Easter has a lot of significance in many of our lives….as a religious holiday, as a family time.  It’s also a time of celebration and celebrating spring and all that comes with spring- new life, new growth, after a long and dreary winter.  It’s in the spirit of family time and celebration that I’m sharing this post with you.  We all know Easter’s coming- I mean, the 20+ year (awesome) Cadbury Creme Egg commercials with the bunny are an early sign, as are the seasonal aisles at the grocery store filling up with candies and treats wrapped in springtime pastels.

We do Easter Baskets in our house. It’s a lot of fun and we have a lot of traditions around it.  We also go to church on Easter Sunday, and my kids are part of the children’s choir so they sing each Easter morning at church.  That doesn’t leave much time for egg hunting or basket enjoyment, so I wanted to do a fun Easter-y recipe that was a LITTLE bit treat but a lot of healthy that would fill their bellies and give them some energy to get through a busy holiday morning.  That’s where these Banana Oatmeal Nests with Cadbury Mini Eggs came from.  Lots healthy, with a little sweet. (Our kids don’t eat candy before we get home from church from their baskets, so I’m ok with a few little eggs in a healthy little nest.

Banana Oatmeal Nests Recipe

Ingredients:

2 Ripe Bananas, peeled and sliced

1 Cup Bob’s Red Mill Quick Cooking Oats (or any other brand of quick cooking oats)

Cadbury Mini Eggs

 

Directions:

Preheat oven to 350 degrees and lightly grease a cupcake tin.

In a large bowl combine bananas and oats and mix until well combined, making sure that there are no large lumps of banana.

Lightly roll dough into 1-inch balls and place each ball into cupcake tin. Slightly press down and pull the edges up to form a cup.

Bake for 12-15 minutes or until the tops are no longer tacky.

 

Allow to cool for 15 minutes before removing from pan.

Place 2-3 Cadbury Mini Eggs into each nest and serve.

Yields: 10-12 nests

Plus, I’m trying to add some new and fun fruits and veggies into our lives.  We’re in a fruit rut here, and I’m bored with our produce purchases. Strawberry Passionfruit Chia Smoothie

Ingredients

1 cup Almond Milk

1 cup frozen or *fresh strawberries

1 tbsp chia seeds

½ passion fruit

1 tbsp honey or agave

*add 2-3 ice cubes if using fresh strawberries

Process Strawberry Passionfruit Chia Smoothie

 Directions

Place all ingredients inside a high powered blender (like a Ninja or Vitamix) and blend at half speed for 30 seconds or until all ingredients have been blended.  If blending with ice cubes turn off after 30 seconds, wait 10 seconds and blend again to ensure all pieces of ice have been mixed thoroughly.

Serve topped with chia, strawberries or passion fruit.  Drink immediately.

Playing at mealtime isn’t just for kids #Fandamonium

When I was a kid, my absolute FAVORITE part of shopping was picking out the cereal.  This was not a task to be taken lightly… but instead, a major decision that had to be made carefully and precisely. While the cereal itself was important, since I’d have to eat it throughout the week… that was NOT the main factor in picking out which box we’d take home.

 

Instead, it was all about that special thing that was tucked away hidden in the box, just waiting to be discovered. That thing that would surely cause my siblings and I to argue over who would get to play with first….

How to Host a Quick & Easy Breakfast #DeltaFaucet #HappiMess


I see some of my girlfriends almost daily.  Those who have kids at the same school and/or in the same activities- I see them frequently.  What I’ve realized lately is that although I see them regularly, we don’t really get to spend much time together, as friends.  We’re together as parents, because of a shared interest our kids have, or school, but not just us, to spend time together.  (Really, though, I don’t know that I will ever feel like I get to see ANY of my girlfriends enough. Life is so busy!). I decided I’d invite a few of my ladies over one morning and have a quick and easy breakfast.  We are all super busy, and actually talked about that, and set a time where we could all feel ok to get up and leave.  What was important was for us to have some US time, to sit, to chat, to laugh, eat, and enjoy. Prep and set up had to be quick, and simple. So did cleanup. I didn’t want to waste my friend time doing chores, I wanted to sit, enjoy and laugh.

How to Host a Quick & Easy Breakfast (in Under an Hour)

1. Plan a SIMPLE menu.  In fact, KISS it.  (Keep it simple, silly!) One hot dish, if you want. I did a quick hashbrown casserole. Took 3 minutes to prep, 45 to bake, it was out of the oven before anyone walked in the door, and ready to eat when everyone arrived.

