You know we love baking with pumpkin- Pumpkin Bread, Pumpkin S’mores Bars, Pumpkin Butter and Pancakes, Chocolate Pumpkin Cookies… and today, well, we have some pumpkin whoopie pies with maple filling.  Fall fabulousness.

  • Why coconut oil? Have you ever made these with any other type of oil? Just curious as I don’t have coconut oil and would rather not buy it just to use it for this recipe which looks delicious. I have never met a whoopie pie that I didn’t like!
