Easy Red Velvet Fudge for Valentine’s Day

Ingredients:

  • 16 buttercream frosting – the store bough kind works perfect
  • 1 package Wilton Red Velvet Candy Melts
  • parchment paper
  • 11″ x 7″ baking sheet

Red Velvet Valentine FudgeInstructions:

Combine the frosting and candy melts in a microwave safe bowl.  Microwave on high for 2-3 minutes, stopping to stir every 30 seconds.

Peanuts Valentine’s Day

It’s almost Valentine’s Day, and I can’t think of any better way to celebrate than with Peanuts—where Sally loves Linus, Charlie Brown loves his Little Red-Haired Girl, and everyone loves Snoopy!   • OLD FASHIONED CHOCOLATE CUPCAKES
  • Yields one 9”cake or 16-18 Cupcakes
  • INGREDIENTS:
  • Flour3 Cups
  • Sugar3 Cups
  • Salt1 Tbsp
  • Baking Soda1 Tbsp & 1 Tsp
  • Water (Boiling)½ Cup
  • CocoaPowder½ Cup
  • Buttermilk½ cups
  • Vegetable Oil1 Cup
  • Eggs3
  • Vanilla1 Tbsp
  • INSTRUCTIONS:
  • Combine the buttermilk, oil, eggs and vanilla together with a whisk. Place the flour, sugar, salt, and soda together in a mixing bowl. Using the whip attachment on an electric mixer, add the liquid ingredients that were previously whisked, mix only until smooth. Boil the water and add it to the cocoa powder and whisk until smooth. Add the cocoa mixture to the previous batter. Let the batter sit 10 minutes before filling pans. Fill 2-8" cake pans that have been greased and floured. Fill pans half full. Bake in oven at 350o for approximately 45 minutes. A knife inserted in the center will come out clean. Cool cakes before using.
  • OLD FASHIONED CHOCOLATE CAKE FROSTING
  • INGREDIENTS:
  • Butter1 Cup
  • Semi Sweet Chocolate1 Cup
  • Powder Sugar, sifted 2 Cups
  • Sour Cream1 Cup
Instructions
  1. Melt the butter and keep it hot.
  2. Melt the chocolate over a water bath.
  3. Sift the powdered sugar.
  4. Combine the butter and melted chocolate in a mixing bowl.
  5. Use a whisk attachment to combine the two.
  6. Add the powdered sugar to the chocolate mixture in three stages.
  7. Scrape the bowl to avoid sugar lumps.
  8. When smooth add the sour cream.
  9. Let stand for 1 hour until it thickens.
  10. Divide the old-fashioned cake into layers.
  11. Fill greased and floured 8 inch cake pans ½ full
  12. Bake for 45 minutes
  13. Alternate the frosting for each layer.
  14. Makes 1 8" cake.

 

Kids in The Kitchen- Mini Cauliflower Crust Pizzas

If you are looking to “sneak” more veggies into your child’s diet one great way to do it is to let them be a part of the preparation. Choosing, chopping, stirring-all will serve to get your child more interested in eating. I personally love cauliflower but I don’t think you have to like it to enjoy this pizza crust, while the flavor is vaguely there it is not as overwhelming as say -steamed.  While this cauliflower crust does not taste like, nor have the texture of  a traditional flour crust it is delicious in its own uniqueness -My 3 year old who is frustratingly picky declared this “The best pizza ever!”  This recipe gives them some practice in washing vegetables, chopping, stirring, and spreading toppings as well.

Mini Cauliflower Crust Pizzas

Ingredients:

1 head cauliflower

1 egg

½  cup grated Parmesan cheese

½ tsp. Basil

½ tsp. oregano

½ tsp. garlic powder

Toppings: sauce, cheese, fresh veggies, pepperoni…

Directions:

Preheat oven to 250 f

Line a baking sheet with parchment paper or a silpat mat.

Cut off stem and greenery from cauliflower, rough chop if desired.

Move ground cauliflower to glass bowl and cover with plastic wrap.

Microwave for 3 minutes.

Allow to cool completely.

