Easter has a lot of significance in many of our lives….as a religious holiday, as a family time.  It’s also a time of celebration and celebrating spring and all that comes with spring- new life, new growth, after a long and dreary winter.  It’s in the spirit of family time and celebration that I’m sharing this post with you.  We all know Easter’s coming- I mean, the 20+ year (awesome) Cadbury Creme Egg commercials with the bunny are an early sign, as are the seasonal aisles at the grocery store filling up with candies and treats wrapped in springtime pastels.

We do Easter Baskets in our house. It’s a lot of fun and we have a lot of traditions around it.  We also go to church on Easter Sunday, and my kids are part of the children’s choir so they sing each Easter morning at church.  That doesn’t leave much time for egg hunting or basket enjoyment, so I wanted to do a fun Easter-y recipe that was a LITTLE bit treat but a lot of healthy that would fill their bellies and give them some energy to get through a busy holiday morning.  That’s where these Banana Oatmeal Nests with Cadbury Mini Eggs came from.  Lots healthy, with a little sweet. (Our kids don’t eat candy before we get home from church from their baskets, so I’m ok with a few little eggs in a healthy little nest.

Banana Oatmeal Nests Recipe

Ingredients:

2 Ripe Bananas, peeled and sliced

1 Cup Bob’s Red Mill Quick Cooking Oats (or any other brand of quick cooking oats)

Cadbury Mini Eggs

 

Directions:

Preheat oven to 350 degrees and lightly grease a cupcake tin.

In a large bowl combine bananas and oats and mix until well combined, making sure that there are no large lumps of banana.

Lightly roll dough into 1-inch balls and place each ball into cupcake tin. Slightly press down and pull the edges up to form a cup.

Bake for 12-15 minutes or until the tops are no longer tacky.

 

Allow to cool for 15 minutes before removing from pan.

Place 2-3 Cadbury Mini Eggs into each nest and serve.

Yields: 10-12 nests

White Chocolate Cranberry Almond Bark

This White Chocolate Cranberry Almond Bark is a delicious addition to your Christmas baking, right alongside the traditional peppermint bark. It could not be simpler to make and is easy to customize with your favorite flavors and ingredients. This is my particular favorite since the dried cranberries and almonds pair amazingly with white chocolate. Add this to your Christmas platter, bag some up to pass out to friends, or keep it to yourself-no judgment here.

White Chocolate Cranberry Almond Bark

Ingredients:

16 oz. white chocolate chips

1/2 cup dried cranberries

1/2 cup almonds

1 1/2 tsp. almond extract

Directions:

Lay out a large sheet of waxed or parchment paper on counter or other flat surface.

Place white chocolate chips in a microwave safe dish and heat in 30 second increments, stirring each time, until smooth and melted.

Stir in almond extract.

Spread chocolate out on waxed paper with a spatula to 1/4″ to 1/8″ thickness.

Immediately sprinkle dried fruit and nuts onto melted chocolate, pat gently with your hand or spatula to press into chocolate.

Allow chocolate to completely harden, place in refrigerator to speed it up if desired.

Break into small pieces, whatever size you like.

Store in an airtight container for up to 10 days

Homemade Bisquick Recipe

Love Bisquick? Here is a simple homemade recipe that is easy to make (takes only minutes) and a lot cheaper and probably even healthier for you than the store bought version. Buying an unbleached and/or organic flour and organic shortening is a simple swap to make it better for you.  Store this DIY Bisquick in an airtight container in the pantry and you will always have some on hand.

Ingredients

Preheat oven to 450 degrees. Mix ingredients until doughy and knead dough 8-10 times. Cut with a biscuit cutter and bake 8-10 minutes.

This weekend was so super busy for us.  In the midst of 4 soccer games, a baseball game and a dance recital, we had one kid at a slumber party and Father’s Day to celebrate, plus Flag Day and Softball and Baseball night at the New Britain Rock Cats. It’s summer! Summer’s pretty hectic for most of us- we’re short on time and the last thing we want to do after we make a fun recipe (like this blue velvet cupcakes recipe) to bring to a cookout or party is spend our precious time cleaning- yuck! Dawn has always been my go-to detergent- there just isn’t another product I’ve found that can handle tough foods on dishes like Dawn. I need Dawn because I tend to um… well, make a big mess when I cook or bake. Just wait. You’ll see…

