Getting ready for the Kentucky Derby

The Kentucky Derby is one of the most prestigious sporting and social events of the year, and this year is going to be must-see. Everyone that can possibly attend will be there, and each and every one of them will be at their best. From hair and makeup to the perfect clothes, hat and accessories, being well put together will be indispensable to one’s confidence. Getting ready for the Kentucky Derby is not a small task.

I, like most people (pretending that they will be) attending this great event, usually take my time getting ready. I (would probably) want to look just so for the big races like the Derby and don’t mind putting in the work to get there.

This brings me to a very important, though often overlooked and understated, thought about race day…

While it is acceptable for the horses to smell and occasionally make a mess, it is abhorrent for a Daisy like myself to show up to the races unclean and in need of a freshening up.  Just because you’re going to be around horses, that’s not an excuse to smell like the horses’ business. Besides, it can get hot at the Derby. You may need to blot a bit.  Or fix a smudge. What’s a girl to do?

Things to do in Puerto Rico

It's been a really, really long winter for most of the country.  We had little bits of snow in our yard in shady areas until earlier this week.  We had a snow and ice storm just 2 weeks ago!  To say that I've spent a bit of time daydreaming about a getaway to someplace tropical is an understatement.  One place I'd love to go is Puerto Rico.  By that I mean I would gladly pack bags and head to the airport in an hour if someone asked me to (just saying, so if anyone wants me to…). +

Why Puerto Rico? Well, it's close.  It is a 5-star vacation destination filled with world-class attractions. Whether you’re a golfer, foodie, the adventure type, or a beach (rum) bum, Puerto Rico has everything that you want in a nice relaxing vacation. Just hop on a plane and go!  It's so close that it's got the tropical paradise feel without the super long journey to get there…no need for a passport or currency exchange from the USA.

I'll need a week to 10 days for my trip, of course.  I'll need a few days to just chill on the beach.  But then, I may want to visit a few beaches.  Puerto Rico has 270 miles of coastline and featured in the Top 10 beaches from Travel Channel — including Flamenco Beach in Culebra, often cited as one of the best beaches in the world. We'll definitely do some snorkeling- we LOVE to explore places underwater as well as on land!

I am not sure I'm brave enough but I know my husband and most of our friends and family would be wanting to do some ziplining adventures.  Can you even imagine soaring above these gorgeous waters and beaches?

Shared moments with family and friends #nibblers

I’m feeling eleven kinds of nostalgic today. Maybe it’s the weather, Mother’s Day next week, turning 40, my baby finishing preschool next month.  Maybe I’m just sentimental. I don’t know. But so many moments are flooding into my memory, new moments, old moments, forgotten moments, treasured moments. The common theme to all of my moments is that they are all shared moments.  It’s never a moment when it’s just *me.*

One way many of us connect is with food, and so many memories for us all include food and eating. We have a Friday night tradition of family movie or game night, depending on our moods.  We always make a fun snack.  Sometimes, it’s popcorn, sometimes popcorn with a chocolate surprise in it.  Other times, we’ve made ice cream sundaes with fun toppings.

We did ice cream with Mrs. Fields Nibblers recently and the kids just thought that was the best thing ever.  The small size of the Nibblers made for smaller portions, and the fun flavors added a new twist to their ice cream.

Nutella Recipe: Chocolate Nutella Banana Cupcakes

Here’s a fun (and sweet) Nutella recipe for you to enjoy! It’s always fun to make cupcakes, right?  These are a delightful mix of chocolate, Nutella and banana.  So good.

Chocolate Nutella Banana Cupcakes

Cupcake Ingredients –

1 ¾ C. flour

1 C. packed brown sugar

¼ C. cocoa powder

1 tsp. baking soda

1 tsp. baking powder

½ tsp. salt

1 C. milk

1/3 C. vegetable oil

1 egg

1 tsp. vanilla extract

1 C. Nutella

2 bananas, mashed

 

Frosting Ingredients –

1 C. butter or margarine, softened

2 C. Nutella

4 C. powdered sugar

6 tbs. milk (you may need a little bit or more or a little bit less depending on how thick you like your frosting)

Directions –

 

#1. Preheat your oven to 350 degrees and line a 12ct. Muffin tin with cupcake liners (or use a non-stick spray).

 

#2. In a medium size bowl, combine the flour, brown sugar, cocoa, baking powder, baking soda and sale. Mix well and set aside.

 

#3. In a smaller bowl, combine the milk, egg, mashed bananas and vanilla – whisk well.