2. Less is more. Just a few things to eat will be fine.  I set out some fruit arranged on a plate along with apple cider donuts (it is fall… these are a treat) and the casserole.  Add some coffee and boom. Done. More guests than 4-5? Add more fruit on a larger platter. It doesn’t have to be cut fancy, just make sure it’s ready to grab and eat for your guests!

3. Keep it simple. Make sure your party areas are neat and clean- but you really don’t need to have a lot of fuss.

4. Enjoy. Seriously. This is why you are HAVING people over for breakfast- so you can enjoy their company. So sit down, don’t worry about the cleanup until later.  Eat that hot dish while it’s still warm. Nibble on the donut.  Enjoy that fruit.

Just a note: I did not have a please-wear-black dress code request. Apparently when my friends have to get up and know they may be in photos, they opt for black. I find it kind of funny :)

And cleanup?  Well, if you keep the menu simple, chances are, the cleanup will be too.  Making a mess in prepping for the party was not something I minded doing. It was a Happimess. 3 ways to enjoy Cheerios Protein #CheeriosProtein

There’s really two things I eat for breakfast regularly. I’m pretty boring and pretty basic. It’s almost always eggs or cereal with milk. Eggs are broken yolk, over hard- basically, cook ’em until they are rubbery and then I’m happy.  With cereal, plain is where it’s always been for me.  One of my favorite cereals since childhood and even today is Cheerios.  I eat them for breakfast and I eat them for snacks on the go.  I love them.  My family loves them too.  Some of them like Honey Nut Cheerios more than the classic version, but me? Original.  The classic. That ever familiar yellow box. When Cheerios reached out and asked if I’d like to try their new Cheerios Protein, I was willing, although the 5 year old deep inside my head was all “I’m not going to like it as much as my yellow box variety!”

Who doesn’t want more protein for breakfast (ok maybe kids don’t, but adults, we have to pay attention to things like this!) ? We have a really busy schedule in the summer, with swim team practice, tennis lessons for the kids and then swim and dive lessons.  All daily.  We need a GREAT start to our day even in the summer to keep our energy up! During the school year, my kids are early risers, and they are done with breakfast by 6:30 am.  Their lunch waves aren’t until 11:40 and later at our school, so I really try to make sure they have a great breakfast every day.

On top of a bowl of yogurt (Yogurt is all of our mid morning snack in this family, and the kids will be happy to have some of these to sprinkle on top for their snack at school.  We are all about the crunch in this house, and Cheerios Protein delivers on that).

So why am I so excited about the new Cheerios Protein? Well, getting this family going in the morning means that I need to get going. I need the protein and energy as much as the kids.  We ALL need it.  More protein gives us the energy to do what we need to do and keep our bellies full! So many parents (even me, at times) don’t feel that their familygets enough protein in the morning. 2 out of every 5 see the time it takes to make a protein-rich breakfast as a barrier, making way for Cheerios Protein as the time-saving solution. Sure, a big spread would be nice, but it’s rare for anyone to have the time to make that kind of breakfast let alone sit down to eat it these days.

While 9 out of ten (89%) parents see the importance of starting the day with a protein-rich breakfast, half (51%) admit there isn’t time to prepare it. We all have places to be and things to do.  It’s how our society is.  Having cereal that’s giving me- and the family- an extra boost of protein in our cereal means we’re heading off to those places prepared for the day (at least, our bellies are) with enough fuel to last the morning.

French Toast Wrapped Sausage Recipe

I spent most of my life not really eating much breakfast nor enjoying it when I did have it. Since having a family, we always make breakfast, and on weekends, we like to make pancakes, waffles, French toast, etc, from “scrap” as my oldest used to say, together, as a family.  So, over time, I’ve kind of started enjoying breakfast, and have found myself wanting to be more creative and have fun with breakfast meals.  This French Toast Wrapped Sausage recipe post is brought to you by our friends at Coffee-Mate. 3 eggs

1/8 cup Coffee-Mate Extra Sweet & Creamy (We used Original)

In a shallow bowl, whisk together eggs and cream until well blended.

Tightly roll cooked sausage links inside bread.

Vegetarian Bagel Sandwich Recipe

Inspired by my friend Gayle, who was the first person I truly knew who was going meatless, I’m making my own Meatless Monday recipe today.  It’s Monday, we have a busy week ahead, and I like to make sure that my whole family gets out the door with a great start…. specifically, a great breakfast.  I’m big on high protein breakfasts and this Vegetarian Bagel Sandwich Recipe is pretty quick, easy, and high in protein but lower in calories than other breakfast sandwiches I’ve made.

