Grace Thomas inspired Ratatouille Recipe

Today’ s ratatouille dish is inspired by  American Girl 2015 Girl of The Year- Grace Thomas. Grace is an adorable brunette doll with a side bang, beautiful blue eyes and freckles.  She has a passion for baking, dreams of opening her own bakery, gets an amazing opportunity to visit France and she is available now until the end of the year. I am so excited to add her to our American Girl doll collection.  With her arrival we were inspired to make a simple variation of a French dish in her honor- Ratatouille, which is basically a vegetable stew.  Kids will take more of an interest in vegetables that they have helped prepare, and if you have a little girl who is mad about Grace use it to your advantage and play up the French aspect. I think Grace  would approve of this healthy and flavorful French dish!

This recipe builds cutting skills and I pre-scored the soft veggies for her to try and keep them relatively the same thickness. The knife and cutting board that came with our Curious Chef 5 Piece Pizza Kit  is perfect for soft veggies. Safe,  comfortable,and manageable for little hands it is a great addition to our kitchen tools. Demonstrate to your child how to hold the vegetables opposite of where they are cutting with fingers tucked in, careful movements with knife.

 Here is our inspired by Grace Thomas, her love of cooking and her time in Paris, Ratatouille recipe!

Kid-Friendly Ratatouille Recipe

Ingredients:

1 eggplant

1 zucchini

1 yellow squash

1 sweet onion

14.5 oz. can diced tomatoes

2 Tbsp. +1 Tbsp.. grated Parmesan

1 Tbsp. olive oil

1 tsp. dried basil

2 cloves garlic, crushed

1 tsp. pepper

Go ahead and pull out everything you are going to need down to spices before starting so you don’t have to walk away from little during prep to grab something. A handy basket works to keep everything together and out of the way.

 

Directions:

Preheat oven to 350°

Coat an 11″x 7″ pan with nonstick cooking spray.

Cut eggplant, zucchini, squash, and onion into thin slices.

Toss all vegetables, 2 Tbsp. Parmesan, olive oil , basil, garlic and pepper together in a large bowl  until well mixed.

Pour mixture into pan.

Top with additional 1 Tbsp. Parmesan cheese.

Bake for 20 minutes.

Kid Friendly Overnight Oatmeal

Get those Kids in The Kitchen with this simple AND delicious recipe. Only 4 ingredients make this Kid Friendly Overnight Oatmeal a snap!  This one is a great one for filling those bellies before a busy day on the slopes, building snowmen, etc. or just playing outside after a snowfall!  Who doesn’t love  chocolate and marshmallow together in the wintertime? I know we all do!

1/2 cup unsweetened cocoa powder

1 tsp. baking powder

1/2 tsp. salt

1/2 cup applesauce

1/3 cup AllWhites Egg Whites

2 Tbsp. canola oil

2 squares (1 oz. each)semi sweet baking chocolate, melted

1 tsp. vanilla

1/4 cup miniature chocolate chips


Directions

Heat oven to 350°F.

Spray 8-inch square baking pan with nonstick cooking spray.

Stir together flour, sugar, brown sugar, cocoa powder, baking powder and salt until well mixed. Stir in applesauce, AllWhites, canola oil, melted baking chocolate and vanilla just until well mixed; careful not to over stir.

Spread brownie mixture into prepared pan.

Sprinkle with miniature chocolate chips.

Bake 20 to 24 minutes or until toothpick inserted in center comes out clean. Do not over bake.

Ingredients

1 cup Almond Milk

1 cup frozen or *fresh strawberries

1 tbsp chia seeds

½ passion fruit

1 tbsp honey or agave

*add 2-3 ice cubes if using fresh strawberries

 Directions

Place all ingredients inside a high powered blender (like a Ninja or Vitamix) and blend at half speed for 30 seconds or until all ingredients have been blended.  If blending with ice cubes turn off after 30 seconds, wait 10 seconds and blend again to ensure all pieces of ice have been mixed thoroughly.

Homemade Cereal Bars- Kids in The Kitchen

Welcome to the first week of This Mama Loves Kids in The Kitchen! I am delighted that you are following along with our series and  hope that you will enjoy letting your little one in the kitchen to create healthy and delicious recipes as much as I did.  This week we are replacing store bought cereal bars with a simple recipe that contains whole grains and minimal, natural sugars.  The kitchen skills for the recipe will focus mostly on teaching your little one’s to stir gently-keeping all ingredients in the bowl and using a rolling pin.  My almost 4 year old was tickled to have her own rolling pin that came in this set. If your child is a little older you can begin allowing them to measure out the ingredients themselves, for my little one I went ahead and gathered all the ingredients and measured them out, simply instructing her what to add and when.  Don’t forget to print out the FREE 5×7 recipe card’s  we are providing for each week you so you can easily make them again and again.  Put them in a small album to create a recipe book, tuck in photo’s of your child cooking and you will have a lovely keepsake!

Ingredients:

1 cup whole wheat flour

1 cup quick cook oats

1/8 teaspoon baking soda

 1 tsp. vanilla extract

1/8 teaspoon salt

2 Tbsp. plain Greek yogurt

1/4 cup coconut oil, melted

2 Tbsp. pure maple syrup

1/3 cup all fruit spread

Directions:

Preheat oven to 350°

Spray baking sheet with nonstick cooking spray.

Combine flour, oats, baking soda, and salt.

