Butterscotch Recipe: Butterscotch Bars

I love to find a good butterscotch recipe.  I’m usually all about the chocolate but once in a while? I’m all bout the ‘scotch. These butterscotch bars have a shortbread cookie base with a layer of caramel sauce and topped with butterscotch pudding cream. It’s a cross between a pudding and cheese cake filling. Finish with Skor Bits on the top to decorate.

Ingredients

  • 2 cups flour
  • 1/3 cup sugar
  • 1 cup butter, softened
  • 1 8 oz. package cream cheese, softened
  • 1 cup powdered sugar
  • 1 box butterscotch pudding mix (4 serving size)
  • 3/4 cup milk
  • 1 cup caramel sauce
  • ½ to 1 cup Skor Toffee Bits

Directions

Preheat oven to 300ºF. In a large mixing bowl, combine the flour and sugar. Add the butter and beat with an electric mixer on medium speed until completely blended. Add the dough mixture to a 13×9 inch pan and press down to make the crust.

Bake for 35 minutes or until edges of the crust are golden brown. Remove from heat and let cool.

In a large mixing bowl, combine the cream cheese and powdered sugar and beat until fully blended. Then add in milk butterscotch pudding mix and beat until smooth.

Once the shortbread crust is cooled, evenly spread the caramel sauce over the crust.

Spread the pudding mixture over the caramel sauce and smooth out with a spoon. Sprinkle the Skor Toffee Bits on top of the pudding mixture.

Refrigerate for at least an hour or until set. Makes 24 to 36 bars depending on the portion size.

Pumpkin S’mores Bars Recipe

Yes, I do realize it’s April.  I am sharing a pumpkin recipe in spring time.  Crazy, right?  Actually, not so crazy.  Pumpkin works all year round (and it freezes well, so you can totally stock up when it goes on sale in fall in whatever form you prefer and use it when you feel like it!)

Plus, without the wonderful that is pumpkin, how could I share this Pumpkin S’mores Bar Recipe with you?

Pumpkin S’mores Bars Recipe

Ingredients

½ C. butter or margarine

1 can of Libby’s Pumpkin(15 oz.)

½ cup milk

1 tsp. Cinnamon

1 C. of Graham crackers (any brand), crushed (about 11 squares, see photo)

Approximately 12 graham cracker squares (you may need 1-2 more if using a larger baking dish)

2 C. mini marshmallows

8 oz. chocolate chips

9×9 or 8×8 baking dish (I lined mine with foil for easy clean up)

 Directions:

Preheat your oven to 450 degrees

#1. In a small saucepan, combine the butter, ½ C. milk, cinnamon and 15 oz. of Libby’s pumpkin, heat on low.

#2. In a large Ziploc type bag crush the graham crackers using a rolling pin. Add them to the pumpkin mixture in the saucepan.

#3. While the pumpkin mixture is heating through lay your 12 graham cracker squares on the bottom of your baking dish. You may need to split a few squares in half to make them fit.

#4. Remove the pumpkin mixture from the stove and spread ½ of the mixture on top of the graham cracker squares using a spatula. Sprinkle 1 C. of the mini marshmallows and ½ of your chocolate chips on top.

#5. Repeat step #4 – you will end up with 2 layers.

#6. Place the baking dish in the oven and bake for 5 minutes – keeping an eye on it. The marshmallows will turn a nice golden brown color. Remove from oven and let cool in the fridge to ‘set’. Wait about 1 hour before cutting.

Pumpkin is a superfood. Pumpkin adds extra fiber and Vitamin A to recipes. It’s packed with Beta Carotene. It can be used to replace the fat in some recipes and cut the amount of sodium per serving in others. When used as a replacement for butter, eggs or oil it can also reduce calories. It can be incorporated in breakfast, lunch, dinner, snack and beverages – all that taste great.

