Sweet & Salty Popcorn Cake + Unplugged family time

Our family loves games. The kids’ favorite is Uno but this weekend they chose to play some fun board games.

Nothing goes better with family time than snacks too, especially popcorn! This weekend we tried JOLLY TIME’s Kettle Corn for the first time. I simply followed the package directions making it in the microwave and then added some melted marshmallows, butter, pretzel pieces, sprinkles and voila! A fun and tasty new treat to enjoy while playing games and spending time together as a family.

JOLLY TIME Sweet & Salty PopCorn Cake

Ingredients – 

2 bags of JOLLY TIME Kettle Corn Popcorn, popped
16 oz mini marshallows
1 stick of butter, cut into chunks
1 C. broken pretzel pieces
1 C. multi-colored sprinkles

Directions – 

#1. Pop the JOLLY TIME Popcorn Kettle Corn according to package directions and remove the extra seeds once popped.
#2. Spray a bundt pan with non-stick cooking spray.
#3. On low heat slowly melt the butter chunks and the mini marshmallows, stirring occasionally.
#4. When the marshmallows are about 3/4 melted remove from heat and stir in the popcorn, pretzel pieces and multi-colored sprinkles. *Do not melt the marshmallows all the way prior to stirring in the ther ingredients.
#5. Carefully pour the mixture into the bundt pan and press down so it forms to the pan.
#6. I like to slip a small plastic baggy over my hands and spray with non-stick spray and then press down and to form the cake in the pan.
#7. When ready to serve, simply remove from the pan and cut into pieces and enjoy!

Spiced Dark Chocolate Muddy Buddies

I don’t know many who aren’t fans of Muddy Buddies.  Often times, though, this delightful snack is almost TOO sweet, at least for adults, and when I was up in Boston for Patriots Weekend, watching a demo by American Heritage Chocolate at the Old North Church, I started thinking about using that chocolate in a Muddy Buddy recipe… still sweet, but not super sweet, plus, with the 9 spices they add to their chocolate, a whole new level of flavor for this normally just sweet treat.  A muddy buddy recipe for the adults, that’s also vegan for those of us who live a plant based life. Plus, this is a spiced dark chocolate muddy buddies recipe- not your average muddy buddies for sure! Many thanks to our friends at American Heritage Chocolate and Old North Church Foundation for inviting us to Boston to experience Patriots Weekend and for inspiring this recipe.

Spiced Dark Chocolate Muddy Buddies

Ingredients

9 cups gluten free Chex Cereal (Rice is what we used)

2 bags Vegan Chocolate Chipspackage American Heritage Chocolate Drink

Coconut oil (if needed to thin the chocolate)

Directions

Melt chocolate chips in double boiler or microwave at 30 second intervals.  Once chips are melted, toss them with the cereal until coated.

Add the chocolate mix into the bag

Add coated cereal 1/2 batch into the bag, SEAL, and shake to coat

Add second 1/2 of coated cereal to bag and shake to coat (make sure you seal!!)

These will stay good up to a week in an airtight container.

Baby Shower on a Budget


Throwing a baby shower doesn’t have to mean big bucks spent. You really need 3 main components: food, atmosphere and guests (friends and family). Once you have those main components and a willing guest of honor, you’re good to go. Well, maybe not that simple. Chances are, you have a budget of some sort for the food and decorations. Perhaps you’re going to an outside venue for the event.  Regardless of your budget, you don’t have to spend big to make a nice spread. Full disclosure: this isn’t a table spread from a shower. It’s a mockup with real food that I shared with some friends.  We all agreed it was yummy.  Our friends at Chex inspired me to write about how to throw a baby shower on a budget.

Kiss It.  Keep it Simple, Silly!

Don’t over complicate things.  A simple menu with a few of the expectant mom’s favorites will be just the thing.

You don’t need to go all out on decor.

I promise.  Put down the $42 centerpieces.  Get a simple bouquet if you want something special that she can bring home with her! You can spend a small fortune on decor and really, a few simple things can make just as big of an impact.

