Apple Chai Muffin Recipe

 This Apple Chai Muffin recipe is  deliciously moist and flavorful.  I love the warm, aromatic flavor of Chai tea- it is made for cool, crisp mornings and muffins are a great way to satisfy a sweet tooth without going overboard.  The subtle taste of Chai combined with applesauce is not only tasty but this muffin recipe is pretty healthy to boot.  These muffins are a perfect breakfast or snack  pick me up alongside a hot cup of coffee or Chai Tea of course.  If you love the spice of Chai tea too you will definitely want to make a batch of these muffins to try.

Ingredients:

1 ¾ cups all-purpose flour

1 tsp. Baking soda

1 tsp. Baking powder

½ cup packed brown sugar

¾ cup plain Greek yogurt

½ cup Applesauce

¼ cup melted butter

1 egg

2 tsp. Vanilla extract

2 Chai Tea Bags, opened

Directions:

In a large bowl combine flour, baking soda, baking powder, and chai tea.

Stir in applesauce, brown sugar, yogurt, butter, egg, and vanilla until thoroughly mixed.

Preheat oven to 375°

Fill cupcake liners 2/3 full if you want them overflowing ( I love it overflowing- the edges get crisp) or ½ way if you want small muffins. Alternatively, instead of liners  you can spray cupcake tins with nonstick cooking spray and scoop batters right into cupcake tin.

Bake for 15 minutes or until done and tops are lightly golden, test by inserting a toothpick into the center- it will come out clean when done.

Strawberry S’mores Recipe

Delicious ooey, gooey traditional s’mores that are a crowd pleaser with a Valentine’s twist- Strawberry marshmallows, a white chocolate dip, and milk chocolate drizzle. A Half  dozen or so of these strawberry s’mores would make a sweet Valentine tucked inside a cellophane bag and topped with a pink or red ribbon. They go pretty quick so you will want to make up an entire box (or two). Wrap individual ones in saran wrap for a tasty little treat for classmates. You could  change up the chocolate a bit and use any combination chocolate to make- milk, dark, semi sweet, or white.

Strawberry S’mores

Ingredients:

Graham Crackers

Strawberry Marshmallows

White melting chocolate

Milk Chocolate

waxed paper

Directions

Spread out waxed paper for your s’mores to set up on.

Break graham crackers down into smallest rectangle section.

Cut marshmallows into  thirds.

Place a piece of marshmallow and place in microwave for NO MORE than 3-4 seconds.

Use the backside of a spoon or butter  knife to spread your marshmallow on a graham cracker.

Place another graham cracker on top.

Melt white chocolate in a double broiler or in a heat safe dish in microwave for 15 seconds at a time.

Do the same with a small amount of milk chocolate.

Dip one end of your s’more into white chocolate, tap off excess, lay on waxed paper.

Use a spoon to dip into milk chocolate, drizzle over s’mores by waving it back and forth gently.

Allow to set and store in an airtight container.

Chocolate Dipped Marshmallow Pops Recipe

These darling Chocolate Dipped Marshmallow Pops are a darling treat to pass out to your Valentine or Valentine’s this year.  I love the pretty, sparkly finish that the colored sugar gives them.

They are simple and fun to do, making it a great project for even the littlest ones to help you with. Set up your Marshmallow Pop making supplies in an assembly line fashion  and you can have dozens ready to go in no time!  Place in a clear cellophane bag tied with a ribbon or serve on a pretty festive tray for a Valentine’s party.   These are a great alternative to store bought treats for you child’s class and  the colors can be changed up to  make them more “manly”.  Don’t forget your hair dresser, mailman, or dog groomer while your passing out these sweet thinking of yous!

Ingredients

Paper Straws

Large Strawberry Marshmallows

White Melting Chocolate

Sugar

Food Coloring (I found easy to get natural food coloring!)

Waxed Paper

Instructions:

Lay out a large piece of waxed paper to set marshmallows on.

Melt chocolate in a heat safe dish in microwave for 15 seconds at a time,stirring between each round- otherwise you can melt in a double broiler.

To make the chocolate smoother for dipping -stir in 1 tsp. of vegetable oil after melting.

Place about ¼ cup of sugar in a shallow dish, add 1-2 drops of pink or red food coloring and stir well, adding  color until desired color is reached- a little bit goes a long way.

Skewer your marshmallows with the paper straw, not quite poking through the opposite side.

Use the straw like a handle and dip marshmallow in melted chocolate, gently shake off the excess.

Chocolate Smoothie Recipe for Kids

So here’s the thing.  The folks at TruMoo just came out with this limited edition, absolutely fabulous new flavor of their milk- in the form of Chocolate Marshmallow Milk.  I  know, right?  Well, I want some. You know, for the kids and stuff.  I mean, they did ask me if I’d write a post about it, but seriously, who would say no to writing about chocolate milk?  Especially chocolate milk with marshmallow?

