Slow Cooker Salisbury Steak

This dish is a delicious stand by that has been a family favorite for years with a bit of an update. Well, maybe YOU have already been making it this way and I am new to the bandwagon but hey, I love my slow cooker! They turn out tender, delicious, and full of flavor – like mom used to make!

No doubt this easy slow cooker recipe will become a favorite on your menu plan, even the kids simply push the onions aside and devour the Salisbury steaks- Hubby also attests that they make delicious leftovers the next day as a sandwich filler.

Slow Cooker Salisbury Steak & Onions

Ingredients:

2 lbs. ground beef

1 medium onion, sliced

1/2 cup italian breadcrumbs

1 packet dry onion soup mix

1 Tbsp. worcesteshire

3/4 cup water

1/4 cup milk

10 oz. can beef gravy

1 tsp. black pepper

1 tsp. garlic salt

2 tsp. oil

 

Directions: 

Turn slow cooker onto low, add oil and sliced onions.

In a large bowl mix ground beef, bread crumbs, worcesteshire, milk, pepper, and garlic salt until well combined.

Form large oval patties, pressing together firmly, then you can go one of two ways with these- brown them in a couple tsps. of oil in a pan over medium on both sides before putting in slow cooker ( I reccomend this if you have the time) or you can place them directly in the slow cooker on top of onions.

Pour water and canned gravy over the top of patties and onions then replace lid.

Cook on low for 4 to 5 hours. Serve with mashed potatoes or rice for a tasty homecooked meal from your slow cooker.

Crock Pot Macaroni and Cheese Recipe

I was a little skeptical the first time I tried Slow Cooker Macaroni and Cheese, I mean my oven recipe was pretty darn good so why mess with it right?  But still I do love my crock pot and thought that I would give it a try- right around lunchtime I gathered everything up and tossed it in the slow cooker while I went about my day, planning an easy protein to go with it.  When I sliced up thick slabs of mac n cheese we were delighted to find tender noodles,creamy sauce, and loads of flavor! This will definitely be on our dinner rotation, and makes a great side for Sunday night supper. Go ahead and give it a try one night this week for dinner- so easy and tasty your family will beg for it again!

Crock Pot Macaroni and Cheese

Ingredients:

1- 12 oz. box macaroni, uncooked

2 cups shredded cheddar cheese

1 cup shredded colby-jack

1 cup chicken broth

1 1/2 cup milk

1/2 cup sour cream

6 Tbsp. butter

1 1/2 tsp. garlic salt

1 tsp. black pepper

 

Directions:

Coat inside of slow cooker well with non stick spray.

Pour uncooked macaroni into bottom of cooker.

Whisk together, chicken broth, milk, sour cream, pepper, and garlic salt- pour over noodles.

Stir in cheese- reserving about 1/2 cup for later. Top with butter cut into 6 slices.

Cook on low for 2- 3 hours until cheese is melted and creamy, stirring about halfway through cook time.

Ward off the winter chill by fueling up with a big bowl of comfort food- this Slow Cooker Baked Potato Soup  is perfect for just that. Rich, filling, and hearty it is a complete meal loaded into one bowl. Chunks of potato, rich bacon, and creamy cheese mix to create the flavor of loaded baked potatoes that are over the top good.

Slow Cooker Baked Potato Soup

Ingredients:

3 lbs. red potatoes

1/2 lb. bacon

1 medium onion

4 ½ cups chicken broth

1 ½ cup milk

2 cups shredded cheddar cheese

¾ cup sour cream

½ cup butter

2 T

3 cloves garlic,crushed

salt and pepper to taste

 

Directions:

Dice onions into small pieces.

Place butter, garlic, and onions in the bottom of slow cooker, turned on high,  while you prep the rest. This will give them a nice caramelization

You can use precooked bacon or any method of preparing your bacon that you prefer. If you have not tried baking it  in the oven yet-you should. Less mess, evenly cooked, and you can work on other stuff without worrying about it.  To cook your bacon in the oven- Spread bacon out onto a baking sheet then place in oven, bake for 18-20 minutes or until bacon is to your desired doneness.

Whisk flour into onion mixture in slow  cooker.

Cut potatoes into large bite sized pieces.

Chop bacon. Reserve some to garnish soup.

Add potatoes, broth, bacon, 1 1/2 cups cheddar cheese, salt and pepper to crockpot.

Reduce heat to low and cook for 7-8 hours, or 4 hours on high.

Mix in milk and sour cream at the end of the cook time

If desired use a hand/stick blender (immersion blender) to chop up your potatoes and create a smoother soup. You could also use  a potato masher.

