Vegan Chow Mein Easter Nests

Here comes Peter Cottontail and an Easter induced sugar high.  Even as an adult I get excited to get an Easter basket and enjoy all the treats.  Chow Mein Easter Nests have always been one of my favorites.  I buy chow mein noodles once a year specifically to make these delicious Easter nests.  There are many different recipes out there, I went for a quick and easy 3 ingredient recipe.
Chow Mein Easter Nests

All you need to make these Vegan Chow Mein Easter Nests is:

4 cups of Chow Mein noodles

2 cups of 365 Vegan chocolate chips

1 cup of Earth Balance peanut butter

Place the chocolate chips and peanut butter in a microwave safe bowl.  Place bowl in microwave on high for 1 minute.  Stir and repeat until they are melted and mixed.   Combine the Chow Mein noodles with the chocolate/peanut butter mixture.  Gently mix until the noodles are fully coated.

Cover a cookie sheet with parchment paper or silpat.  Form noodle nests on the cookie sheet. Refrigerate until firm.

3 ingredient Chow Mein Easter nests

Once they are firm you can eat them the way they are or add jelly beans, peanuts or any of your favorite Easter goodies.  I put in little raw carrot cake “eggs”.

Chocolate Chip Easter Baskets

Nestle sent us some of their seasonal Easter candies and asked us to share a favorite recipe wtih you.  We’d been looking  for a cute and unique Easter treat- and found the most adorable/easy recipe on the Nestle site for Chocolate Chip Easter Baskets.  I guarantee that you will have fun making these with your little ones.  These would make great classroom treats as well!  With just 5 ingredients, these bite sized treats can be assembled in just minutes.

Chocolate Chip Easter Baskets


1 Package Nestle Refrigerated Chocolate Chip Cookie Bar Dough

1/2 Cup Flake Coconut

4 drops of green food coloring

Jelly Beans (the WONKA® SweeTARTS® or SPREE® Jelly Beans work well)

Thin String Licorice

Preheat oven to 350 degrees.  Using a mini muffin pan, press one square of cookie dough into each well (pressing against the edges to form a basket shape).  Bake 8-10 minutes.  While cookies are still warm, use a toothpick to poke holes onto each side of the cookie, where the licorice “handles” can be inserted.  Make sure that the holes are the same size as the licorice.

While cookies are cooling, add 4 drops of green food coloring to the coconut.  Use a fork to mix the food coloring to make “easter grass”.

Allow cookies to cool in pan for 10 minutes.  Remove, and allow to cool to room temperature.  Insert licorice handles into cookie.  Add green coconut grass to the center of the basket and top with Jelly Beans.


You can also do these and put some of the Nestle Crunch or Butterfinger foil-wrapped eggs into the baskets- there are many, many options – have some fun with these!

Land’s End Canvas Easter Basket Totes

I’ve long loved canvas totes from Land’s End.  I saw a few weeks ago that they now have Easter Basket Totes, I needed to have them for the kids.  Thankfully, Land’s End was agreeable to send us one for each of the kids for review- one Flower Easter Basket Tote ($25), plus two of the Bunny Easter Basket Totes ($25). We had some personalized baskets for the kids from a few years ago but 2 of the 3 fell apart the first year and the other fell apart last year.  Too many egg hunts, perhaps.

I need a bigger basket for my kids.  We do very little candy and treats instead.  They do LOVE egg hunts, so we have dozens and dozens of eggs.  That calls for a basket large enough to hold many eggs! In fact, they are already asking for “practice” hunts so they can work on their techniques.

Peeps Pops and Peeps Kebabs – Super simple and so much fun!

I’m sure I’m not reinventing the wheel here but I thought up this idea of making Peeps Pops and Peeps Kebabs for a cute Easter bake sale idea and also an adorable Easter centerpiece idea…placecard idea…or a little gift.

Obviously you’d use a cuter container for a centerpiece but I wasn’t doing cute I was doing functional for the bake sale.  The Peeps kebabs are SUPER simple.

Get long lollipop sticks, and put Peeps on them in whatever order you’d like.  Once the Peeps are all on there, you can drizzle some melted colored chocolates on them with some festive sprinkles or leave them as is.  I asked the kids after the sale and half loved the drizzle, half thought they should be plain.  They were all asking for more kebabs! (If you drizzle, put them on wax or parchment paper first)

The Peeps pops are SO simple.  Take a Peep, dip in melted colored chocolate, put a lollipop stick in, let dry on wax or parchment paper.  Slip into a cellophane bag and voila! Adorable little pop!  These went like crazy.  Kids can help or not- the thing that takes the most time with these is simply the time to dry the chocolate!