{Red, White &} Blue Velvet Cupcakes Recipe

Ingredients

2 1/2 cups cake flour 1 1/2 cups sugar 1 TBSP unsweetened cocoa powder 1 tsp baking soda 1 tsp salt 2 large eggs, at room temperature 1 1/4 cups vegetable oil 1 cup buttermilk at room temperature (If you don’t have buttermilk, put 1 TBSP vinegar or lemon juice (I usually do lemon juice) in a measuring cup.  Fill to 1 cup line with milk.  Voila. Mason Jar Recipes: Pear Crisp

I used to think of crisps as being a great treat in the fall.  Then I realized that really, these delightful treats should be enjoyed ALL YEAR LONG.  Seasonal fruits in a crisp are like a dream come true, so let’s celebrate!!

Pear Crisp Mini Jars

6 medium size Bartlett Pears, peeled and diced

sugar (optional)

10 jelly jars (4 oz.)

 

Crumble Topping Ingredients –

 

½ c. rolled oats

½ C. flour

1/3 C. packed brown sugar

4 tbs. butter or margarine, softened

 

Directions –

 

#1. Preheat the oven to 350 degrees

 

#2. Place about 2 tbs. of diced apples into the bottom of each jelly jar. You want to feel about ½ the jar. **If you prefer your pears a bit sweeter you can also add a ½ tsp. of sugar (sprinkled on top of the pears) to each jar.

 

#4. In a separate bowl, combine the rolled oats, flour, brown sugar. Using a fork, or a pastry cutter, cut in your 4 tbs. of butter or margarine. The mixture will be very crumbly.

 

#5. Scoop about 2-3 tbs. of crumble into your jelly jars. You want the crumble mixture to come right to the top of the jar – it will sink a bit while baking.

 

#6. Bake for 25 minutes on 350 degrees.

Lamb Cinnamon Rolls Recipe

Spring is here!! It really is!! Even if the weather isn’t cooperating, the calendar definitely reads springtime. I don’t know about you but I’m so totally over cold weather and winter or cold related anything at this point. I want spring, fun, warm weather stuff. That includes foods! Since Easter is coming, Pillsbury asked me to create a fun recipe using their Cinnamon Rolls to share with you all. I can’t say no to creating cute and fun foods, so I got to thinking…and while I love chicks and bunnies, lambs are also part of the Easter season (and spring!) and I thought this little Lamb Cinnamon rolls recipe would be just so super cute.  It is very easy to make your Easter celebration a little more special with these simple, fun and delicious food ideas.

Pillsbury Lamb Cinnamon Rolls Recipe

Ingredients –

1 can of 8 ct. Pillsbury cinnamon rolls

16 chocolate chips

8 mini pink marshmallows, cut in half

1 C. white mini marshmallows, cut in half

1 small package of Twizzler black licorice nibs

1 small round cookie cutter (mine was octogon shaped)

small sandwich bag

Directions-

Preheat the oven to 350 degrees.

#1. Taking one cinnamon roll at a time, flatten it out with your palm. Don’t be afraid to stretch it out as these bake very fluffy. Once it is flattened out use the cookie cutter to cut out the lamb’s head (see photo). Take the excess cinnamon roll from around the edge of the cookie cutter and cut in half.

Fold the 2 halves in half to make the lamb’s ears and tuck behind the head and gently press down (see photo). Place the lamb on a greased cookie sheet.

 

#2. Repeat step number #1 with the other cinnamon rolls.

 

#3. Bake according to the package directions.

 

#4. Remove the cinnamon lambs from the oven and let cool completely. Open the frosting container the comes with the cinnamon rolls and scoop into the sandwich bag and make a small snip in the end with a pair of scissors.

#5. Once the lambs are completely cooled you can start on their faces. Using the sandwich bag with frosting, pipe the frosting onto the lamb’s head to make a face. Use a toothpick to spread the frosting out evenly, if needed.

 

#6. Next place 3-4 white mini marshmallows on the top of the lambs heads. The frosting will act like ‘glue’. Place 2 chocolate chips on the lambs face for eyes and 1 mini pink marshmallow ½ for a nose.

Using the kitchen scissors, snip the black licorice Nibs into small pieces for a mouth.

Lastly, pipe some frosting on the ears. Set aside and let dry.

#7. Repeat steps #5 and #6 for the rest of the lamb’s. Let set 15-20 minutes before serving.

*Store in an airtight container up to 1 week. I do not recommend freezing. 1 Lamb = 1 serving. Makes 8 servings total.