Transfer to center of a clean kitchen towel, twist, squeeze out all the liquid you can.

Place back in bowl and add Parmesan, egg, basil, oregano, and garlic powder-stir well.

Divide into 4 small piles on parchment lined mat, press firmly to ¼” or thinner.

Bake for 25-30 minutes until edges begin to brown.

Remove from oven, top with your favorite add ons-cheese, sauce, etc..

If you love the bright, fresh, citrus flavor of red grapefruit this easy to throw together spinach salad with Grapefruit Vinaigrette will delight your taste buds.  The dressing pulls together with just 4 ingredients. Ingredients

2 cups fresh Spinach

1 TBSP Feta cheese

Fruit + Juice (separate) from 1 Dole Red Grapefruit Sunrise cup (about 1/4 cup- and it’s 100% juice!)

1 Tbsp. apple cider vinegar

2 tsp. honey (We always go for local, good for allergies)

Toss spinach, feta and grapefruit chunks in bowl.  Whisk together juice, honey, cider vinegar and pepper well, store unused dressing in an airtight container in the refrigerator for up to a week.

1 bag of chocolate and caramel hearts

Valentine sprinkles

9×13 baking sheet lined with foil or parchment paper

 

Directions –

#1. Preheat the oven to 250 degrees

#2. Open each chocolate/caramel heart and discard the wrappers. Feel free to eat 1 or 2. 😉

#3. Line the baking sheet with the mini pretzel twists and top each pretzel with a heart.

Slow Cooker Baked Potato Soup

Ward off the winter chill by fueling up with a big bowl of comfort food- this Slow Cooker Baked Potato Soup  is perfect for just that. Rich, filling, and hearty it is a complete meal loaded into one bowl. Chunks of potato, rich bacon, and creamy cheese mix to create the flavor of loaded baked potatoes that are over the top good.

Slow Cooker Baked Potato Soup

Ingredients:

3 lbs. red potatoes

1/2 lb. bacon

1 medium onion

4 ½ cups chicken broth

1 ½ cup milk

2 cups shredded cheddar cheese

¾ cup sour cream

½ cup butter

2 T

3 cloves garlic,crushed

salt and pepper to taste

 

Directions:

Dice onions into small pieces.

Place butter, garlic, and onions in the bottom of slow cooker, turned on high,  while you prep the rest. This will give them a nice caramelization

You can use precooked bacon or any method of preparing your bacon that you prefer. If you have not tried baking it  in the oven yet-you should. Less mess, evenly cooked, and you can work on other stuff without worrying about it.  To cook your bacon in the oven- Spread bacon out onto a baking sheet then place in oven, bake for 18-20 minutes or until bacon is to your desired doneness.

Whisk flour into onion mixture in slow  cooker.

Cut potatoes into large bite sized pieces.

Chop bacon. Reserve some to garnish soup.

Add potatoes, broth, bacon, 1 1/2 cups cheddar cheese, salt and pepper to crockpot.

Reduce heat to low and cook for 7-8 hours, or 4 hours on high.

Mix in milk and sour cream at the end of the cook time

If desired use a hand/stick blender (immersion blender) to chop up your potatoes and create a smoother soup. You could also use  a potato masher.

Healthy Homemade Chicken Nuggets

Healthy and delicious REAL chicken nuggets kids love are only 20 minutes away with this newest installment of Kids In The Kitchen series.

My kids, like 98% of the world love chicken nuggets. Sometimes it’s all they want to eat, you know besides candy.  I am not a fan of fast food or the processed bag nuggets so I needed to make my own version that first- was healthy and missing all the unreadable ingredients that the other versions contain. Secondly, it needed to taste good because my kids don’t really care all that much if they eat partially hydrogenated soy bean oil or not, but they do care if it tastes great.   At first I was hesitant to let my little one touch raw chicken but I figured it made a great lesson in kitchen safety- be sure they wash hands very well before and after handing chicken.

