Gluten Free Pancakes Recipe for Valentine’s Day

This Gluten Free Pancakes recipe is perfect for your gluten free sweetie on Valentine’s Day!

Ingredients:

2 cups rice flour
1/3 cup tapioca flour
2/3 cup potato starch
1/2 cup dry buttermilk powder
2 teaspoons sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon xanthan gum
4 eggs
1/4 coconut oil (plus coconut oil for greasing the pan or skillet).
3.5 cups water

Dash of quality food coloring

Directions:

Add all of the dry ingredients to a large mixing bowl and carefully dry whisk together.  Make sure all of the lumps are removed and the powders, sugar and flours are thoroughly combined. In a separate bowl whisk together the eggs until fluffy, add the rest of the wet ingredients to the eggs and mix until combined.  Slowly add the wet ingredients to the dry and whisk until the lumps are all gone.  Add in a dash of food coloring, we  prefer powdered food colorings, just double check the labels!

Heat the skillet or pan to medium, add a bit of coconut oil and pour batter onto the skillet.   When small bubbles have formed and then popped its time to flip (check before that by lifting with a spatula for a quick peek to ensure the coloring is right).   Serve immediately with fresh berries or pure maple syrup.  Makes about 15 pancakes depending on the size you make them.

Here’s a fun and sweet way to make breakfast- Ombre Pancakes for Valentine’s Day!

Ombre Pink Pancakes (2)
Ingredients:

1 box or package of your favorite pancake mix (for best color adding results, a lighter mix (not wheat) will work best.
Many pancake mixes ask for different ingredients so take a quick look before heading to the store.  These are usually basics that many people already have on hand.

Baker’s food coloring in three different coordinating shades.  Or one quality food coloring that can be used at different strengths.   We used 3 different ones by Wilton.

Prepare the pancake batter as directed then split into three (or however many different colors you would like) even parts.  Start by mixing in just a little bit of food coloring into one of the bowls to see the strength of the color.  Judge from there if you want to add more or less to determine if this will be your light, medium or dark batter.  Do the same for the additional bowls of batter.   Follow package instructions for cooking the pancakes the way you normally would. Try for uniform sizes when making them, using an ice cream scooper will help with this. Stack up and enjoy the love!

1 Cup Shredded Boneless Skinless Chicken Breasts

½ Teaspoon Garlic Powder

½ Teaspoon Onion Powder

½ Teaspoon Sage

1 Teaspoon Parsley Flakes

¼ Teaspoon Black Pepper

Directions:

Preheat oven to 350 degrees

Whether you have been recently diagnosed with Celiac disease, gluten intolerance or just want to make the switch to Gluten Free you will need to makeover your kitchen to make the lifestyle change a successful one.  Gluten is a protein that is found in-wheat, barley, and rye, many people’s bodies cannot process it properly and it presents as many different symptoms.  SOME of the  symptoms that you can  experience with a Gluten allergy or intolerance are; stomach pain and cramping, anemia, regular bouts of diarrhea and then constipation, brittle nails, fatigue, and headaches- there are many more symptoms. Some foods are obvious as having gluten like; cake mix, flour, crackers, etc.

The first step is to purge your kitchen of box mixes, condiments, or breads that will sabotage all your efforts.  If you have unopened packages these would be a great donation to a local food bank.  The remaining packages can just be tossed out.   If you cannot find definitive info on whether your item contains gluten its best to follow the old adage- “When in doubt, throw it out!” Many processed foods that you wouldn’t think have gluten do in fact contain it-  canned soups, sausage (fillers), and even soy sauce and other seasonings and condiments can contain gluten. Malt vinegar and malt flavorings contain gluten.

Stock your kitchen well with unprocessed foods. Meat, poultry, fish,  fresh fruit and veggies should be the foundation of your new gluten free diet. These do not contain gluten and are safe bets for your meals.  The majority of your food intake should be these fresh, whole foods.  This is a benefit to your for many reasons beyond being gluten free. Try to use only fresh herbs, salt and pepper as seasonings for your meat and vegetables. Shop more often to keep fresh foods fresh and not end up with waste. Frozen fruits and vegetables are a good choice as well, just avoid the ones already packaged in sauces.