We’ve all heard about superfoods for a while now.  Pumpkin has a lot of benefits that make it part of the superfood team- it’s a good source of fiber (we ALL need fiber) and a great source for Vitamin A.  You can use it to replace fat in some recipes, and you can also use it in sauces to lower sodium amounts.

Pumpkins are a pretty sneaky vegetable.  They can go sweet but they can also go savory.  You can feature the pumpkin flavor and create your recipes around pumpkin, or you can “tuck” it into other recipes to get the added benefits of pumpkin and not have the dish be all about the pumpkin.

Lemon Lime Pudding Bars Recipe

Jenni whipped up (there’s a pun there, let me know when you get it) these fun Lemon Lime Cooler Bars to keep with our theme of easy, fun dessert recipes this week. Since I came down with some icky virus I’ve been in bed for a few days unable to do anything and she came to the rescue.  Thanks, lady!! Plus, thanks for the yummy recipe, these look amazing!

Lemon Lime Pudding Bars

Ingredients:

1 box  NILLA Wafers cookies
1/2 Cup butter melted
1/4 Cup cornstarch
1/2 Cup Sugar
1/2 package of Lime Jello
2 Tablespoons lime juice
1/2 teaspoon vanilla
1/2 cup water
1 cup egg substitue
1 box Lemon pudding mix
8 oz Cool Whip

Directions:

Spray 8×8 pan with nonstick cooking spray.

Preheat oven to 325.

Crush Nilla wafers in food processor.

Combine with melted butter and press into bottom of pan.

Cook for 15 minutes, until golden brown.

Combine sugar and cornstarch in a bowl, then add lime Jello, lime juice, vanilla, water and egg substitute.

Luau Pina Colada Cake Recipe

Jenni and her oldest were kind enough to come up with this fun- and delicious- Luau Pina Colada Cake Recipe– for us.  You remember how easy the Boston Cream Pie Recipe was that my daughter and I made earlier in the week, right?  Well, this is just as easy.  Jenni’s son is a big foodie so he had lots of fun making this special cake for their nanny’s birthday.  You’ll probably see 2 of her other 3 boys in a pic or 2. They all love to help in the kitchen!

 

Luau Pina Colada Cake Recipe

Ingredients:

1 angel food cake
4 angel food cake cupcakes
1 can cream of coconut
4 oz pineapple juice
1 can frozen pina colada mix
1 box JELL-O Coconut Cream Flavor Instant Pudding
8 oz Cool Whip thawed
7 oz BAKER’s Angel Flake Shredded coconut

Directions:

Arrange your luau cake by placing cake in the center of your serving dish.

Cut the cupcakes in half and arrange around the cake like petals.

Use a skewer to poke holes throughout your cake.

Combine 1/2 can coconut cream, 4 oz pineapple juice and 1/2 can thawed pina colada mix.

Pour mixture slowly over cake and let sit for 20 minutes.

Cover the entire cake with Cool Whip, then press shredded coconut to the sides.

Super Simple Boston Cream Pie Recipe

Listen, my friends. My kids are on vacation this week.  ALL week.  All three are home, wanting to have things to do, and-well, just expect maybe a lot of recipes this week.  Easy, kid friendly ones.  Maybe crafts.  It’s for my sanity. I’ve not had them all home together in a long time!  Today’s recipe is a super simple Boston Cream Pie recipe.  Had to go with this, it’s REALLY easy and the perfect recipe for the kids to assist with.

But my favorite part? No baking. None. Zip.  It needs time to chill in the fridge.  At least an hour.  Don’t cheat.  Trust me. Give it the full hour+ and you’ll be glad you did. The cake, the filling and then the top. AND, my 8 year old did 99% of this herself!!  She was SO proud.

Kraft sent us a basket of ingredients to help inspire some fun recipes this week.  (Great timing, thank you Kraft!) and gave us a list of recipes we might like to try.  That’s where this Boston Cream Pie Recipe comes from – from Kraft.  Just wait till you see how easy it is!