Ingredients:
3 large. boneless, skinless breasts
½ cup flour
1 cup Italian bread crumbs
⅓ cup grated Parmesan cheese
1 tsp. paprika
½ tsp. garlic powder
1 tsp.pepper
2 eggs
Directions:
Preheat oven to 350°
Place flour in a gallon ziplock bag.
In a separate gallon bag combine; Italian breadcrumbs, Parmesan cheese, paprika, garlic powder, and pepper.
Whisk eggs into a shallow dish.

Cut chicken breasts into 1”x 1” pieces.

Repeat in small batches until all chicken is floured.
Dip each piece of chicken in egg wash to coat.

Avocado Crab Dip

A few weeks ago we did a traditional crab dip.  I promised a healthier version for you- swapping the mayo for avocado makes for a whole new dimension of flavor for the dip… perfect for your Superbowl parties (Go Pats!!)avocado-crab-dipAvocado Crab Dip

Ingredients

2 Avocados, mashed

2 6 oz cans of crab

2-3 tsp. of Mrs. Dash Extra Spicy Seasoning Blend

Directions –

#1. Combine all ingredients in a small bowl and mix well. Taste. If you like it extra spicy add a bit more of the Mrs. Dash Extra Spicy Seasoning Blend. I LOVE this stuff!!

#2. Cover and refrigerate for 30 minutes.

So easy and the avocado is a fantastic substitute for mayo if you’re watching what you eat. Healthy fat is good fat!

  1. #1. Combine all ingredients in a small bowl and mix well. Taste. If you like it extra spicy add a bit more of the Mrs. Dash Extra Spicy Seasoning Blend. I LOVE this stuff!!

Strawberry Cake Mix Cookies

Cake mix recipes make for a lot of quick and simple treats.  They take almost no time to prep and there’s really no limit to what you can do with them- add-ins, colors, flavors… frosted, not frosted… These Strawberry Cake Mix Cookies with White Chocolate Chips are a fun reminder of summer but also perfect for a Valentine’s Day treat!

Ingredients

1 box of Strawberry cake mix, any brand

1 egg

1/3 C. vegetable oil

¾ C. white chocolate chips

Wilton cookie scoop

Directions –

#1. Preheat your oven to 350 degrees and line a baking sheet with foil or parchment paper.

#2. Combine the cake mix, oil and egg stirring well. If the dough is too thick add a little bit more oil.

#3. Fold in the white chocolate chips.

#4. Use the cookie scoop to scoop the dough and roll into even balls using your hands. Place 2-3” a part on the baking sheet.

#5. Bake 7-8 minutes. Do not over bake. These cookies are best a little on the chewy side. :)

Better Breakfast Ideas for the New Year

It’s a new year and we’ve been trying to find new ideas for breakfast. Mornings are always busy with trying to get kids around and ready for school so having quick, fun, and yummy ideas for breakfast is really important in our house. So when we were asked to try the new Aussie Style Yogurt from Yulu we couldn’t wait.

Yulu is Aussie inspired but is made in the USA. It’s extra creamy, double-smoothed, and double-delicious. Unlike Greek yogurt that is often considered an acquired taste, we loved Yulu right away. (I’m still working on acquiring that love for Greek) It has fresh flavors and real fruit! We also love the texture.

My current favorite breakfast is a Yulu (Vanilla) with some Grape Nuts sprinkled on top and a side of frozen blueberries (from our garden). So good, so filling, and so good FOR me!! It gives me the energy I need to go walk our block (which is 2.7 miles of hills).

I added Yulu into our favorite breakfast parfaits with fresh fruit and granola. We all loved it. It’s not only a delicious way to serve yogurt but it’s a pretty too! Try serving your yogurt parfaits in pretty glass dishes.

Another breakfast favorite in my house is waffles but we’ve been trying to get away from waffles and pancakes that are smothered in syrup and sugar. I decided to try topping our waffles with Yulu Aussie Style Yogurt and fresh berries. This was delicious! The extra creamy yogurt added great texture to the waffles and no one missed the sugary syrup we would have with them. I love that this is more nourishing than other options for topping waffles.

On those really busy mornings when I am out the door running I like to take a smoothie with me. I know the Yulu Aussie Style Yogurt will be perfect blended with my favorite fruits to take on the go.
