Jenni and her oldest were kind enough to come up with this fun- and delicious- Luau Pina Colada Cake Recipe- for us.  You remember how easy the Boston Cream Pie Recipe was that my daughter and I made earlier in the week, right?  Well, this is just as easy.  Jenni’s son is a big foodie so he had lots of fun making this special cake for their nanny’s birthday.  You’ll probably see 2 of her other 3 boys in a pic or 2. They all love to help in the kitchen!

Jenni made this cake very much inspired by the  Classic ANGEL FLAKE Coconut Cake recipe by Kraft.  She did a few modifications and I think the result is a smashing success, don’t you?