Super Simple Boston Cream Pie Recipe

Ingredients:

1 pkg.  (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1-1/2 cups  cold milk
1-1/2 cups  thawed COOL WHIP Whipped Topping, divided 1/2 cup and 1 cup
1 pkg.  (10 oz.) prepared angel food cake, cut horizontally into 3 layers (see? No baking!)
2 oz.  BAKER’S Semi-Sweet Chocolate, chopped

Parmesan Herb Spaghetti Squash Recipe

If you haven’t tried substituting spaghetti squash for spaghetti noodles in any of your favorite dishes yet this is a great simple recipe.  When you are trying to cut  back on calories one of the best ways to do it without feeling deprived is to make sure you incorporate lots of flavor into your dish. This is easily done with fresh or dry herbs, and small amounts of less healthy ingredients-like Parmesan cheese. This dish weighs in at about 2.5 Weight Watchers points. Be sure to check out our Tortellini Soup recipe that’s also Weight Watchers Friendly!

Parmesan- Herb Spaghetti Squash

Ingredients:

1 large spaghetti squash

¼ cup grated Parmesan cheese

½ tsp. garlic powder

½ tsp. Basil

½ tsp. Oregano

½  tsp. Rosemary

1-2 Tbsp. Olive oil

Salt and pepper to taste

Directions:

Preheat oven to 350°

Slice spaghetti squash in half- lengthwise.

Remove all seeds from center.

Brush all exposed area with olive oil.

Place halves cut side down on a baking sheet.

Bake for 45-55 minutes until squash is tender.

Remove from pan and use a fork to gently scrape out the spaghetti like strands.

Toss with 1 Tbsp, Olive oil, Parmesan, Basil, Oregano, Rosemary, and Garlic powder to coat thoroughly.

Serve immediately.

Maple Glazed Chicken and Sweet Potato Tacos Recipe

I love tacos. I really do.  We always seem to have the SAME taco nights at our house. I know, if it’s not broken, why fix it, but … I’m trying to broaden our culinary horizons. Or at least keep me from boredom with our meal plans. SO…here’s a fun and totally different taco recipe from the norm, and it’s got a little sweet with a little kick to please everyone in the family.

Maple Glazed Chicken and Sweet Potato Tacos

Ingredients:

3 6oz boneless, skinless chicken breasts
¾ cup pure maple syrup
2 sweet potatoes, peeled and cut into 1-inch dice
3 tsp cumin
2 tsp chili powder
soft taco sized tortillas

Salad

1 cup shredded red cabbage
2 Tbsp lime juice
2 tsp sugar
½ Tbsp avocado or grapeseed oil

Maple Tacos

Directions:

1) Preheat oven to 375 degrees.  Line a large rimmed baking sheet with nonstick foil.

2) In a small bowl, mix sweet potatoes with 1 tsp cumin and  ½ tsp chili powder.

Seasoned Sweet Potatoes

Season chicken breast with remaining cumin and chili powder.   Add chicken and sweet potatoes to baking sheet. Pour maple syrup on top.

3) Cover baking sheet with foil and cook for 20 minutes.  Remove foil and cook for an additional 10-15 minutes or until chicken is cooked through.

4)  In a medium bowl, combine salad ingredients and toss to combine.

5) Slice chicken.  Spoon chicken and sweet potatoes onto tortillas and top with salad.

Raspberry Acai Punch Recipe with Trop50 for Girls’ Night In #GirlsNightIn

You know how they say laughter is the best medicine?  I really think it’s true.  Especially the laugh till your face hurts and your belly literally aches from laughing so hard and so long that you have with your friends.  That’s the best medicine.  I’ve been thinking a lot about my fabulous friends- those I see semi-regularly and those whom I don’t see near often enough… I’ve been all sentimental and mushy lately (still?) and have been thinking about doing a Girls’ Night In in honor of my upcoming eleventh 29th birthday.  (I kid, I kid.  I’ll just be 38 for the third year).