I’ve been trying to add some culinary excitement to our family meals lately. Nothing super crazy, of course.  This week I was thinking about kale and making kale chips. But then I was thinking about other stuff you can put kale into.  Somehow, this had me thinking about Easter and ham and leftover ham and what to make with leftover ham. So  I give you this quick and easy Kale and Ham Galette recipe.  I think you’ll like it.

Kale and Ham Galette

What You Need:

  • Pillsbury Pie shell (in a sheet)
  • 1 egg
  • ½ cup milk
  • 3/4 cup grated white cheddar cheese
  • ½ cup deveined and chopped Kale
  • 3 slices of thick cooked ham cut into quarters
  • Salt & Pepper to taste

Directions:

Preheat oven 350F.

Defrost pie shell at room temperature. Whisk egg, milk, salt, pepper until combined. Lay pie shell sheet onto a greased pie plate. Sprinkle bottom with chopped Kale, lay ham on top as next layer, then cover with grated cheese. Pour egg mixture into shell until a bit less than full. Fold edges of pastry inside to make galette shape.

Bake for 15-20 minutes until you can insert a toothpick and golden brown.

Weight Watchers Chicken Pot Pie Recipe

Comfort foods are one of the hardest things to give up when you are trying to eat healthier and lose weight.  This Weight Watchers Chicken Pot Pie is a great lower fat version of a classic comfort food that is sure to please the entire family and leave everyone asking for seconds.  By using lean chicken breast and reduced fat items you easily cut thousands of calories out of a typically rich and cream laden dish.

Weight Watchers Chicken Pot Pie

WEIGHT WATCHERS CHICKEN POT PIE

Ingredients:

1 9ct Can Homestyle Canned Biscuits (not the “grands” or “extra butter” variety)

1 10oz Package Frozen Mixed Vegetables

1 Can 98% Fat Free Cream of Chicken Soup

1 Cup Shredded Boneless Skinless Chicken Breasts

½ Teaspoon Garlic Powder

½ Teaspoon Onion Powder

½ Teaspoon Sage

1 Teaspoon Parsley Flakes

½ Teaspoon Salt

¼ Teaspoon Black Pepper

Weight Watchers Chicken Pot Pie Ingredients

Directions:

Preheat oven to 350 degrees

Spray a small casserole dish with non-stick spray

In large bowl mix together all ingredients except canned biscuits

Pour mixture into casserole

Top with canned biscuits

Bake for 18-25 minutes or until bubbling and biscuits are golden brown

Makes 6 Servings

This great meal weighs in a little heavier than most entrees with Weight Watchers but it has everything including the vegetable, starch and protein in one.  Weighing in at only 5 points per serving this is a great chicken pot pie that will take you back to childhood and your favorite comfort foods.  Not only will you have the rich flavors and cream you are longing for, but you will have a lighter fare that will satisfy while not being over indulgent.  For an added flavor you may wish to include 1/8 cup Parmesan cheese in the mix.  This brings out a richness that is missing due to the lack of cream as you would find in traditional pot pie recipes.

12 Days of Christmas Cookies: Snickers Bar Pillow Cookies

I don’t know about you but we STILL have leftover Halloween candy.  In December. I really like to freeze snickers after Halloween for holiday baking- because then I have them on hand for delicious Snickers bar recipes like this one!

These Snickers Bar Pillow Cookies are like pillows of delight!!

Ingredients:

  • 1 8 oz package of softened cream cheese
  • 1/4 pound of butter
  • 1 cup sifted all purpose flour
  • 1 cup chopped Snickers miniatures candy bars
  • 1/2 cup chopped semi sweet chocolate chips
  • 1/2 cup confectioners’ sugar

Makes approximately 3 dozen.

Mix softened cream cheese, butter, and flour with dough hook attachment on mixer.  Chill dough for 1-2 hours.

Preheat oven to 350 degrees.

On a well floured surface, roll the dough out to approximately 1/8″ thick.

Using a knife or a 2″ square cookie cutter, cut dough into 2″ squares.  Transfer to cookie sheet.

Sprinkle a small amount of the chopped Snickers and chopped chocolate chips into the center of each square.  With a small brush, moisten the edges of the square with water and place a second square of dough over top of the first to create the “pillow”.  Pinch the seams together.

Bake in preheated oven for 15-18 minutes.

Allow cookies to cool and drizzle with melted chocolate or a thin confectioners’ sugar icing.
