use a medium size glass)

 

Topping Ingredients 

2 C. fresh raspberries

 

Nutella Frosting Ingredients 

1 C. butter or margarine, softened

2 C. Nutella

4 C. powdered sugar

6 tbs. milk (you may need a little bit or more or a little bit less depending on how thick you like your frosting)

Directions 

 

#1. Combine your shortening, sugar, vanilla extract and eggs, mixing well. In a separate bowl combine the flour, baking powder and salt. Slowly blend the dry ingredients into the wet ingredients and mix well.

 

#2. Place the dough in the fridge for 30 minutes to set.

 

#3. Preheat the oven to 375 degrees.

 

#4. Remove dough from the fridge and roll dough about 1/8” thick onto a lightly floured surface. Cut with your cookie cutter (or glass). Repeat until you’ve used all the dough.

 

#5. Bake the cookies 6-8 minutes or until golden brown.

 

Frosting Directions

 

Using a hand mixer beat 2 C. of powdered sugar, ½ of your butter/margarine and ½ of your milk and 2 C. of Nutella. Blend well and then slowly add the remaining sugar, milk and butter. Beat until smooth and creamy.

 

Generously spread the Nutella frosting over the cooled cookies. Top with freshly sliced strawberries.

Makes approximately 3 dozen cookies. 1 cookie = 1 serving. If topping with fruit and not serving immediately, store in the fridge covered. Cookies can be store up to 2 weeks in an airtight container without fruit or frosting.

Pomegranate Sugar Scrub Homemade Recipe

I LOVE taking baths. I really, really do. It’s my escape, my me time. One of my favorite things to use in the tub is a good sugar scrub that leaves me feeling like I have no dry skin at all.  I’m smitten with Pomegranate (I love the smell, but I also love the pink) and we came up with this Pomegranate

DIY Pomegranate Sugar Scrub Homemade Recipe

Ingredients

1 C. coconut oil
½ C. sugar
1 fresh pomegranate de-seeded OR you can also use ½ package of pomegranate seeds (found in the produce section)
4-5 4 oz. Jelly jars

Directions –

#1. Cut the top of your fresh pomegranate off and de-seed a 3-4” section placing the seeds and juice in a small bowl. If using pomegranate seeds from the produce section, use a blender to puree ½ the package of pomegranate seeds (mixture will be chunky). This will give you enough juice for the nice pink color as well and the pomegranate particles to add to your scrub.

#2. In a medium size bowl, combine the coconut oil, sugar, pomegranate puree or the seeds and juice from the fresh pomegranate and mix well.

#3. Add the scrub to your 4 oz. Jelly jars.

*Makes 4-5 4 oz. Jelly jars. This will last 1-2 months, simply stir the jar if you see that the mixture is settling.

Brownie Recipe: Snickers Brownies #Linky

I don’t know that these need an intro.  I do know, however, that I need a chocolate fix something fierce and this is a great way to use up leftover candy from the kids’ baskets, buckets, stockings, etc. I love a good brownie recipe and I love Snickers so this was kind of a perfect brownie recipe for me!

Snickers Brownies

Ingredients –

 

¾ C. flour

2 C. semi-sweet chocolate

2 tbs cocoa powder

4 tbs. butter

3 eggs

1 ½ C. sugar

½ C. packed brown sugar

1 tsp. Vanilla extract

1 tsp. Baking powder

½ tsp. Salt

10-12 Snickers candy bars

8×8 or 9×9 baking pan

Frosting ingredients –

¼ C. butter or margarine, softened

1/3 C. cocoa

2 C. powdered sugar

1 tsp. Vanilla

3 tbs milk

 

Directions –

Preheat the oven to 350 degrees. Line your 8×8 or 9×9 baking dish with foil and spray with a non-stick spray.

#1. Combine the flour, cocoa powder, baking powder and salt. Set aside.

#2. In a microwave safe bowl, melt the butter and chocolate in 15-20 second increments, stirring until completely melted. Let cool 2-3 minutes.