Wait awhile to introduce gluten-free labeled packaged foods, add them in slowly, preferably one at a time so you can monitor your bodies reaction to them.  Some people still experience symptoms even with these packaged foods labeled as gluten-free.  Use them sparingly and try to stick to your whole foods. Even seasoning mixes can contain gluten as a byproduct. As gluten free eating has become more and more common, companies have stepped up to meet the need and there are a ton of gluten free products out there on grocery store shelves to help make your transition easier- from flour substitutes, to pancake mix, and even pre-made snacks.

Slow Cooker Cinnamon Sugar Pecans Recipe

I love fresh roasted nuts but my favorites are definitely these Slow Cooker Cinnamon Sugar Pecans.  Simple to toss the ingredients together in the slow cooker and forget about for a couple of hours then come back and find some of the best snacks ever made.  These are absolutely perfect for gift giving this holiday season or Valentine’s Day- or just because!  Grab your favorite nuts on sale and create a large batch to share with all of your friends and family.

Slow Cooker Cinnamon Sugar Pecans

SLOW COOKER CINNAMON SUGAR PECANS

1 Pound Pecan Halves

¼ Cup Packed Light Brown Sugar

½ Stick Butter (cut into small pieces)

1 Teaspoon Cinnamon

½ Teaspoon Ginger

½ Teaspoon Nutmeg

Slow Cooker Cinnamon Sugar Pecans Prep

  • In a small bowl mix together brown sugar, cinnamon, ginger and nutmeg until well blended.
  • Pour pecans into slow cooker, add in dry ingredients and butter and stir until well mixed.
  • Cook on medium heat setting for 1 hour. (Low setting for 2 hours)
  • Remove from slow cooker and spread on wax paper or aluminum foil to cool and set.
  • They will harden some as the butter and sugar combination has created a caramel.
  • Break apart and store in an airtight container until snack time or time to share with friends.

Chocolate Covered Cherries Cheescake Bites Recipe

Chocolate Covered Cherry Cheesecake Bites

CHOCOLATE COVERED CHERRIES CHEESECAKE BITES

FILLING:

4 8oz Packages Cream Cheese (Softened)

½ Cup Sour Cream

¼ Cup Maraschino Cherries Diced

1 Cup Granulated Sugar

1 Teaspoon Vanilla Extract

3 Large Eggs

1 Teaspoon Salt

1 Tablespoon Flour

  • In large bowl cream cheese, sour cream and eggs until smooth.
  • Mix in sugar, vanilla, salt and flour.
  • Stir in maraschino cherries and set aside.

GRAHAM CRACKER CRUST:

2 Cups Graham Cracker Crumbs

1 Tablespoon Sugar

½ Cup Butter Melted

  • In bottom of 9×13 dish mix together graham cracker crumbs, sugar and butter and press into bottom forming crust.
  • Pour cheesecake mixture over graham cracker crust and bake at 400 degrees for 45 minutes or until set in center.
  • Remove from oven and allow the cheesecake to cool.
  • Once cool, cover tightly with plastic wrap and place in freezer overnight.

CHOOCLATE DIP:

4 Squares Chocolate Bark

  • In medium microwave safe bowl melt chocolate bark on medium high heat for 30 seconds at a time until melted and easy to stir.
  • Cut frozen cheesecake into 2” squares.  Pierce each spear with a skewer and pour melted chocolate over cheesecake turning until all is coated.
  • Place dipped cheesecake on wax paper and sprinkle with sprinkles, colored sugar or cherry bits.
  • Allow to harden.
  • Remove skewer.
  • Serve or refrigerate until ready to eat.

Although this treat requires a few extra steps to create they are well worth your time to serve up a beautiful and delicious chocolate covered cherry cheesecake bite at your next dinner party or event.

