Slow Cooker Pork Chops and Applesauce Recipe

Nothing is more classic than a weeknight meal of this easy Slow Cooker Pork Chops And Applesauce.  Easy, simply and amazingly delicious this is a crowd pleaser for even the picky eaters in your home.   Traditionally made with premade applesauce this version includes fresh apples without all of the typical preservatives found in the canned variety.  A few simple seasonings on virtually any cut of pork (bone in or out) and this becomes a meal that serves beautifully for not only a simple weeknight meal but also a great special dinner for guests.

Slow Cooker Pork Chops & Applesauce

SLOW COOKER PORK CHOPS AND APPLESAUCE

1 Pound Pork Chops or Pork Loin

1 Teaspoon Onion Powder

1 Teaspoon Garlic Powder

½ Teaspoon Paprika

½ Teaspoon Black Pepper

1 Teaspoon Salt

3 Granny Smith Apples (Peeled and Chopped)

½ Cup Water

 Slow Cooker Pork Chops And Applesauce

  • Spray bottom of slow cooker with non-stick spray.
  • Mix seasonings together in small bowl.
  • Generously season both sides of pork and place in even layers on bottom of slow cooker.
  • Pour peeled and chopped Granny Smith Apples over the top of pork chops in even layer.
  • Pour water over top.
  • Cover with lid and cook on medium heat setting for 3 hours for thinner chops or 4 hours for thicker loin.

Serve this hearty dish with a side of rice and your favorite vegetable for the perfect easy weeknight meal that is classic and reminiscent of childhood as well as healthy and simple to create.

Weight Watchers Friendly Tortellini Soup

Given that we’ve all been sick, it’s been a week of soups in the house.  This recipe was an instant hit with all 5 of us and we’ll definitely be making it again.

A delicious but light soup with an Italian flavor simmered right in. Heavy on veggies and low in calories but not low in flavor this Tortellini Soup is perfect for chilly days or nights. I first found a recipe similar to this on weightwatchers.com but I didn’t care for the huge stewed tomatoes and felt it was missing some flavor, while this version is a little higher in calories and fat I think that it is still an amazingly healthy choice. Even though there are a lot of ingredients this is a very simple recipe to prepare and all the  flavors blend well together to create a filling and tasty lunch or satisfying dinner for any night of the week.  My husband threw some cooked Italian Sausage into his bowl- I’m thinking next time I make it if the family wants a meat-filled meal, I’ll add some Turkey or Chicken Italian Sausage for a little extra protein for them.

Ingredients:

8-10 oz. package Tortellini pasta-dried, frozen, or fresh

3 cups chicken broth (we use low sodium)

1 cup water

1-14 oz. can diced tomatoes

3 carrots

1 small onion, diced

2 stalks celery

1 ½ cups fresh spinach,chopped

¼ cup Parmesan cheese (use reduced fat for less calories)

3 cloves garlic,crushed

 1 tsp. Basil

1 tsp. Oregano

1 tsp. Rosemary

1 tsp. Black pepper

1 Tbsp. olive oil

Directions:

Saute olive oil, onions, carrots, and celery in a large saucepan over medium-high heat until onions start to become translucent. Stir in garlic until heated through.

Stir in diced tomatoes, broth, water, Basil, Oregano, Rosemary, and black pepper- simmer, stirring occasionally for 5 minutes.

Add in tortellini pasta, spinach and Parmesan cheese- simmering for an additional 15 minutes, stirring several times during simmer.

OR, toss onions, carrots, celery, garlic, broth, water, Oregano, Rosemary and black pepper into your crock pot.  Cook on low 3-4 hours.  Add tortellini, spinach and Parmesan cheese and cook on low another hour.

Serve and Enjoy this 3 point per cup soup!

