If you love the bright, fresh, citrus flavor of red grapefruit this easy to throw together spinach salad with Grapefruit Vinaigrette will delight your taste buds. The dressing pulls together with just 4 ingredients. Why grapefruit? Well, I feel like grapefruit is like the forgotten citrus. It doesn’t always get a fair shake when speaking of citrus. Since it’s February, and National Grapefruit Month, we’re celebrating with new DOLE Red Grapefruit Sunrise Fruit Bowls. One of these delicious snack packs make the perfect size for a small batch of vinaigrette, then toss the grapefruit quarters in your salad mix to add another layer of flavor and texture. The feta gives a tang that pairs nicely with the tartness of the grapefruit.

So I am one of those rare people who does not like fruit in my salad. I do however love grapefruit fruit cups. I actually just got some of the dole cups on my last supermarket run

I love grapefruits but I have never been able to eat them with anything. So, I just cut one in half an enjoy it with a spoon.
Yum, that sounds so delicious. I just don’t use grapefruit in enough recipes. It’s one of my favorites, and I can’t wait to try this!
