One of the things we have been hearing about for several years now is the Keto diet. I will be honest and tell you I am not the eggs-in-one-basket person. So, going full force Keto? Not for me. (Perhaps one day, but not right now.) But I am determined to find ways to change things up in our family dining to make things lighter, healthier, etc., and I’m trying to cut back on carbs—for all of us.
A program I did briefly a few years ago included two low-carb days in a row, which I had no idea what that even meant when I began. If I’m candid, I didn’t even understand that carrots had carbs. I’ve learned a LOT and still have lots to learn, but I know now that I can deal with a few days of lower carbs, and it’s helped me to find ways to curb the carbs on other days, kind of as well. This is what I mean about all my eggs in one basket thing. I’m not sure how long I’d sustain doing low carb for an extended period. I like that the program I’m doing mixes things up, and while it’s made me learn to make better ingredient choices when cooking and when selecting foods when out and about, I also enjoy that it’s ok to still have some carbs. And listen, when I have PMS, my body wants carbs!
Anyway, chicken is a go-to meat option in this house, and this low-carb chicken skillet recipe is going to be a favorite, especially with my son and husband, who would eat buffalo flavor with anything and be ecstatic!
Low Carb Buffalo Chicken Skillet
Ingredients
1 tbsp extra virgin olive oil
4 boneless skinless chicken breasts
1 tsp garlic powder
Kosher salt
Ground pepper
2 tbsp butter
2 cloves of garlic or 2½ tsp of garlic powder
1c. Buffalo sauce (You can easily make your own or buy one like Frank’s Red Hot Buffalo Wing Sauce)
Pinch of cayenne
8 slices of cheese
Weight Watchers tip: To make this a zero-point recipe, omit the oil and butter and use fat-free cheese.
Directions
In a large skillet combine the seasonings and the chicken cook until the chicken is golden brown about 6 minutes per side. Set aside.
In the same skillet add butter garlic and cook until you can smell the garlic (about 1 minute).
Add your buffalo sauce and cayenne pepper.
Put the chicken back into the skillet and top each breast with the cheese of your choice. (I used provolone.)
Cover and let the cheese melt. Simmer the chicken until it is cooked all the way through.
An alternative is to put the chicken and the sauce mixture in a baking dish or cast iron dish, top with cheese, and bake for 5-6 minutes at 400°.
Make sure your chicken is thoroughly cooked through and enjoy.