Use what you have.

Sure, you can get a super cute baby-themed tiered serving piece, but will you use it again?  Wouldn’t you rather use that money on a gift the mom to be can use, or on yummy food?  Find a serving piece you already have- or ask a friend to borrow theirs.  That white tablecloth you usually pull out for Thanksgiving?  Use that with some fun colors instead of buying a whole new set.

Limit menu choices.

I’m totally serious. Make sure you have enough of everything, but simple works really well.  Some snacks, something a little more substantial (with protein), something sweet, and beverages.  Done.  You don’t need to recreate a whole restaurant menu.  I mean, you can, but when we’re talking about budgets…

For something sweet, everyone loves Muddy Buddies.  Why not make some fun baby girl or baby boy themed Muddy Buddies (aka Puppy Chow), served in cupcake wrappers?  Simple, inexpensive, DELICIOUS, and, as a bonus, they look adorable on the table. The cupcake wrappers also double as portion control, unless your guests have a super sweet tooth and go back for seconds (thirds).

Baby Shower Muddy Buddies

This recipe is mine, but it’s most definitely adapted from the folks at Chex Mix. ChexPartyMix-RecipeCards-ItsAGirl-print and ChexPartyMix-RecipeCards-ItsABoy-print if you’d like to see the original inspiration (or use for you!)

Ingredients

1 bag melting chocolate

3 cups confectioners sugar

1 box (gluten free) Chex Cereal – about 9 cups- any flavor works. I try to grab the gluten free when I’m able to just so I am sure that I can tell people there’s no gluten in my muddy buddies. (I used corn flavor this time)

Sixlets in whatever color you want to use- to coordinate with the baby’s nursery theme, for boy/girl, for fun- they have so many to choose from! (2 cups total)

Large plastic (sealable!) storage bag (gallon sized)

Large microwave save mixing bowl (or double boiler)

Fun cupcake wrappers

Edible glitter, colorful shots/sprinkles/jimmies

Directions

Melt chocolate in double boiler on stovetop, or at 20 second intervals in the microwave

While chocolate is melting, add your confectioner’s sugar to the storage bag. Set aside.

Once your chocolate is melted, stir in your Chex cereal.  Honestly, the most effective way I have found to coat the cereal evenly is to mix by hand.  You don’t want a lot of cereal breakage while you coat. It’s easier to gauge the pressure you are using by hand than by spoon.

After your cereal is coated, add half of it to the storage bag with the sugar, seal it and gently shake the bag to evenly coat.  Once you have the cereal evenly coated, remove from your bag and set on cookie sheet (you can also put it into your colander to remove excess sugar). Repeat with remainder of coated cereal.

Once your cereal has been coated with chocolate and then the powdered sugar, add your Sixlets (or other colored candies) and gently mix.

Add Muddy Buddies to cupcake wrappers and arrange on your serving piece.

Super sweet in so many ways!

Bunny Cupcakes

It must be fun cupcake week around here.  We’re just getting ready, ready ready for the bake sale and having all kinds of holiday fun with these little cute cuppies!!  If you aren’t into the Sheep Cupcakes, check out these super cute Bunny Cupcakes! bunny-cupcakes-grass-label

Bunny Cupcakes (from scratch)

Cupcake Ingredients

(you could also use a box mix to save time) –

1/2 C. butter, softened to room temperature
1 C. sugar
2 large egg whites
2 tsp. vanilla extract
2 tsp baking powder
1 1/2 C. flour
1/2 tsp. salt
3/4 C. milk

Directions –

Preheat the oven to 375 degrees.

Combine the softened butter, sugar, egg whites and vanilla mixing
well. Slowly fold in the flour, salt and baking powder. Lastly, add
the milk continuing to stir.

Pour into greased muffin tins (or liners) and bake 20-25 minutes.
Insert a toothpick around 20 minutes and if it comes out clean the
cupcakes are done.