Cranberry BBQ Turkey Meatballs

I am forever looking up recipes on my phone when cooking but the screen is never quite big enough to show enough of the recipe and I can never find a good way to prop the phone while I cook.  This week while making Cranberry BBQ Turkey Meatballs for a get together I used our new Nextbook 10.1″ 2-in-1 instead of my phone.  This made things so much easier!

Cranberry BBQ Turkey Meatballs

Ingredients:

  • 2 lbs ground turkey
  • 1 cup gluten free bread crumbs – I use cornbread crumbs
  • 1 tsp garlic paste
  • 2 tsp Italian herb paste
  • salt and pepper to taste
  • 1 egg

for the sauce

  • 1 can jellied cranberries
  • 1 jar of chili sauce

Preheat the oven to 350 degrees.

Combine the turkey and seasonings in a large bowl, mix well.

Whisk the egg and add to the turkey.  Combine the egg and burger well.

Add the bread crumbs to the turkey and knead until well blended.

Form burger mixture into golf ball size meatballs and place on a baking rack over a cookie sheet.  This will keep your meatballs from becoming greasy.

Bake in preheated oven for 30 minutes, flipping halfway through.

While the meatballs are baking place the cranberries in a sauce pan over medium heat.  Stir often until they are dissolved.

When the cranberries are dissolved add the chili sauce.  Reduce heat to low and stir often.

Remove the meatballs from the oven when the internal temp has reached at least 165 degrees.  Transfer the meatballs to a crock pot and cover with the cranberry BBQ sauce.  Set crock pot to lowest setting and serve!

American Heritage Chocolate Recipes #ChocolateHistory

Last week, I had a REALLY fun day down in NYC in Times Square with my friend Julie.  It was a quick trip, but lots of fun and I love to see my blogging pals!

All in all a great day.  Plus, it was full of chocolate.  Specifically, American Heritage Chocolate (a newer favorite) and M&Ms chocolates (a lifelong favorite).  Wednesday marked the arrival of American Heritage Chocolates to the Times Square M&M’S World® store.

It’s kind of crazy to see the American Heritage Chocolates right there amidst the crazy bright M&Ms merchandise, but it totally works.  And without our ancestors having discovered the AWESOME of chocolate in sweets, M&Ms might not even exist.  (Let’s not even think about that).

{easy} Slow Cooker Chicken Breast Recipe

I love using my crock pot.  Slow cooker.  Whatever you want to call it…. it makes things a lot simpler for me, especially with busy schedules like ours. This slow cooker chicken breast recipe is easy and so delicious! Plus, this kind of chicken lends itself well to leftover dishes… which means cooking once and eating twice. My favorite kind of cooking!

{easy} Slow Cooker Chicken

Ingredients

2-3 large bone-in or boneless chicken breasts, either work fine

2 tbs olive oil

seasoning of your choice (I used blackening, we like to keep it simple)

salt & pepper to taste

2 tsp. dried parsley

2 C. water

*2 chicken bouillon cubes

**You could also substitute 2 cups of chicken stock.

Directions –

#1. Turn the slow cooker on low and place the chicken breasts in the bottom. Drizzle the 2 tbs. of olive oil over the breasts (I like to rub it in using my fingers) and then season the chicken to your liking.

#2. Add the water and bouillon cubes (or chicken broth).

#3. Cover and cook on low 5-6 hours or until cooked through. My crockpot took about 5 hours and I had to turn it on low. The chicken was super juicy and very flavorful.

#4. Serve with a side of your choice.

*Makes approximately 4-5 servings

 1 C. Sugar + ½ C. sugar (set aside)

1 C. flour

3 Tbs. unsweetened cocoa powder + 3 Tbs. cocoa powder (set aside)

2 tsp. Baking powder

1 tsp. Salt

3 tbs. butter or margarine, melted

1 tsp. Vanilla

12 oz. chocolate chips

2 C. hot water

Directions –

Using a non-stick spray grease the inside of your crockpot. I’d even recommend using one of those disposable crockpot liners.

#1. In a medium size bowl combine flour, 3 tbs. of cocoa powder, baking powder and salt. Set aside (see photo).

#2. In another bowl, combine the sugar, vanilla and melted butter. Next, slowly fold the dry mixture in and mix well

#3. Pour the batter into your greased crockpot. Pour the 12 oz. of chocolate chips on top of the batter. (see photo).

#4. Combine your 2 cups of hot water, 3 tbs. of cocoa powder and the ½ C. of sugar you set aside earlier. Stir until the sugar is melted. Slowly pour the mixture over the top of your batter and chocolate chips (see photo).

Cook on high for approximately 2 hours but keep an eye on it – especially the sides. You don’t want it to start burning. If it does, turn the crockpot down. Cook for 2 hours on high and then another 2 hours on low.