Choccreate Review

I’ll admit it.  I’m a chocaholic.  Especially this time of year with all that delicious Easter candy around.  So, what’s better than a chocolate bar?  How about a chocolate bar that is custom designed by you!   At Choccreate, you can create your own chocolate masterpiece.  They have milk, dark and white chocolate and a selection of over 100 ingredients to add in.  I was absolutely thrilled to try out some of my own custom creations.

The process was really simple and quick.  First I chose my chocolate (milk chocolate of course), and then I chose my add ins.  With so many choices it was hard to decide (you can even add gold flakes)!  The add in’s are grouped into the following categories:  Fruit, Nuts & Cereals, Gourment, Extras, Decorations and Herbs& Spices.  The website also offer suggestions and favorite combinations.

I designed 3 bars:

1.  Milk Chocolate with Himalayan Sea Salt, Caramel Bits and Pecans – For Me

2.  Dark Chocolate with Hazelnuts, Dried Shredded Coconugt and Chipolte Pepper Powder – For the Hubby


3.  Milk Chocolate with Sunflower Seed Sunbeams, Dessert Sprinkles and Roasted Peanuts – For the Kids


My chocolate arrived in a matter of days.  It came packaged in a cute brown and pink striped box (perfect for an Easter Basket), with my custom ingredients labeled on the back.  Each bar is is a generous 3.5 oz. size.   My intention was to use these chocolate bars in Easter baskets.  Of course I wasn’t able to wait that long.  As soon as my husband and children saw these custom created bars, they wanted to dig in right away.

First, let me say that the chocolate was really delicious and creamy.  Choccreate uses gourmet German Chocolate in all of their bars.  All three of the bars were so unique and delicious in different ways.  I added sea salt to my chocolate bar because I love the combination of sweet and salty.  The addition of the caramel bits and pecans was perfect.  Delish!!!  My husband tried the Dark Chocolate, which was also great.  He added the Chipolte Pepper Powder which added a little kick to the chocolate.  The combination really worked well together.  They really did a great job of adding just the right amount of ingredient.  Each of the additions was obviously present in each bite of chocolate, but no one ingredient was overpowering.  My children had a fun (and pretty) bar with sunbeams and sprinkles.  It looked so fun and tasted great!  I found that the addition of 3 ingredients was just perfect:  not too much and not too little.

Choccreate also sent us a chocolate bar decorated for Easter.  The unique Easter add ins were so cute and whimsical!  These, I am saving for the Easter baskets.  I promise.

Spring Looks from The Children’s Place #Giveaway

Baby Animal Pop! Easter Basket Giveaway ends 4/17

Hidden Surprise Easter Egg Treats™ Recipe – Kellogg’s® Rice Krispies®

I will preface this by saying I’m getting my crafty mojo back, after a someone long hiatus.  My kids are loving it.  When my husband saw me looking at the link for this recipe, he declared that his beloved marketing victim was back in action!!  (We saw these on a commercial this How To Get Ex Back weekend and I knew we had to try them). 

Hidden Surprise Easter Egg Treats™ Recipe – Kellogg’s® Rice Krispies®.

1. Clean, then coat inside of plastic eggs with cooking spray. Set aside.
2. In large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
3. Add Kellogg’s® Rice Krispies® cereal. Stir until well coated.
4. Using greased hands, firmly press 1/4 cup of Rice Krispies® mixture into both halves of each plastic egg. Use fingers to make hollow center in each half. Remove from molds. Place on wax paper. Cool slightly.
5. Place about 6 M&M’S® Brand Chocolate Candies in one half of each egg. Gently press two halves of each egg together until they stick. Cool completely.
6. Decorate with frosting and additional M&M’S® Brand Chocolate Candies (if desired). Best if served the same day. Serving size is 1 egg.

MICROWAVE DIRECTIONS: Follow step 1 above. In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 3 through 6 above. Microwave cooking times may vary.

For best results, use fresh marshmallows.

1 jar (7 oz.) marshmallow crème can be substituted for marshmallows.

Diet, reduced calorie or tub margarine is not recommended.

Store no more than two days at room temperature in airtight container.

Now, I looked at the reviews on this site and poked around google.  Most all of the reviews/comments said this takes far longer than the 40 minutes.  If you cook with kids you already know this will take longer- I just want to be sure we are all on the same page that this will take longer. 

MY Tips:

Pack the krispies into the eggs.  The tighter they are packed the better they will hold together.   Maybe let the kids start and finish it up if they are little like mine (5 and under).

Somewhere along the way I saw a suggestion to put both halves of the egg together while they set so they keep their shape.  We tried this but then I didn’t want to break them open again to add the M&Ms (and really, what good is a surprise Easter egg with no surprise inside??) so I just used a little bit of frosting to glue the edges. 

We may make these again and put people’s first initial on them for place cards for Easter dinner!