Why Girls’ Night In? Well, we’re close to home. We can party in our pajamas (please!) and we can make whatever we want however we want to enjoy it.  One thing I always love at a party, no matter how big or small, is punch.  I really, really do.  I came up with a fun punch recipe using Raspberry Acai that *I* think would be so much fun for a little get together!

Raspberry Acai Punch Recipe

Ingredients:

Seltzer
Raspberry Sorbet or Gelati

Directions:

Add 4 oz Raspberry Acai to a glass
Add 2 oz seltzer
Add 1 scoop Raspberry Sorbet
Serve and enjoy! You could also garnish with a mint sprig.
An alternative idea for this would be to add 4 oz Raspberry Acai, 4 oz seltzer and 1 scoop Rasperry Gelati to a blender. Puree and serve.

  • Trop50 Raspberry Acai
  • Seltzer
  • Raspberry Gelati
Instructions
  1. Add 4 oz Raspberry Acai to a glass
  2. Add 2 oz seltzer
  3. Add 1 scoop Raspberry Gelati
  4. Serve and enjoy! You could also garnish with a mint sprig.
  5. An alternative idea for this would be to add 4 oz Raspberry Acai, 4 oz seltzer and 1 scoop Rasperry Gelati to a blender. Puree and serve.

Crockpot Chocolate Lava Cake Recipe

Ingredients –

 1 C. Sugar + ½ C. sugar (set aside)

1 C. flour

3 Tbs. unsweetened cocoa powder + 3 Tbs. cocoa powder (set aside)

2 tsp. Baking powder

1 tsp. Salt

3 tbs. butter or margarine, melted

1 tsp. Vanilla

12 oz. chocolate chips

2 C. hot water

Directions –

Using a non-stick spray grease the inside of your crockpot. I’d even recommend using one of those disposable crockpot liners.

#1. In a medium size bowl combine flour, 3 tbs. of cocoa powder, baking powder and salt. Set aside (see photo).

#2. In another bowl, combine the sugar, vanilla and melted butter. Next, slowly fold the dry mixture in and mix well

#3. Pour the batter into your greased crockpot. Pour the 12 oz. of chocolate chips on top of the batter. (see photo).

#4. Combine your 2 cups of hot water, 3 tbs. of cocoa powder and the ½ C. of sugar you set aside earlier. Stir until the sugar is melted. Slowly pour the mixture over the top of your batter and chocolate chips (see photo).

Cook on high for approximately 2 hours but keep an eye on it – especially the sides. You don’t want it to start burning. If it does, turn the crockpot down. Cook for 2 hours on high and then another 2 hours on low.

*Cook time may depend on your crockpot so keep an eye on it. Makes approximately 6 servings.

Banana Maple Pecan Cupcakes

Ingredients:

  • 1 3/4 cups all purpose flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 3 ripe bananas, mashed
  • 1/2 cup milk
  • 1/4 cup oil
  • 1/2 cup real maple syrup

Makes 12 cupcakes

 

Directions:

Preheat oven to 400 degrees

Line a muffin tin with cupcake wrappers and set aside.

Stir together dry ingredients in a large bowl.

Lightly beat egg in a medium bowl.  Stir in mashed banana, milk, oil, and maple syrup.

Add wet mixture to dry and mix with fork until all ingredients are moistened.  Butter will look lumpy.

Fill each liner 2/3 full with batter.

Bake in preheated oven for 20-22 minutes.

 

We’ve topped these cupcakes with a maple syrup cream cheese frosting and candied pecans for a perfect flavor combination!

Ingredients

1 8 oz pkg cream cheese

1 stick butter

1 tsp vanilla

2 tbs maple syrup

2 tbs water

4 cups powdered sugar.

Directions

Cream together all but powdered sugar. Add powdered sugar 1 cup to a time.

Enjoy!