In a separate bowl combine yogurt, coconut oil, vanilla, and maple syrup.

Combine wet and dry ingredients. Demonstrate how to stir  while scraping the sides of your bowl to combine it well- keeping as much INSIDE the bowl as possible. You can see here we got a little excited, after a few gentle reminders and even my preschooler was a pro.

Dust counter well with flour.

Roll dough into a rectangle of  ¼” thickness. Guide your child’s hands to show them how to apply pressure  and roll back and forth to flatten and even out dough. Let them give it a try on their own as well.

Cut strips 2” wide and then in half, making 16 strips.

Spoon 2 tsp. of fruit spread in the center of half the strips.

Top fruit spread with the other half of the strips.

Press all around the edges with a fork to seal.

Bake for 15-18 minutes until edges are golden brown.

Cool and store in an airtight container.

½ Cup Sweetened Coconut, chopped

1/3 Cup Pecans, finely chopped

1 teas. Cinnamon

2 teas. Vanilla

1/3 Cup Oil

In a large bowl mash the Bananas with a fork.

Add in the remaining ingredients and thoroughly combine

Take a rounded tablespoon full and roll into a ball, place on an ungreased cookie sheet and flatten into a circle.

Bake at 350˚ for 10 minutes, rotate the cookie sheets and cook until browned on the bottom and springy on top, an additional 8-10 minutes.

Apple Cobbler 150 Calorie Snack Hack

Homemade Granola

To make homemade granola you will need:

¼ cup quick cook oats
2 tsp. honey
1 tsp. coconut oil

Preheat oven to 300 degrees

Mix all ingredients well.

Spread on a baking sheet and bake for 12-15 minutes, stirring once, until golden brown.

Allow to cool and store unused granola in an airtight container.

For our less than 150 calorie snack hack :

Divide 1 container of Apple Pie flavored Yoplait Greek 100 Yogurt between 6 mini muffin cups.

Place in freezer for 1-2 hours until solid.

Eat right away or place yogurt treats in a freezer safe bag and keep frozen until ready to snack.

Cooking with Kids- Kids in The Kitchen

I am so excited to bring you this new, ongoing series Kids in The Kitchen. I have a passion for  cooking and an even greater passion for my kids so it seemed natural to bring the two together.  There are so many reasons letting kids in the kitchen to help is a great idea,especially when they are young. Here are a few of my favorite reasons:

  • Family or one on one bonding time
  • Learning math and science skills (measuring, scientific reactions like bread rising,etc)
  • It’s a great alternative to screen time
  • Giving them some control over food choices and preparation makes them much more likely to try new and healthy foods.
  • Learn kitchen safety early on.
  • Kids that help in the kitchen at  young age are more willing and able to help cook and clean the kitchen later on.
  • It’s fun!

 

You do not have to run right out and buy everything in their size ( it is tempting, believe me I know-the struggle is real, moms) You can use whatever you have on hand but a few items will make it more fun and a bit easier to have tools that fit their little hands.  I grabbed a couple basic items myself- a cutting board, a knife (a plastic knife that will only cut bread, lettuce, and similar items) and other items in these kits.  My almost 4 year old LOVES to help me in the kitchen, and I like that most of these products are unisex, so it was worth it to me to invest in these 3 sets.

Start out small to get them interested and excited and add to their collection as you go.I bought a cute simple basket to keep it all in the pantry- giving it a home will encourage them to take care of the items and put them away for the next time ( I hope!)

Cranberry BBQ Turkey Meatballs

I am forever looking up recipes on my phone when cooking but the screen is never quite big enough to show enough of the recipe and I can never find a good way to prop the phone while I cook.  This week while making Cranberry BBQ Turkey Meatballs for a get together I used our new Nextbook 10.1″ 2-in-1 instead of my phone.  This made things so much easier!

Cranberry BBQ Turkey Meatballs

Ingredients:

  • 2 lbs ground turkey
  • 1 cup gluten free bread crumbs – I use cornbread crumbs
  • 1 tsp garlic paste
  • 2 tsp Italian herb paste
  • salt and pepper to taste
  • 1 egg

for the sauce

  • 1 can jellied cranberries
  • 1 jar of chili sauce

Preheat the oven to 350 degrees.

Combine the turkey and seasonings in a large bowl, mix well.

Whisk the egg and add to the turkey.  Combine the egg and burger well.

Add the bread crumbs to the turkey and knead until well blended.

Form burger mixture into golf ball size meatballs and place on a baking rack over a cookie sheet.  This will keep your meatballs from becoming greasy.

Bake in preheated oven for 30 minutes, flipping halfway through.

While the meatballs are baking place the cranberries in a sauce pan over medium heat.  Stir often until they are dissolved.

When the cranberries are dissolved add the chili sauce.  Reduce heat to low and stir often.

Remove the meatballs from the oven when the internal temp has reached at least 165 degrees.  Transfer the meatballs to a crock pot and cover with the cranberry BBQ sauce.  Set crock pot to lowest setting and serve!

It’s playoff season, friends. With that comes parties, and snacks, tailgating and lots and lots of appetizers. If you want simple and quick, but also delicious, check out this SUPER simple and quick 3 ingredient crab dip. No one ever has to know that you made it in under 5 minutes unless you tell them (and WHY would you??)

2-3 tsp. of Mrs. Dash Extra Spicy Seasoning Blend