Bunny Ingredients/Directions –

White Cupcakes
White frosting
12 large marshmallows
pink Wilton sugar crystals
pink candy hearts (I used leftover Valentine sprinkles, you could
easily substitute a pink M&M if needed)
Wilton black gel icing
Candy eyes

Directions –

Generously frost each cupcake with white frosting and set aside.
Use a pair of kitchen scissors to snip of both ends of the large marshmallows.

Dip the sticky side down into the pink sugar crystals and place on the cupcake as the bunny’s ears.

Next, give each bunny 2 candy eyes and a nose.

Finally, use the Wilton black gel icing to make the bunny’s mouth. Simply make a J and then put a 2nd J on the other side (as shown).

Sheep Cupcakes (From Scratch)

Do you know one thing that’s just fun?  Cupcakes.  One thing that makes cupcakes so fun is the versatility.  You can do anything with a cupcake. Plain, frosted, colored, flavors, surprises, fun character and holiday themes…the possibilities are endless.  These sheep cupcakes are will make ewe smile and are great for Easter, spring, Communion, Timmy Time, Shaun the Sheep and farm theme parties.  Or maybe you just really like fun cupcakes.  I won’t judge.

We are making these s-ewe-per cute b-aaaa-aaad boy sheep cupcakes for our Sunday School Bake Sale on Palm Sunday. I’m pretty sure they’ll be a hit- what do you think?

Sheep Cupcakes

Cupcake Ingredients –

White frosting, any brand
2 small packages of Wilton black fondant (I found mine at Walmart in
the bins in the Wilton aisle near the party decorations- my fave fondant is Satin Ice fondant)
Candy eyes
Toothpicks

Directions –

Generously frost each cupcake with white frosting and set aside.
Cut the black fondant into 1″ squares. Mold the fondant gently pinching the top to make the sheep’s ears (see photo).

Use one of toothpicks to spread a tiny bit of frosting onto the back fondant and give you sheep 2 eyes.

Use another toothpick to make 2 nostrils (simply press the toothpick into the fondant) and then make a mouth.

Place the Sheep’s head on the cupcake and gently press the mini marshmallows into the frosting surrounding his head working your way to the outer edges of the cupcake.

Repeat with all the cupcakes. :)

Bubble Gum Muddy Buddies Recipe

Muddy Buddy mixes are always a fun treat.  We usually do just holiday themed, but sometimes it’s fun to have a special treat for no reason at all.  That’s where the Bubble Gum Muddy Buddies recipe idea game from! bubble-gum-muddy-buddies

Bubble Gum Muddy Buddies

Ingredients:

9 cups Chex cereal

2 cups white chocolate chips

1 Duncan Hines Flavor Creations Bubble Gum Flavor

1 1/2 cups powdered sugar

Directions:

Place Chex into a large bowl and set aside.

In a small bowl, microwave chips on high for a minute, stir and microwave again for about 45 seconds more or until melted and smooth when stirred.

Pour Chocolate over cereal and stir until evenly coated.

Mix together flavor packet and powdered sugar in a small bowl.

Combine sugar mixture and cereal in a large resealable plastic bag and shake until well-coated.

Spread onto a baking sheet to cool.

  4. Mix together flavor packet and powdered sugar in a small bowl.
  5. Combine sugar mixture and cereal in a large resealable plastic bag and shake until well-coated.
  6. Spread onto a baking sheet to cool.

Supplies:

  • 1 batch of our Lemon Snap Sugar Cookies – you can use another recipe but trust me, this one is delicious!
  • 1 batch of Royal Icing
  • green gel food coloring
  • shamrock cookie cutter
  • white edible pearls
  • 2 piping bags with fitting and #2 round tip
  • small bowl and spoon

How to Decorate Shamrock Sugar Cookies

Instructions:

Begin by preparing the cookie dough, rolling, cutting, and baking into shamrock shapes.  Let the cookies cool completely before decorating.

While your cookies cool prepare a batch of Royal Icing.  Divide the icing in half and color one half of the icing green. Place half of the remaining white icing into a piping bag and half of the green icing into another piping bag.  Thin the remaining icing for flooding the cookies later.  Make sure the icing is thin but not runny.