I love fresh roasted nuts but my favorites are definitely these Slow Cooker Cinnamon Sugar Pecans.  Simple to toss the ingredients together in the slow cooker and forget about for a couple of hours then come back and find some of the best snacks ever made.  These are absolutely perfect for gift giving this holiday season or Valentine’s Day- or just because!  Grab your favorite nuts on sale and create a large batch to share with all of your friends and family.

Slow Cooker Cinnamon Sugar Pecans

SLOW COOKER CINNAMON SUGAR PECANS

1 Pound Pecan Halves

¼ Cup Packed Light Brown Sugar

½ Stick Butter (cut into small pieces)

1 Teaspoon Cinnamon

½ Teaspoon Ginger

½ Teaspoon Nutmeg

Slow Cooker Cinnamon Sugar Pecans Prep

  • In a small bowl mix together brown sugar, cinnamon, ginger and nutmeg until well blended.
  • Pour pecans into slow cooker, add in dry ingredients and butter and stir until well mixed.
  • Cook on medium heat setting for 1 hour. (Low setting for 2 hours)
  • Remove from slow cooker and spread on wax paper or aluminum foil to cool and set.
  • They will harden some as the butter and sugar combination has created a caramel.
  • Break apart and store in an airtight container until snack time or time to share with friends.

Although pecans are what we have listed here you can easily do the exact same thing with walnuts, almonds, cashews or even peanuts.  Create a blend of your favorite nuts for a special cinnamon sugar mixed nut blend.  Bag the nuts in cute cellophane bags, in small gift tins or even decorative jars and tie with a ribbon to give to your coworkers, kid’s teachers, babysitters or even just give as a gift to your neighbors.

Crockpot Chicken Enchiladas

Crockpot Chicken Enchiladas is the recipe this week

coming to us from Tabitha of Saving Toward A Better Life! You can add a little extra spice like Paprika Pepper to kick up the flavor or enjoy as is for a great homemade meal!

Ingredients:

  • Chicken Breasts or Tenderloins
  • Can or Rotel Tomatoes
  • Can of Old El Paso Enchilada Sauce
  • Flour Tortillas (or wheat)
  • Shredded Cheese (I use Mexican Blend but you can us what you like)
  • Sour Cream
  • Green Onions

Directions:

  1. Put Chicken, Rotel and Enchilada Sauce in crockpot. Cook on Low 6 hours or High 3-4 hours.
  2. Shred chicken in crockpot.
  3. Using a slotted spoon, scoop chicken (draining off as much sauce as possible) in to tortillas and roll up.
  4. Pour sauce over enchiladas and top with sour cream, cheese and green onions.

Slow Cooker Recipe: Pumpkin Black-Bean Turkey Chili

Fall is in the air and on my mind.  With Halloween just days away, I have pumpkin on the brain…so why not have some for dinner?
I found this recipe for Pumpkin Black-Bean Turkey Chili in one of my Fix it and Forget It cookbooks (love these!!).  This would be a delicious start to Halloween Night fun!!  But, don’t think that this comfort food recipe is for Halloween only; this warm and hearty chili is great for any cold night.

Ingredients
  • 1 cup chopped onions
  • 1 cup chopped yellow bell pepper
  • 3 garlic cloves, minced
  • 2 Tbsp. oil
  • 1½ tsp. dried oregano
  • 1½-2 tsp. ground cumin
  • 2 tsp. chili powder
  • 2 15-oz. cans black beans, rinsed and drained
  • 2½ cups chopped cooked turkey (or same amount cooked ground turkey)
  • 16-oz. can pumpkin (frozen or pureed steamed is fine as well, they are just a bit more liquidy)
  • 14½-oz. can diced tomatoes
  • 3 cups chicken broth
Instructions
  1. Sauté onions, yellow pepper, and garlic in oil in skillet for 8 minutes, or until soft.
  2. Stir in oregano, cumin, and chili powder. Cook 1 minute. Transfer to slow cooker.
  3. Stir in remaining ingredients.
  4. Cover. Cook on Low 7-8 hours.