Weight Watchers Friendly Lentil Soup

Simple Weight Watchers Friendly Crock Pot Lentil Soup

This soup is a delicious vegan recipe, but it can be altered easily to suit the cook’s tastes.  Beef or chicken stock can be substituted for the water.  Pieces of ham can be added for a delicious option.  Another tasty addition is a dollop of sour cream or Greek yogurt, which is still vegetarian but not vegan.

Ingredients

  • 2  cups dry lentils
  • 1 can diced tomatoes
  • 5 cups water (or broth/stock if preferred)
  • 1 small chopped onion
  • 2 small carrots chopped or diced
  • 2 celery stalks chopped
  • 1-2 cloves of pressed garlic (garlic powder can be substituted)
  • Salt and pepper to taste

  1. Rinse the lentils.
  2. Chop the vegetables.
  3. Place everything in the crock pot and stir.
  4. Cook on low for 4 hours.

Tips

When chopping vegetables, cut round veggies, like carrots and onions, in half and place the flat side down on the cutting board.  No more trouble with vegetables rolling around the cutting board.

If celery is wilted, freshen it up by cutting the base and putting it in cold water.  The celery will take up the water and be crisp again.

New crock pots cook food faster than older crock pots.

A delicious but light soup with an Italian flavor simmered right in. Heavy on veggies and low in calories but not low in flavor this Tortellini Soup is perfect for chilly days or nights. I first found a recipe similar to this on weightwatchers.com but I didn’t care for the huge stewed tomatoes and felt it was missing some flavor, while this version is a little higher in calories and fat I think that it is still an amazingly healthy choice. Even though there are a lot of ingredients this is a very simple recipe to prepare and all the  flavors blend well together to create a filling and tasty lunch or satisfying dinner for any night of the week.  My husband threw some cooked Italian Sausage into his bowl- I’m thinking next time I make it if the family wants a meat-filled meal, I’ll add some Turkey or Chicken Italian Sausage for a little extra protein for them.

Ingredients:

8-10 oz. package Tortellini pasta-dried, frozen, or fresh

3 cups chicken broth (we use low sodium)

1 cup water

1-14 oz. can diced tomatoes

3 carrots

1 small onion, diced

2 stalks celery

1 ½ cups fresh spinach,chopped

¼ cup Parmesan cheese (use reduced fat for less calories)

3 cloves garlic,crushed

 1 tsp. Basil

1 tsp. Oregano

1 tsp. Rosemary

1 tsp. Black pepper

1 Tbsp. olive oil

Directions:

Saute olive oil, onions, carrots, and celery in a large saucepan over medium-high heat until onions start to become translucent. Stir in garlic until heated through.

Stir in diced tomatoes, broth, water, Basil, Oregano, Rosemary, and black pepper- simmer, stirring occasionally for 5 minutes.

Add in tortellini pasta, spinach and Parmesan cheese- simmering for an additional 15 minutes, stirring several times during simmer.

OR, toss onions, carrots, celery, garlic, broth, water, Oregano, Rosemary and black pepper into your crock pot.  Cook on low 3-4 hours.  Add tortellini, spinach and Parmesan cheese and cook on low another hour.

Serve and Enjoy this 3 point per cup soup!

Perfect Potato Soup For A Winter Day

  • 1/2 cup chopped onion ( I mince my onion and celery- I love the flavor added but not the texture)
  • 1/2 cup chopped celery
  • 8 tablespoons butter
  • 5 cups diced peeled potatoes
  • 2 (14 1/2 ounce) cans chicken broth
  • 12 ounces shredded sharp cheddar cheese (I like the shredded cracker barrel cheese- extra sharp cheddar)
  • 1 pint light whipping cream
  • 2 cups water
  • 8 ounces of cooked bacon plus more for garnish
  • 4 tablespoons flour
  • 1/2 teaspoon white pepper
  • 1 teaspoon paprika
  • 1 tablespoon dried parsley

Directions:

 

  1. Chop onions and celery.
  2. In a large saucepan, sauté onion and celery in 4 ounces of butter until tender.
  3. Add potatoes and broth, bring to a boil.
  4. Reduce heat, cover and simmer for 15-20 minutes till potatoes are tender.
  5. In a small skillet, melt remaining 4 ounces of butter, add flour to make roux, cook roux over low heat until yellow blond in color and set aside.
  6. To cooked potato and broth mixture, add water, cream and roux stirring continuously until mixture thickens.
  7. Stir in the cheese, bacon bits, parsley, pepper and
  8. Cook over low heat until the cheese is melted, stir continuously and remove from heat when cheese is melted.
  9. Garnish with extra bacon, if desired. OR, toss it all into the crock pot on low for 6-8 hours. Add cheese in the last hour of cooking.