#3. In another bowl, combine the eggs, sugar and vanilla. Add in the melted chocolate mixture and then slowly add in the flour and cocoa mixture and mix well.

#4. Pour enough of the batter into the bottom of your baking dish just to cover the bottom. Spread with a spoon or spatula if needed.

#5. Lay the Snickers bars on top of the batter about 1 centimeter a part – you will need about 8 bars for the entire pan and may need to break 1 or 2 in half. Once all the candy bars are in place, pour the rest of the batter over the top and bake for 25-30 minutes. Insert a toothpick around 25 minutes to check them. If it comes out ‘clean’ they are done.

Let the brownies cool completely.

 

Frosting directions –

#1. Combine the cocoa powder, butter, sugar and vanilla. Slowly add in the milk 1 tbs. at a time. You may want to add in more milk depending on how thick you like your frosting. Using a hand mixture, beat on high for 2-3 minutes.

#2. Once the brownies have cooled completely, lift the foil out of the pan (love the super easy clean-up!) Evenly spread the chocolate frosting over the top of the brownies.

#3. Cut into *12 squares. Break the rest of your Snickers bars into quarters and gently press one into the top of each brownie. **You could double the servings by cutting the the pan into smaller size squares – 24 if desired

*Makes 12 servings is cut into 12 squares – 1 square = 1 serving. Store in an airtight container up to 1 week

Nutella Recipe: Chocolate Nutella Banana Cupcakes

Here’s a fun (and sweet) Nutella recipe for you to enjoy! It’s always fun to make cupcakes, right?  These are a delightful mix of chocolate, Nutella and banana.  So good.

Cupcake Ingredients –

1 ¾ C. flour

1 C. packed brown sugar

¼ C. cocoa powder

1 tsp. baking soda

1 tsp. baking powder

½ tsp. salt

1 C. milk

1/3 C. vegetable oil

1 egg

1 tsp. vanilla extract

1 C. Nutella

2 bananas, mashed

 

Frosting Ingredients –

1 C. butter or margarine, softened

2 C. Nutella

4 C. powdered sugar

6 tbs. milk (you may need a little bit or more or a little bit less depending on how thick you like your frosting)

Directions –

 

#1. Preheat your oven to 350 degrees and line a 12ct. Muffin tin with cupcake liners (or use a non-stick spray).

 

#2. In a medium size bowl, combine the flour, brown sugar, cocoa, baking powder, baking soda and sale. Mix well and set aside.

 

#3. In a smaller bowl, combine the milk, egg, mashed bananas and vanilla – whisk well.

 

#4. Slowly combine the dry ingredients with the wet ingredients and mix well. Slowly add in the Nutella.

 

#5. Divide the batter evenly between the 12 muffin tins. Bake for 20-25 minutes. Check the muffins by sticking a toothpick into the center around 21 minutes. If it comes out ‘clean’ they are done. Let the muffins cool.

Bruschetta Recipe: Bruschetta Zucchini Boats

In keeping with the mixing things up in our menu rotation, we’ve been trying to inlude a meatless meal or two each week. The males in my house are slowly adjusting to having a meatless meal once a week, and I’ve actually been enjoying the exploration of different recipes.  This is a bruschetta recipe that gives us another way to use up zucchini- which is good because zucchini seems to do REALLY well in our garden and I always have too much!

Bruschetta Zucchini Boats

Ingredients:

1 pint cherry tomatoes, quartered
1 orange tomato, seeded and cut into pieces
2 garlic cloves, minced
½ cup onion, finely chopped
½ tsp crushed red pepper”
½ tsp salt
¼ tsp black pepper
1 Tbsp grape seed oil
1 ½ Tbsp balsamic vinegar
3 Tbsp fresh Basil, chopped {I use shredding scissors}
4 zucchini
½ cup shredded mozzarella cheese

Instructions:

1)  Preheat oven to 350 degrees.  Line a baking sheet with foil.