Ingredients:

MorningStar Farms® Maple Flavored Veggie Sausage Patties, cooked as directed (I threw these in the oven for 10 minutes while I was getting my other ingredients out and making lunches)

Mini Bagel, whole grain (You could totally use English Muffins as well), lightly toasted

1 slice cheese (your choice, I opt for light American)

1 egg, cooked to your liking (I like my eggs a few moments past rubbery)

Pepper and/or hot sauce to taste

Directions:

Oven to 350, cook your sausage patties f0r 10-12 minutes

While patties are cooking, cook your egg to your liking, toast your mini bagel(s)

After bagel is done toasting, put a slice of cheese atop one half, cover with the cooked egg, and add cooked sausage patty. Season to taste with pepper and hot sauce, if desired.  Top with other half of bagel.

Enjoy.

Easy, full of protein, and low in fat. Serve with some sliced fruit!

Apple Cream Cheese Muffins Recipe

Apple recipes are known to be popular during the crisp fall months. But there is one apple recipe that we love to make all year round, Apple Cream Cheese Muffins. They are soft, moist and melt in your mouth with a crunchy streusel topping.

We like to make muffins and store them in the fridge for quick, easy and homemade breakfast treats. These Apple Cream Cheese Muffins are made with real fruit and make you feel a little better about eating them. Apples are better for you than chocolate chips, right?   These are just 3 points per muffin.
In our recipe, we used shredded apple pieces and did this pretty quickly with a food processor. If you like a little apple crunch, the apples could be diced up instead. There are lots of variations that you could try with this Apple Cream Cheese Muffin recipe. I invite you to give this recipe a try and let us know how you like them in the comments below!
Ingredients for the Apple Cream Cheese Muffins

Filling – Mix together in a small bowl and set aside – cream cheese, 2 tbsp of brown sugar and 2 tbsp of the beaten egg.
Directions
Mix together the remaining brown sugar, flour, cinnamon, salt and baking powder until well blended. Add in the vegetable oil, applesauce, vanilla and remaining egg. Mix all together.
Mix in the shredded or diced apple with a spoon.
Fill muffin cups about half full (makes about 15 cups), top each muffin with the cream cheese mixture and then spoon the remaining batter to fill each muffin cup about 2/3 full.
Mix together the streusel ingredients and sprinkle over the batter.
Bake for about 25 minutes, or until toothpick comes out clean. Cool and then remove from pan. Makes 24 muffins

 

These muffins are 3 Weight Watchers Points each.

This crustless quiche recipe filled with fresh spinach and shredded cheddar cheese is a delicate addition to breakfast or an elegant, easy-to-carry appetizer at a social function. For perfectly cooked quiche, bake until the eggs are just barely set, then remove from the oven to cool; the quiche will continue to cook for a brief period of time after removed from the oven.

6 large eggs
1/2 cup heavy cream
1/2 cup cheddar cheese, shredded
2 teaspoons salt
1 1/2 teaspoons ground pepper

In a sauté pan, lightly cook the fresh spinach in the butter.
Combine the cooked spinach, eggs, heavy cream, cheddar cheese, salt, and pepper in a mixing bowl and vigorously mix the ingredients together.
Spray a miniature muffin tin with pan spray, evenly coating the walls of each “well” in the tin.
Pour the egg mixture into the muffin tin, filling each “well” halfway to allow for expansion. You may not use all the egg mixture depending on the size of your muffin tin.

Miniature Baked Eggs Recipe

These miniature baked eggs are a unique way to serve breakfast to friends or family without much effort. Most large eggs will not fit miniature muffin tins. If you cannot find small eggs, you can use large eggs and omit some of the egg whites from each egg. You’ll probably be seeing more and more egg- related posts from me here because we’ve decided that we’re going to go ahead and adopt some chickens…get chickens?  Regardless, we’ll have chickens, and therefore eggs….and… egg recipes. Here are some super simple and adorable miniature baked eggs!
miniature baked eggs
Recipe:
12 small eggs
salt and ground pepper as needed
pan spray as needed
Method:
Preheat the oven to 350°F.
Thoroughly spray the “wells” of a miniature muffin tin.
Crack the eggs into individual “wells” of the miniature muffin tin and sprinkle each with salt and pepper.
Bake the eggs at 350°F for approximately 8-14 minutes, or until the eggs have set and are not longer liquid. Remove from the oven and serve warm.