There’s a tiny problem.

So far we don’t have this in stores in Connecticut yet.  I have not given up hope.

So we’re still excited to try it.

But until we CAN try this delightfully delicious, brand new, high fructose corn syrup free beverage, with no artificial growth hormones, we’ve got to make other arrangements.  It’s good hot AND cold, so you can enjoy it any way you like it.  A nice glass of s’mores? Yes please!!

So today, when the big kids got home from school, both were SUPER grouchy and very displeased with the amount of homework they had been assigned. I thought I’d have a fun with a quick little Chocolate smoothie recipe for kids as a surprise.

All I did to make TruMoo into a chocolate smoothie was toss 5 ice cubes in the KitchenAid mixer with 2 cups of TruMoo Chocolate Milk. Then I blended them. That’s it!

 

All 3 kids gave this 2 thumbs up.  And promptly asked me to look up online where to find Chocolate Marshmallow milk!

Vegetarian Bagel Sandwich Recipe

Inspired by my friend Gayle, who was the first person I truly knew who was going meatless, I’m making my own Meatless Monday recipe today.  It’s Monday, we have a busy week ahead, and I like to make sure that my whole family gets out the door with a great start…. specifically, a great breakfast.  I’m big on high protein breakfasts and this Vegetarian Bagel Sandwich Recipe is pretty quick, easy, and high in protein but lower in calories than other breakfast sandwiches I’ve made.

Ingredients:

MorningStar Farms® Maple Flavored Veggie Sausage Patties, cooked as directed (I threw these in the oven for 10 minutes while I was getting my other ingredients out and making lunches)

Mini Bagel, whole grain (You could totally use English Muffins as well), lightly toasted

1 slice cheese (your choice, I opt for light American)

1 egg, cooked to your liking (I like my eggs a few moments past rubbery)

Pepper and/or hot sauce to taste

Directions:

Oven to 350, cook your sausage patties f0r 10-12 minutes

While patties are cooking, cook your egg to your liking, toast your mini bagel(s)

After bagel is done toasting, put a slice of cheese atop one half, cover with the cooked egg, and add cooked sausage patty. Season to taste with pepper and hot sauce, if desired.  Top with other half of bagel.

Enjoy.

Easy, full of protein, and low in fat. Serve with some sliced fruit!

Valentine’s Day Macarons Recipe

This macarons recipe tinted purple is the perfect treat for your Valentine!

Ingredients:
212 grams almond meal
212 grams confectioners’ sugar
82 and 90 grams egg whites, divided
236 grams granulated sugar, plus a pinch
158 grams water
Purple gel food coloring
Buttercream icing (use this recipe, or get a jar of store-bought icing)

Valentine Macarons

Directions:
Preheat oven to 350 degrees F. Take a sheet of parchment paper and trace a small cup or shot glass with a pencil to make guides for piping the macarons. Turn the parchment paper over (so the pencil marks are on the back) and use it to line a cookie sheet.

Using a scale, weigh out the almond meal and confectioners’ sugar in a large bowl. Whisk together until smooth. Make a well in the center of the mixture and pour in the 82 grams of egg whites. Mix together until well blended. The mixture will be sticky and paste-like — set it aside.

Valentine Macarons Process

In a small saucepan, stir together the water and sugar. Clip a candy thermometer to the side of the pan and heat on medium-high until mixture reaches 200 degrees F. While it’s reaching that temp, go ahead and put the 92 grams of egg whites and a pinch of sugar in the bowl of a stand mixer. Once the syrup reaches 200 degrees F, turn the mixer on medium speed and beat the egg whites until soft peaks form. If this happens before the syrup is through, turn down the mixer to low speed.

Continue to heat the syrup until it reaches 248 degrees F. By this time, the egg whites should have reached soft peaks. Turn the mixer on medium-high and slowly pour the syrup down the side of the stand mixer bowl. Once it’s been incorporated, increase the speed to high and whip the mixture until glossy stiff peaks form.

Add in the purple gel food coloring to reach desired color. Remember, when you incorporate the meringue into the almost paste, it will lighten the color a bit.

Fold about 1/3 of the meringue into the almond paste. Add a little bit of meringue at a time to adjust the consistency of the macaron batter. It should be smooth and run in thick ribbons off the end of a spoon. You will likely have a bit of meringue left over. You don’t want it to be too thin, or it will spread too far when piped. If it’s too thick, flaws in the tops of the cookies will not work themselves out.

 

Add the batter to a piping bag fitted with a #12 tip and pipe it onto the parchment paper, using the template as a guide. Don’t fill the circles completely with batter — it will spread a bit as it settles.

Allow the piped batter to sit for 5-10 minutes to settle before baking. Bake for 9-12 minutes, until the cookies have formed “feet” at the bottom and the tops have set. Allow to cool for 5 minutes on the parchment paper, then transfer to a wire rack to cool completely.