 

#4. Slowly combine the dry ingredients with the wet ingredients and mix well. Slowly add in the Nutella.

 

#5. Divide the batter evenly between the 12 muffin tins. Bake for 20-25 minutes. Check the muffins by sticking a toothpick into the center around 21 minutes. If it comes out ‘clean’ they are done. Let the muffins cool.

Frosting Directions –

Using a hand mixer beat 2 C. of powdered sugar, ½ of your butter/margarine and ½ of your milk and 2 C. of Nutella. Blend well and then slowly add the remaining sugar, milk and butter. Beat until smooth and creamy.

 

Once your cupcakes have cooled you can frost them.

10 Reasons to stop drinking soda #goH20

I like the taste of most sodas. I won’t lie. I have a sweet tooth with a mind of it’s own. I love root beer.  Birch beer. Sasparilla.  So good. I am trying to stop drinking soda, though, for a plethora of reasons.  Really, it’s just not good for us. Recently, I was challenged to write a post about the benefits of drinking water vs. drinking soda.  That’s how I came up with these 10 reasons to stop drinking soda.

1. Many sodas contain brominated vegetable oil—a toxic flame retardant—to keep the artificial flavoring from separating from the rest of the liquid. Do you really want to ingest flame retardant?

2. Your teeth. I’m pretty sure you like yours. I like mine! The acidity in soda can eat away your tooth enamel. You can’t just replace enamel on your teeth.  I’ve lost a lot of my tooth enamel from grinding my teeth for decades… I don’t need any extra help in that department.

3. Weight gain- even diet soda can make you gain weight, long term.

4. Sodium- Soda usually has sodium  in it.  That’s not going to hydrate you, and it’s not going to quench your thirst.  Quite the opposite.

5. BPA- most soda in cans contains BPA. (bisphenol A)

6. Empty calories- there’s no nutritional value in sodas.  Drinking calories isn’t going to give your body fuel to keep going, and it won’t help boost your immune system.  It can help you gain weight, however, and put you at risk for health issues.

7. Diet Soda can cause problems too. Just because the calories are lower doesn’t necessarily mean it’s a good idea to consume it.  Diet sodas still have sodium and carbonation.  Studies are showing long term effects of diet soda consumption.

8. Your organs- sodas are high in sugars.  Excessive sugar intake can negatively impact your organs.  You know, your organs, that keep your body running?

9. You can clean a car battery and a toilet with soda.  Do you REALLY want to be drinking something you can also clean your toilet with?  Or a battery?

10. YOU. Aren’t you deserving of something that won’t harm your insides?  Or cause damage long term?

According to the CDC, more than 40 percent of Americans drink less than half of the recommended amount of water daily, and approximately one fourth of children don’t drink any water on any given day. When you drink just one more glass of water you are keeping your body hydrated and giving it the energy it needs.

I used to have one of the “traditional” cell phone plans with a major service provider.  I was delighted when we signed on with my husband’s 15% employee discount available to us.  What did I get for that?  Well, I got unlimited night and weekend calling, and voice mail. 250 minutes to use otherwise before I had extra charges incurred. No texting.  No data. The discount covered taxes and that’s about it.  Being a blogger, I really needed a phone to be able to get online so that I could use social media when I was at events or doing campaigns for clients.  That’s hard to do without data. We didn’t have the money to pay for a plan with data from any traditional cell phone plans and needed other options.

That’s when my friend Leandrea told me about Straight Talk.  Once I grasped what she was saying, and to be honest, she had to repeat herself a few times, I was sold. I had always (wrongfully) assumed that no-contract phones were for people who had no credit or less than stellar credit.

Half the Cost

This is the big one for me.  Straight Talk is half the cost.  $45 a month for Unlimited talk, text and data.  You aren’t bound to a contract, no termination fees, nothing.  Just service and pretty much any phone you want to use.

I don’t know what you pay for cellular service in your house. I can tell you that most people I’ve talked to seem to pay $90 or more for their plans for just one person and have not spoken with anyone who pays less than $160 for 2 people in a house.  That may be regional, but I talk with a lot of people about their cell phone service. I like to spend smart.  I don’t want to pay $90 or $100 for service when I can get the equivalent for half of that.  I’d rather use that other $45 a month to have some fun, go on a date with my husband, pay down our mortgage principal- but not give it to a huge company!

The hardest part for me has been deciding WHICH phone I’d like to use.  I can’t wait to see what’s coming next for Straight Talk.

New Jersey has something for everyone, from the history buff to the scientist exploring advances in energy technology. It’s time to start making your summer plans now!

