Banana Maple Pecan Cupcakes

Ingredients:

  • 1 3/4 cups all purpose flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 3 ripe bananas, mashed
  • 1/2 cup milk
  • 1/4 cup oil
  • 1/2 cup real maple syrup

Makes 12 cupcakes

 

Directions:

Preheat oven to 400 degrees

Line a muffin tin with cupcake wrappers and set aside.

Stir together dry ingredients in a large bowl.

Lightly beat egg in a medium bowl.  Stir in mashed banana, milk, oil, and maple syrup.

Add wet mixture to dry and mix with fork until all ingredients are moistened.  Butter will look lumpy.

Fill each liner 2/3 full with batter.

Bake in preheated oven for 20-22 minutes.

 

We’ve topped these cupcakes with a maple syrup cream cheese frosting and candied pecans for a perfect flavor combination!

Maple Syrup Cream Cheese Frosting

Ingredients

1 8 oz pkg cream cheese

1 stick butter

1 tsp vanilla

2 tbs maple syrup

2 tbs water

4 cups powdered sugar.

Directions

Cream together all but powdered sugar. Add powdered sugar 1 cup to a time.

Enjoy!