Using a #2 round tip pipe a line of icing around the outside of each shamrock.  I did half of my cookies with a green outline and half with a white.

After all of the cookies have been outlined begin flooding them one to a time.  You can use a piping bag, a bottle, or a spoon to add the icing to the cookie and then a toothpick to spread the icing evenly over the entire cookie.  Do only one cookie to a time and set each aside to dry completely before continuing.

When the cookies have all been flooded and the icing has dried you can add the detail.  Add as little or as much as you would like.  I piped a line of contrasting icing around each cookie and created heart shaped petals.  Use dotted lines in place of solid lines to add interest!  I also added small edible pearls to give the cookies even more texture and some bling!

Allow the icing to dry completely before stacking or packaging the cookies.

Banana Oatmeal Nests Recipe

Easter has a lot of significance in many of our lives….as a religious holiday, as a family time.  It’s also a time of celebration and celebrating spring and all that comes with spring- new life, new growth, after a long and dreary winter.  It’s in the spirit of family time and celebration that I’m sharing this post with you.  We all know Easter’s coming- I mean, the 20+ year (awesome) Cadbury Creme Egg commercials with the bunny are an early sign, as are the seasonal aisles at the grocery store filling up with candies and treats wrapped in springtime pastels.

We do Easter Baskets in our house. It’s a lot of fun and we have a lot of traditions around it.  We also go to church on Easter Sunday, and my kids are part of the children’s choir so they sing each Easter morning at church.  That doesn’t leave much time for egg hunting or basket enjoyment, so I wanted to do a fun Easter-y recipe that was a LITTLE bit treat but a lot of healthy that would fill their bellies and give them some energy to get through a busy holiday morning.  That’s where these Banana Oatmeal Nests with Cadbury Mini Eggs came from.  Lots healthy, with a little sweet. (Our kids don’t eat candy before we get home from church from their baskets, so I’m ok with a few little eggs in a healthy little nest.

Banana Oatmeal Nests Recipe

Ingredients:

2 Ripe Bananas, peeled and sliced

1 Cup Bob’s Red Mill Quick Cooking Oats (or any other brand of quick cooking oats)

Cadbury Mini Eggs

 

Directions:

Preheat oven to 350 degrees and lightly grease a cupcake tin.

In a large bowl combine bananas and oats and mix until well combined, making sure that there are no large lumps of banana.

Lightly roll dough into 1-inch balls and place each ball into cupcake tin. Slightly press down and pull the edges up to form a cup.

Bake for 12-15 minutes or until the tops are no longer tacky.

 

Allow to cool for 15 minutes before removing from pan.

Place 2-3 Cadbury Mini Eggs into each nest and serve.

Yields: 10-12 nests

Homemade Brownies Heart Stacks

Valentine Brownie Heart Stacks

Ingredients

¾ C. butter

1 ¾ C. sugar

3 eggs

1 tsp. vanilla

¾ C. unsweetened cocoa powder

1 C. flour

Directions –

Preheat the oven to 350 degrees.

#1. Add the butter to a microwave safe dish and heat for about 30-45 seconds. Slowly add in the unsweetened cocoa powder, mixing well.

#2. Next, add in the sugar, eggs and vanilla stirring until creamy.

#3. Slowly fold the flour into the wet mixture.

#4. Spread the brownie batter in a 9×13 greased pan. I like to line mine with foil as it makes for easy clean-up AND easier to get the brownies out neatly.

#5. Bake for 30-35 minutes. Insert a toothpick around 30 minutes and if it comes out ‘dry’ the brownies are done. These are best not over-baked.

Small and Medium Heart Shaped Cookie Cutter

Pink frosting (I used cherry but you could easily use red food coloring with white frosting)

Dove milk chocolate candy hearts

Small spatula

Directions –

#1. Use the small and medium cookie cutters to cut even amounts of the small and medium size hearts.

#2. Spread frosting on the top of the medium heart and top with the small brownies heart. Add more frosting on top and then top with the Dove chocolate heart.