Valentine Macarons Process

Once cool, spread icing on the bottom of one cookie and use another to make a sandwich. I used some of the left-over meringue to attach small red heart sprinkles to the top of the finished macarons.

Honey Glazed Salmon Recipe

This Weight Watchers friendly honey glazed salmon recipe on baby greens is GREAT for you and tastes delicious.

Ingredients listed per serving:

6 to 8 ounce portion of fresh salmon
2 teaspoons olive oil
3 cups organic baby green
1.5 teaspoons raw honey
1 tablespoon dried goji berries
1.5 tablespoons pumpkin seeds

Thoroughly wash and dry the salad greens, plate and chill in the refrigerator until the salmon is done.
Make sure the salmon is fully deboned before cooking (it’s easier to do now vs after it are cooked).  Turn a pan onto medium and add the olive oil.  When heated up, add the salmon to the pan skin side down-do not touch the salmon for about 3 minutes.  When it is ready to turn over it will easily slide around in the pan.  If it is not yet doing that, do not scrape it, let it continue cooking for another 30 seconds or so until it does move without help or just a tiny nudge.  After flipping put the honey in the pan, it will instantly melt and start to bubble, swirl the salmon around in the pan so it is coated in the honey.  Cook on both sides for about 2 to 3 minutes each.  Turn the filet over once to quickly brown the both sides in the honey.  Remove from the heat and let rest for about 5 minutes on a clean and dry cutting board or plate (this will help prevent the greens from wilting when the hot salmon goes on).   When ready, add the fish to the salad and sprinkle with the seeds and dried goji berries.

Ingredients:

1 ready to bake pie crust (we used one of the rolls from the two in a box of Pillsbury pie crust).
1.3 pounds of lean ground beef
½ small onion
1 cup whipped or mashed potato
season to taste

Directions:

Preheat the oven to package recommendations, then roll out the pie crust and fit to the plate.   Prebake for about 12 minutes or until just before it starts to turn golden brown.  While that is baking, cook and scramble the meet in a pan with the chopped onion.  We went with slightly larger pieces of the onion to give a little more texture to the dish.  Cook fully through and then strain off extra fat then mix in the cup of whipped potato, this will help hold the meat together.  When the crust is ready fill it with the meat, lightly press down all the way around and then return to the oven for an additional 10 to 14 minutes.  This was delicious with fresh tomatoes and baby salad greens.

Thinking about the Simple Start Plan from Weight Watchers? #SimpleStart

So, if you are here, you’re probably thinking about the Simple Start plan from Weight Watchers.  I was given a free one month subscription to Weight Watchers to try their Simple Start plan and write about my experience. Though I was compensated for my time and commitment, all views, positive and negative, are my own. I have just finished 2 weeks on the Simple Start program and what do I think?

It’s simple.

It’s easy.

It’s convenient,

It’s REAL food.  You can indulge.  You like salty? Have some salty.  You like sweet?  Indulge (a little).

It’s worth trying.  And here’s why.

It’s not different food than you normally buy.  Or maybe it is- maybe it’s some healthier options.  But it’s “regular” grocery items.  It’s not different, more expensive or specialty.  So it’s accessible to anyone.  There’s even a whole 2 weeks of menu plan ideas and choices so you can really do almost nothing at all for planning.  Choose your meals, buy the ingredients, and voila.  Plan.  There’s even indulgences built in.

I’m happy with it.  I’d do it again.  But instead, I think I’ll continue with Weight Watchers for a while. I haven’t yet tried any of the Weight Watchers Smoothies but I intend to pop in to a center and grab some because I think I’ll like them. I’m feeling super motivated because I did so well for the Simple Start 2 weeks….and I’m feeling a bit more energetic and positive about the direction I’m heading in.

That’s a win in my book.

The ease of this program and what comes with it really gives you tools to jump start the program- 2 easy weeks- 14 days- it was worth a shot, just like I said. Now I’m looking forward to the next 2 weeks (seriously, I’m not even dreading them)!

In our recipe, we used shredded apple pieces and did this pretty quickly with a food processor. If you like a little apple crunch, the apples could be diced up instead. Streusel Topping

Preheat oven to 350 degrees.
Filling – Mix together in a small bowl and set aside – cream cheese, 2 tbsp of brown sugar and 2 tbsp of the beaten egg.
Directions
Mix together the remaining brown sugar, flour, cinnamon, salt and baking powder until well blended. Add in the vegetable oil, applesauce, vanilla and remaining egg. Mix all together.
Mix in the shredded or diced apple with a spoon.
Fill muffin cups about half full (makes about 15 cups), top each muffin with the cream cheese mixture and then spoon the remaining batter to fill each muffin cup about 2/3 full.
Mix together the streusel ingredients and sprinkle over the batter.
Bake for about 25 minutes, or until toothpick comes out clean. Cool and then remove from pan. Makes 24 muffins

 

These muffins are 3 Weight Watchers Points each.
