My kids are pretty good about vegetables, I won’t lie.  But no matter how much we like any foods for flavor, presentation can make a big difference.  Why just eat corn on the cob when you can make a corn on the cob rocket ship?  Summer is around the corner- what’s not fun about Green Bean Campfires?

Since this is my first night back after being away for 4 nights, I decided to make “Peas and Thank You” for the kids for dinner.  They LOVED it.  They are big fans of carrots and peas so this was just one more fun way for me to make them a special dinner.

This was an instant hit.  Cutting the carrots like this too almost NO extra time, and they were such a big hit with the kids!

Country Crock and Clare Crespo have teamed up to offer some great, FUN and exciting recipes to make veggie time- more fun- having more veggies in our diets can’t be a bad thing.  It’s always nice to have some new ideas.  I’m definitely printing this whole recipe booklet out- there are so many great ideas in here!

  • Thank you for the cookbook, there are several dishes I would love to try. The peas and carrots are going to be my 1st one to cook. My mom used to make them and they would melt in your mouth. These sound like they would taste so good. Gonna try them after my next trip to the grocery store.