Atlantic City

Atlantic City is one of the most well-known places in New Jersey. Here you can step onto a luxury liner for an Atlantic City cruise or go the daring route and use Atlantic City Parasail to test your courage. From one extreme to the other, Atlantic City has something for every age.

  • Spas: There are too many spas to count. If you need a day of pampering, you’ll find it here. There are spas of just about every discipline so you can try something new or stick with something you are already familiar with.

  • James’ Salt Water Taffy Candy Factory: This is a great place for children and adults alike. Explore the world of taffy and watch the entire process before you try a sample or two.

  • Extreme Windsurfing: Test your windsurfing skills off the coast of New Jersey! 

As you can see,the Jersey Shore is Going Strong! Although Atlantic City, New Jersey has much to offer, there is far more than this area to explore in New Jersey.  

New Jersey is known as the Garden State as well as the Crossroads of the American Revolution. History buffs will want to visit the historic sites, villages, and heritage trails. Washington Crossing, Princeton, and the location of the largest field artillery battle of the American Revolution– Monmouth, are all battlefields that were a significant part of the American Revolution. In fact, New Jersey boasts no less than 8 national historic landmarks.

  • Cape May: Maintained in traditional style of the Victorian era, Cape May offers:

  • Cape May Lighthouse, with a shore line that constantly changes as well as a multitude of small islands.

  • Fire Control Tower 23, part of the harbor defense system of WW II and the last New Jersey tower of its type standing.

  • Congress Hall, now a hotel with modern accommodations, this building was built in 1816.

  • Liberty State Park: Observe Ellis Island and the Statue of Liberty.

  • National Parks

  • Cowtown Rodeo: Running since 1929 with a pause for WW II

  • Boutique Hotels

  • Long Beach Island

  • Vietnam Veteran Memorial: The only memorial in the world dedicated exclusively to veterans of the Vietnam War.

We are hoping to start planning our own familytrip down to New Jersey this summer. Ideally, we’d like to stay at the shore, probably Long Beach Island so we can be close to friends who have a house down there.  Several days would be for relaxing at the beach, enjoying one another, maybe doing some fishing.  We’d really like to go to Pirate’s Adventures, because who doesn’t want to be a pirate at least one night of their life? The Jersey shore seems to have endless number of activities and things for families with kids to enjoy!

Aquariums are also something that interest our family- so we would definitely want to check out Adventure Aquarium during our stay.  We also enjoy just exploring, and I think it would be fun to pack up picnic stuff and hike on in to Island Beach State Park for a day. I’m also quite certain the kids will want to visit Six Flags Great Adventure before we head back home. 

Of course, we could get some rainy weather during our visit. Thankfully I’m seeing lots of fun attractions all over New Jersey, and I think one destination for us would have to be Coco Key indoor water park! We’ve never really been to a water park before!

I think we’d need a whole separate  week to explore other parts of New Jersey- there’s so many beautiful parks to explore and historical sites to visit. Maybe we should schedule a two week vacation.

Choose a vacuum with a HEPA filter.  (I kind of think this is more the norm these days but maybe it isn’t?)

4. Bedding.

Choose mattress covers and pillow covers that are dust-mite proof.  Wash bedding frequently in HOT water.  I like to also do vinegar rinses with our bedding when we wash it.  This does include pillows.

5. Bathing/Showering.

I do not normally shower/bathe my kids daily.  When allergy season kicks in, my son’s in the shower right before bed each and every night.  Quite simply, he’s got hair on his head.  With allergens outside, and hair on the head— allergens are in your hair.  When you lay down to sleep, you put your head on your pillow, and that’s where your face stays.  Taking a quick shower before bed can prevent those allergens from getting on your pillow for you to breathe in all night long.

6. Pets.

Pet dander is not an allergy sufferer’s friend.  I’m not suggesting you get rid of your pets- we still have ours.  But stay on top of the vacuuming.  Try to adopt pets that have less dander given off, pets that don’t shed (as much) if possible.

7. Clutter.

Get rid of it.  Dust can settle on clutter.  Dust is an allergen.

8. No smoking in your house.

Ever.  Period. (I won’t lecture you,  but it can, will and does kill you.  Not worth it).

9. Clean regularly.

I hope you do this anyway but keeping things clean can help keep allergens at bay. This does also include laundry.  Letting laundry sit around the house with allergens on it won’t help anyone.

10.  Air filters.

Can’t stress this enough.  Change your air filters regularly (at least every three months). Use an Allergen Defense Filter to have just one more way to help filter allergens from circulating in the air in your home.