 

 

 

 

 

Miniature Baked Eggs Recipe

These miniature baked eggs are a unique way to serve breakfast to friends or family without much effort. Most large eggs will not fit miniature muffin tins. If you cannot find small eggs, you can use large eggs and omit some of the egg whites from each egg. You’ll probably be seeing more and more egg- related posts from me here because we’ve decided that we’re going to go ahead and adopt some chickens…get chickens?  Regardless, we’ll have chickens, and therefore eggs….and… egg recipes. Here are some super simple and adorable miniature baked eggs!

White chocolate strawberries dipped in crumbled soft peppermint candy

Here’s a sweet little something that’s easy to make but will send their tastebuds soaring- White Chocolate Strawberries dipped in crumbled soft peppermint candy!  Perhaps a little Valentine’s Day surprise?

Ingredients:

1 pound of fresh strawberries, ripe but not overly so
8 ounces of quality white chocolate
1 cup rough chopped raw coconut flakes (unsweetened)

Peppermint Candy (can be made a few days ahead of time and stored in the refrigerator).
3 ¾ cups powdered sugar
¼ to ½ teaspoon pure peppermint extract (depending on how strong you would like the flavor to be).
4 ounces of softened cream cheese

Directions:

Thoroughly wash and dry your strawberries. To be certain they were dry I used a paper towel on each berry, including the green tops before dipping.  You will want them to be at room temperature before dipping.

While they are drying put together the peppermint candy.  In an electric mixer to combine the cream cheese and powdered sugar.  (If your cream cheese is still a bit too chilled then the heat of your hands will help soften and combine everything easier).  Slowly add the powdered sugar to your cream cheese, we did about ½ to 1 cup at a time, make sure it was fully incorporated and then added more.  You’ll be looking for a consistency that is moldable but not sticky.  Once fully combined you’ll add the peppermint extract, again, mix or knead thoroughly.   If storing for a few day wrap tightly in plastic and store in the fridge.  If using right away, cover with a damp cloth until ready to dip the strawberries. You’ll want to crumble the peppermint ‘cream’ into smaller pieces that will be easy to dip into.

Melt your chocolate according to the package instructions.  Line a large tray with wax paper before starting.  With everything is out you will want to move quickly to ensure you’re able to add the peppermint before the chocolate starts to set.  (The chocolate will harden faster than you might expect-in only a few minutes).  After dipping carefully place each strawberry on the wax paper lined tray with enough space that they will not touch.  Cover tightly and put back in the refrigerator to fully set.   They should be fine to be out for a couple hours during a party, keep in mind they are done with cream cheese, so keep chilled and covered as much as possible.   Best when enjoyed the same day.

  • ¼ to ½ teaspoon pure peppermint extract (depending on how strong you would like the flavor to be).
  • 4 ounces of softened cream cheese
Instructions
  1. Thoroughly wash and dry your strawberries. To be certain they were dry I used a paper towel on each berry, including the green tops before dipping. You will want them to be at room temperature before dipping.
  2. While they are drying put together the peppermint candy. In an electric mixer to combine the cream cheese and powdered sugar. (If your cream cheese is still a bit too chilled then the heat of your hands will help soften and combine everything easier). Slowly add the powdered sugar to your cream cheese, we did about ½ to 1 cup at a time, make sure it was fully incorporated and then added more. You’ll be looking for a consistency that is moldable but not sticky. Once fully combined you’ll add the peppermint extract, again, mix or knead thoroughly. If storing for a few day wrap tightly in plastic and store in the fridge. If using right away, cover with a damp cloth until ready to dip the strawberries. You’ll want to crumble the peppermint ‘cream’ into smaller pieces that will be easy to dip into.
  3. Melt your chocolate according to the package instructions. Line a large tray with wax paper before starting. With everything is out you will want to move quickly to ensure you’re able to add the peppermint before the chocolate starts to set. (The chocolate will harden faster than you might expect-in only a few minutes). After dipping carefully place each strawberry on the wax paper lined tray with enough space that they will not touch. Cover tightly and put back in the refrigerator to fully set. They should be fine to be out for a couple hours during a party, keep in mind they are done with cream cheese, so keep chilled and covered as much as possible. Best when enjoyed the same day.
