We are in the thick of winter here. I’m loving so much of winter but am also kind of feeling like I need more dinner ideas. My family absolutely loves Shepherd’s Pie, and they request it once a week if not more often. But to be honest… I get tired of making it the same way every time. That’s why, when my friend Joanne was telling me about this Southwestern Shepherd’s Pie she’d made with leftovers from our Sweet Potato Burrito recipe, I knew she had hit the jackpot. The same awesome dinner BUT DIFFERENT and exciting. Or, at least, sort of exciting.
SOUTHWESTERN SHEPHERDS PIE
Ingredients
Sweet Potato Burrito Recipe
½ lb. Ground Beef
½ C Niblet corn
¼ C Onion, chopped
½ C Cheddar, shredded
½ tsp Cumin
1 tsp Salt
1 tsp Pepper
½ tsp Garlic Powder
1 Tbsp. Flour
dash Chili Flakes
butter/oil for frying
Directions
Preheat oven to 350
In a frying pan, sauté the onions in a bit of butter or oil. When soft, add the hamburger and cook until brown and well broken up. Add the seasonings and sprinkle the flour on top of the beef. Continue to cook until the flour is absorbed.
Add the niblet corn and mix well.
In a small greased casserole dish, spoon the hamburger mixture over the bottom and smooth out. Add the sweet potato burrito mixture on top of the burger and smooth it out so it covers all the beef.
Sprinkle the shredded cheddar cheese on the very top and bake in the oven for approximately 30 minutes or until the whole casserole is heated through and the cheese is melted on top.