2)  Slice zucchini in half lengthwise.  Using a melon baller, scoop out the middle of the zucchini halves to create a “boat.”  Bake in oven for about 5-7 minutes.

3)  In medium pan, heat oil over medium heat.  Add onion, garlic and crushed red pepper.  Saute on medium for 3-4 minutes until onions are softened and garlic is lightly browned.  Season with salt and pepper.  Let cool.

4)  In a large bowl, combine cherry tomatoes, orange tomato, and garlic mixture.  Stir to combine.  Add balsamic vinegar and stir well.  Mix in fresh basil.

5)  Spoon tomato mixture into zucchini cavities and top with mozzarella cheese.  Bake in oven for 3-4 minutes or until cheese is melted.

  • ½ tsp crushed red pepper”
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 Tbsp grape seed oil
  • 1 ½ Tbsp balsamic vinegar
  • 3 Tbsp fresh Basil, chopped {I use shredding scissors}
  • 4 zucchini
  • ½ cup shredded mozzarella cheese
Instructions
  1. ) Preheat oven to 350 degrees. Line a baking sheet with foil.
  2. ) Slice zucchini in half lengthwise. Using a melon baller, scoop out the middle of the zucchini halves to create a “boat.” Bake in oven for about 5-7 minutes.
  3. ) In medium pan, heat oil over medium heat. Add onion, garlic and crushed red pepper. Saute on medium for 3-4 minutes until onions are softened and garlic is lightly browned. Season with salt and pepper. Let cool.
  4. ) In a large bowl, combine cherry tomatoes, orange tomato, and garlic mixture. Stir to combine. Add balsamic vinegar and stir well. Mix in fresh basil.
  5. ) Spoon tomato mixture into zucchini cavities and top with mozzarella cheese. Bake in oven for 3-4 minutes or until cheese is melted.

 

Decorated Sugar Cookies: Disney Frozen Anna and Elsa

Who, at this point, is not completely in love with all things Frozen?!?!  These decorated sugar cookies of the two young princesses are created with Royal Icing and would be the perfect treat for a Disney Frozen themed party!

These decorated sugar cookies are made from our Lemon Snap Sugar Cookie Recipe we shared back at Christmas (those adorable Elf On A Shelf Cookies).  These are my favorite sugar cookie!  The texture is great, they don’t break easily, and the hint of lemon is perfect!  I’ve used snowflake cookie cutters and large circle cookie cutters for our Frozen treats.

Ingredients & Supplies:

  • Snowflake and circle sugar cookies ready to decorate
  • 1 batch of Royal Icing colored white, light turquoise, dark blue, purple, skin tone, golden blonde, brown, black, and green
  • Piping bag and tip insert, #2 and #4 round tips
  • Blue & blush shimmer powder
  • Bowl and spoons for mixing icing
  • Toothpicks for spreading icing

Instructions:

Begin by outlining the cookies with the stiff Royal Icing.  I used a #4 round tip to pipe a turquoise line around all the cookies.  For the Anna and Elsa cookies, use the other colors of icing to “draw” the outlines of each girl onto the cookies with the #2 round tip.  Remember that these are decorated sugar cookies and that they do not have to be perfect art!  Have fun with them and keep them simple.

Once outlines are firm, begin filling in the spaces with thinned Royal Icing.  It should be thin enough to spread but not so watery that it will not harden (A good rule of thumb is to add a few drops of water to a time and stir well, lift the icing with your spoon.  It should absorb back into the icing at about 10 seconds).  Fill in the spaces with the appropriate colors of icing and allow the icing to dry completely.  Do not add anything else until the icing is hard.

When all of the icing has hardened, use the stiff icing to pipe details onto each cookie such as the white details on the snowflakes, the faces on the princesses, and the details of Anna’s dress.  When all icing has firmed up, you can add shimmer powder to give the decorated sugar cookies sparkle.  I added blue to the turquoise icing and a blush tone to the princess faces.

Do not stack cookies until all icing is hardened.  Once cookies are ready, stack in an air tight container until ready to share!
