Ingredients:

  • 2-3 large sweet potatoes
  • cinnamon
  • nutmeg
  • 12 – 15 oz apple cider
  • 1 tbsp butter

Instructions:

Preheat the oven to 400 degrees.

Wash the sweet potatoes well.  The skin will be left on but not eaten.

Slice the potatoes into medallions approximately 1/2″ thick.  If they are too thick, they will take a very long time to cook.

Lay the sweet potato slices in a single layer on a non stick baking sheet.

Pour the apple cider over the potatoes.  They should be 3/4 covered with cider.

Add a dab of butter to the top of each potato.

Sprinkle the potatoes with cinnamon and nutmeg to taste.

  • This looks really good. We love sweet potatoes and in the winter they are cheap and pplentiful plus have a great amount of vitamin C. I like how these are just baked and are so simple. This would be a great side dish with pork.
